I just want to say that your intolerance to gluten can become more sensitive and what you are experiencing is quite commonly reported here. That feeling wonderful is followed by feeling uggy again. Sometimes it is other intolerances and sometimes it is your body...

  3. I don't see how you could keep yourself safe in that environment if they bake or use wheat flour in the kitchen at all. Gloves and masks can only do so much. Just thinking about how you would manage your health, not trying to put a damper on your dream.
  4. Hospitals can't cook gluten free. It would be worse if they sent you food and said it was gluten free when it really isn't. The reality is they bake cakes and cookies in those kitchens so unless they are going to have a dedicated kitchen for Celiacs, they can't guarantee their food will be gluten free.   6. As far as I know, there are no false positive blood tests for Celiac. If he was negative, you would be looking at gluten sensitivity or intolerance, or possibly Celiac that did not show up in the blood tests, but the fact that his blood test was positive means he is Celiac. Some Dr.'s no longer require the endoscopy to verify the bloodwork for diagnosis...
  7. Check that the gluten free products you are using are in fact made in a dedicated facility or are Certified Gluten Free. Not everything labelled gluten free is really gluten free. My son tested positive for antibodies after two years of being gluten free and we thought we were very strict. Now it is only Certified Gluten Free and those will be used minimally...
  8. It sounds like you are already diagnosed. And it sounds like your Dr. wants you to be eating strictly gluten free. Both of these are good things. Maybe he is just doing the endoscopy to be certain he isn't missing any cancer related to Celiac and to evaluate the level of damage to your intestine. These are good things. You are not trying to produce damage...
  9. Yes you can be diagnosed with blood tests alone. My son had a Ttg/Iga and tested positive. The nurse called and said the Dr. says he is Celiac and no further testing is needed. Vitamin levels were already checked.

  11. Haha! I just saw this! I forgot to say ground beef! I roll it as thin as I can in a ziplock bag and freeze it then bake it off as a crust as we need it. Yum!

I fully expected the tests to come out negative since we had both been gluten free for two years and we are very strict and only eat out on birthdays at the Outback....that is twice a year.   14. Yes, this has happened to many people. Pet food is a common source of cross contamination. They do make pet foods that are gluten free. It seems crazy but it's true...you will probably want your pet to be gluten free too. For their health and yours.

  16. Breakfast is bacon and eggs or steak and eggs or just steak. Unless I have no time...then it's last night's leftover meat and veg. Lunch is Roasted Turkey Breast or Roast chicken. With a salad if I feel like it. Dinner is a big serving of cooked veggies and usually Steak, Roast Beef, Chicken, or Turkey. We always keep a pizza made with meat for the crust...

  18. I get puffy eyes from traces of gluten and from soy. It is the way I know for sure something wrong got into me. I hate that symptom. vitaminc deficiencies can also cause it. -But I would say yes to glutened body equals puffy face...and sometimes feet. Lasts way too long for me...several days to weeks.
  19. I don't know if it helps or not but I wash and rinse my rice until the water runs clear. Then I cook it in the microwave...the regular rice....it just takes 10 to 15 minutes. Or go with certified gluten free....if there is such a thing in rice.

  21. Yes, there is a wide wide variety of gluten reactions. Some last hours, some days, some weeks and a rare few months. Everyone seems to have different symptoms that they attribute to their own particular reaction to gluten. For example. I become very moody and angry for no reason. Then a migraine ensues, then it lifts 24 hours later and the DH blisters appear...

  23. I have found that if I am sick I cannot have a busy schedule. I didn't want to be that sensitive either...but I react to everything I have tried that is made in a shared facility. Some of us are lucky enough to draw that Celiac lotto card. It isn't a choice. If you don't want to be sick, you might have to stick to only Cetified Gluten Free with the black...
  24. I'm sorry you are feeling so bad. My first year was much the same. I just want to say that if you really are Celiac and you have not been strictly gluten free and watching cross contamination then your system has not had much chance to heal at all. Give gluten free a good strict try including cross contamination. Secondary intolerances are very common...
  25. Are you taking vitamin supplements regularly? Even a slight deficiency in the B vitamins can cause symptoms of anxiety and depression. Make sure you are getting enough essential fats from good fats like avocado and olive oil and omega 3 from Salmon. These things should help you. Make sure you take a multiple vitamin daily.
