I prefer simply prepared meat, veggies and fruits. I avoid fruits and veggies that are real high in starch like potatoes and bannanas or fructose like most tree fruits. I can't seem to stomach starch or sugar in great quantities. Also nuts and buckwheat (not a grain despite the name), flax seed meal, quinoa, millet are all good. It takes a while to get the... -

As time goes on this lifestyle becomes a habit and you won't think much about it. All I can say is for me it was the most liberating experience of my life. You might want to try buckwheat and flax seed meal. Both are high protien and fiber and low carb. It works for me.

A couple of times us non Southerners had to send the food back it was so salty. Whenever we requested no salt on anything we would get a strange look. It was funny because they had no problem when I asked about gluten or made requests pertaining to my food being gluten free. But the no salt thing....

Before going gluten-free I used to run a near constant low grade fever. Now my body temp tends to run a little below normal. A fever usually happens when your immune system is trying to fight something so I would expect a fever when most of us get glutened. -

My brain fog would get so bad sometimes that I couldn't remember much of anything and would get disoriented. I would forget where I was at, where I was going and why. It would come as no surprise to anyone who has experienced brain fog that Alzheimers and gluten are linked. -

Try to eat more protiens and natural fats. They take longer to digest and you won't get the insulin spikes. Eating candy is probably the worst thing you can do. I only eat simply prepared unprocessed foods, meat, veggies, fruits, buckwheat, quinoa, cheese, yogurt. It is hard to avoid gluten sometimes. I had all of the symptoms you've described and it will take some time. It does get better. The fatigue and brain fog are gone now but it took 3 months to start feeling better and a year before I was healthy. You didn't get this way overnight and your body won't heal overnight. We've all been there so keep at it because it is worth it. -

You pretty much sound like me when I was 27 except I was very overweight. I would get so hungry that I would clean the kitchen out of food in an hour or two. The fatique and brain fog were the worst. Most will get better over time. It seems that it takes on average 3 months to start feeling better and a good year to be healthy.
