  1. Well, you go GIRL!! Good for you! I am so very happy for you!!!! Thank you for sharing your progress. I love your obvious joy about getting well and seeing an improvement in your symptoms, while still acknowledging that realistically, there are things still left to resolve. Wisely, you are looking at where you ARE right now, not the past...
  2. I'll keep looking for a more definitive answer for you.
  3. I understand what you meant now. Okay, well, good luck, hon! Are you near a Whole Foods, or a Wegman's by any chance? they have tons of gluten-free foods. (Also, google gluten-free bakeries in your area.) All the food you have known throughout your life is still the same: fruits, meats, vegs, nuts, rice, eggs, dairy, etc. Plain, whole foods...
  4. Thank you for all of your help, IH. It's quite a world to try and navigate and your guidance has made the transition much easier. :)

  5. I have read several conflicting reports--- but the one common statement I have read is: Maltose is a highly refined simple sugar obtained by enzymatic breakdown of starch. While it can come from any starch, the end product is gluten-free. I honestly do not know why the Celiac Sprue association lists it as questionable. Maybe you should email them and...
  6. (1) Once you get into a pattern, this is second nature. I promise you. I spend no more time prepping or grocery shopping or baking than I did before. Once you know what you can eat and the SUBSTITUTIONS you can make, you'll be fine! (2) Symptoms are "not in your head". You have a serious AI disease and those symptoms are the indicators of it. They will...
  7. Since the OP has recovered from her "over-indulgence" --as some of us suggested may have been the problem for her upset stomach-- and apparently, it did not involve a possible CC from an oven or anything else her hosts may have done, I think this particular thread has run it's course. Sometimes, the answer is very simple. ...
  8. No.... Maltose and maltodextrin are safe ingredients. From my research: Maltose is made from corn in North America. In Europe, some companies use wheat. But, because it is so processed, maltose does not contain gluten no matter what it is made from. From the Canadian Celiac Association list of food ingredients: MALTOSE ... ALLOWED: A simple...
  9. All right, knock it off, you two sillies! (mortified, hell no! I was more mortified you thought I was a dude.) But, this is Olivia's thread. Olivia--what else do you need? Squirmy and Nana are here to do your bidding. ... see how nicely they are bowing?
  10. Just so you know, this thread is from 2005 and the original posters will not see your response. Check the dates on threads.
  11. oh, sorry, hon! I have posted it from time to time to other threads started by Newbies. I wonder sometimes if it TMI? I should probably put it somewhere on my profile page. I wrote it up for my large extended family ---but no one seems to want it and no one seems to think they need it. (denial...not just a river in Egypt...)
  12. It's okay to mourn and feel sad, shocked and go through a whole gamut of emotions. But, please do not worry about eating. We can help! You're going to be okay!
  13. Oh hon, it is not everything you want to know, but it is a start for some who are so scared and feeling lost. The links to the safe/unsafe foods and cross contamination issues /hidden gluten are ones I found the most important. I made a few rookie mistakes the few first months myself. For the real deal goodies, not boxed/packaged stuff, check out...
  14. You didn't, hon! There is no "one size fits all" with this thing. EVERYBODY is different. If anyone can have dairy without issue, that's FANTASTIC!! Pass the ice cream, Nana!
  15. Everytime I look at myself dancing in the mirror. You're a newbie aren't ya? You do not know me yet...but I am a chick, sweetie. A warrior princess. I have posted this puppy a few times. I am thinking about putting a copyright on it. (kidding!) Glad it helps!! Eat up, people!! Cheers, IH
  16. Maybe not! Many secondary food intolerances clear up after being gluten-free for a while and healing the gut. Never say never! (although soy is not the world's greatest food, but it is IN everything and makes it hard for those of us who have had to avoid it) For instance, I eat mayo now and have no problem and I have had soy lecithin in vitamins...
  17. Yes, it is true that dairy is fine for most celiacs when the villi regrow. but some can never tolerate it again. I hope I am not one of them. I continue to try dairy products and find they give me a little grief in large amounts. Most celiacs come to the realization that it is best to give up dairy --just for the first few months-- because lactase...
  18. Welcome to the Forum! Don't think about what you cannot eat--think about what you can eat . Fresh meats, veggies, fruits, nuts, eggs, fish, etc. Karen was lucky she could eat cheese, but yes, many of us had to give it up for a while at first. I can give you some ideas that I wrote up for my family if you wish. Get your printer ready! ...
  19. We believe you. Being this sick at any age is not "in anyone's head". How do you "make up" vomiting, diarrhea, fevers, etc?? Good luck, hon and let us know what happens!
  20. NORA raises excellent points--worth asking the GI doctor about these too! Hon, you need to call and ask how much to supplement, if your levels were deficient. How much B-12? Was your B-12 low? or Do you mean you take B-complex? B-12 is just B-12, not a "complex". But, you don't need to take it twice. Too much mag can cause loose stools.
  21. Your point about the kitchen is well taken, however, we were talking about the use of the oven in this case of the OP. What I meant about YOUR pizza experiment was ...you guys always cook in that oven right? take the same precautions when cooking and preparing food right? those are consistent variables in your home, right? (you told me your Mom is super...
  22. I agree. Your symptoms sound gluten-related and yes, be sure to stay on gluten for Celiac testing to be valid. Autoimmune diseases go hand-in-hand and only makes your case for Celiac testing all the more convincing and logical. Bring a list of ALL your symptoms and conditions with you to the doctor. Don't be shy and don't let them wave you off without...
  23. I have read them. They are.
  24. Wish I had a dime for every time I uttered those words. I know how you feel, hon. We want you to stop feeling sick, too. HOWEVER, IF you are intent on getting a "real" Celiac DX, you need to be consuming gluten regularly. In a nutshell, this is what drives the antibodies up in your body and creates the response that keeps the villi flattened....
  25. Two things to consider here, hon: If you were reacting to a shared kitchen, it would be ALL THE TIME. But you are not sick all the time, right? You tried a pizza specifically to see how you respond and you got a specific "reaction". (now, it could be the CHEESE??) See, you may have a dairy issue as well. Digestive enzymes are taken BEFORE...
