ARCHIVED "special" Foods And A Celiac Mindset
IrishHeart replied to archaeo in FL's topic in Coping with Celiac Disease
Since the burden of cooking seems to fall on you, if you were to make corn or rice pasta for the whole family, it would be easier, less chance of CC for you, less clean up time and they would not really know the difference. I have served corn flour pasta with a fresh alfredo sauce to my friends and they raved about it. I did not put the plates down and say... -

oh sorry, hon....I read your sig line very carefully (or so I thought) and failed to see NUTS at the very end. Thought it would help. My bad. There are many coconut flour recipes out there. I know it's hard when you have to eliminate so many foods. I had a run like that (no eggs, dairy, soy, citrus, coffee, etc. etc. for a while) and it was a total PITA... -

ARCHIVED Gluten-Free Multi-Vitamin With Iron
IrishHeart replied to amahones's topic in Gluten-Free Foods, Products, Shopping & Medications
Country Life has certified gluten-free multivitamins. I take the one without iron (as I no longer need to supplement it) but they may make one with iron as well. -

 I think it's a great idea--it will keep you off the streets. If Lisa only knew exactly what you had to do to tweak that thing so it came out like that... um, you did write it down, right?? -

137. I counted. I admire your delusional hopeful pursuit!! and that IS one good-looking loaf of bread, lady! I love my Pullman USA pan--makes crazy high sandwich bread. (but it doesn't fit in the toaster. ) -
Good advice, cyberprof. You do not need to defend your choices to anyone. You can explain yourself silly or come out with some good, snappy comebacks, (jess offered you a doozy!) but some people will always give you grief over it. Blow them off and enjoy your good health.... and ice cream .

When you say "allergies" do you mean IgE-mediated allergies? Or do you mean food intolerances? What kind of testing did this doctor do for $2K? Just curious. Allergy testing is covered by most insurance, that's why I am wondering. Many celiacs avoid dairy for the first three-six months after DX because the villi are blunted and that's...

Same here  the day after my DX, hubs brought this loaf home and I spit it out and said "are you kidding me??" I'd rather eat my shoe. He baked a gluten-free loaf the next day (from the gluten-free Girl's recipe) and the rest is history. We had a few clunkers at first. (they serve as door stoppers now) I made a Bette Hagman loaf last... -

Udi's, Canyon Bakehouse and Rudy's are pretty good for packaged breads (IMHO) Mixes? the King Arthur gluten-free is awesome. I prefer homemade, honestly, but these are good!! EnerG ?? BARF-O-Rama. Rather eat sawdust. -
ARCHIVED Met Another Celiac Last Night

Sweets, You had one of those of those "very cool beans AHA moments" in life where you meet someone and it has a ripple effect. We never know what may happen, whom we will meet, what we will learn or how we will influence others on a day-to-day basis. Another celiac to "hang out with" and share recipes and spend time with? Oh baby, that's... -

The What's For Dinner Tonight Chat
IrishHeart replied to jess-gf's topic in Gluten-Free Recipes & Cooking Tips
Last night, we had quinoa pasta with portabella mushroom ragout. Tonight (because it is Friday!!)... it's pizza night. Had some of those gorgeous portabellas left, so I made a quick tomato sauce, with basil and oregano and thyme from the garden and sauteed some bellas and shallots and did a 3-cheese pizza. it's baking now....smells okay so... -
ARCHIVED "special" Foods And A Celiac Mindset
IrishHeart replied to archaeo in FL's topic in Coping with Celiac Disease
You raise an interesting topic! I think of all the food in my house as "normal" now. At first, it seemed like it was under so much scrutiny and I was so worried about everything being gluten-free. I was trying so hard to convert everything over (recipes, etc) and I was conscious of "my diet" and the grocery list listed things like "gluten-free bread... -

you're adorable. Having a sense of humor is a good weapon to have in your "defeating the celiac monster" arsenal. Oh, you mention gluten-free supplements. What were you looking for that you could not find? Maybe we can help. -
First of all, there is no conventional "leaky gut" test --except for some lab tests offered by alternative practitioners. I will withhold my opinion of them as they proved costly and INCORRECT when an "integrative MD" ordered them for me. Maybe someone else can tell you more. Do not assume you have a leaky gut just because you are still having issues...

I finally heard it, but I was 54 years old. Hope you do not have to wait that long, hon. If it helps, I'll tell you: The pain is NOT all in your head. It's not.

ARCHIVED Oh No, Meltdown
IrishHeart replied to Celiac Mindwarp's topic in Coping with Celiac Disease
Now I am laughing --we only sound smart because we already did all this dumb stuff when we were newbies, too!! (shh, don't tell anyone....) It's all new to you...and there is no "instruction manual", so we make mistakes a lot, unfortunately. I still get burned occasionally. You have been wheat free for years, but gluten free and cross-contamination... -
ARCHIVED Oh No, Meltdown
IrishHeart replied to Celiac Mindwarp's topic in Coping with Celiac Disease
This is just my opinion, but if you can eat plain corn without issues, then it is likely not a problem with corn. A "pile of nachos" (yum) would give anyone a bit of heartburn and it could be from the salsa, the cheese, the peppers, or any other food protein in the mix. See what I mean? Same thing with cornflakes and gluten free items--too many... -

ARCHIVED Do You Ever Cheat On Your Gluten Free Diet?
IrishHeart replied to karinp's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
Never. Not even tempted. But I was slowly dying from undiagnosed celiac and malabsorption and suffered major health consequences as a result. It has taken me nearly 2 years to get some relief from the pain I live in and get my brain function back and try to reverse the neurological symptoms and I am still rehabbing my deeply impacted muscles. I...
