It depends on the person. Most who cannot tolerate soy find that they can tolerate soy lecithin. But there are others who cannot tolerate either. It's trial and error. Leader makes a vitamin D supplement that is non soy so that is what I take.

Yes, I definitely agree with declining any and all food except maybe pre-packaged gluten free. Yes it is possible for Celiac disease to be triggered by environmental factors or stressful events. I think you are dealing with more than gluten intolerance. I think you should get tested for Celiac. Tell your Dr. you want a full Celiac Panel done and see what results. Even if it is negative, you should go gluten free. Your body clearly does not... -

Ask for a full Celiac Panel blood test. All of your symptoms are consistent with Celiac. It is an autoimmune disease and allergy testing won't pick it up. If they don't agree to test you, go gluten free and see if it helps. I know how miserable it is to want answers and not be able to get them. I hope you will feel better soon. -

It's very healthy. There are plenty of carbs in vegetables and fruits. It's not a total carnivore diet, we do eat nuts, fruits and vegetables, and good fats. From my experience when I don't get enough protein I crave grain carbs bad..and when I eat grain carbs ...I crave them even more. Oh yeah, I still don't do seafood due to the iodine. I'm chicken to try it. Did have shrimp over New Year's and it did a real number on my DH, so I think I may be "all done" with seafood, but I handle milk products and eggs now with no problems. -

I have DH too and did not heal until I got the iodine as minimal as I possibly could. That is a very limiting diet so I "tested" it every month or so to see if I could add it back. The biopsy can show damage not seen with the scope. Microscopic damage is looked for and much more is visible to them. It is entirely possible and I've seen it reported here that no damage was visible by the Dr. but the pathologist was able to see it. So you could still be positive.
