  1. CHEESE... It is some bad cosmic "screw you" that I should have celiac and (hopefully my fingers-crossed temporary) lactose intolerance together...because freshly made bread and cheese were my two favorite taste sensations. Give me some pinot grigio or champagne with a hunk of each of those and I was in a trance of happy-dom.... ah the good old days.....
  2. S-berry as you know, I am like you--no dairy, soy either--and I love So Delicious coconut ice cream....Can you find any coconut ice cream or almond milk ice cream over there? That may be good for you to have around. (that is most definitely not going to make it into any care package) We traveled to Ireland several times, and we ate so much ice...
  3. There are a few articles I have seen discussing MM and celiac as I was researching it for a friend years ago who had MM--just google it and see what you find. ETA: Research articles like Pub Med. Honestly, though, almost ANY AI disease could have a potential link to celiac and having celiac disease is not necessarily a pre-determinating factor...

  6. Just so you folks in Europe know....they are in the same aisle as the organic and BAKING aisles here, too! SOME grocery stores have taken to having a separate gluten-free section, (hooray!) but not all. The other day-- in a small town store near me--I picked up a Bob's Red Mill gluten-free flour and it was sitting right next to spelt and WHOLE WHEAT...
  7. Oh, you poor kiddo. Those are the same symptoms I get with a glutening (anxiety, low mood, agitation and insomnia) and sadly, there is no magic pill to speed up the healing process. I have some low-dose xanax I can use if it is really bad, but I do not metabolize drugs well, and they create more side effects I do not need, so I just suffer through...

  10. Not really my fav, but it is hubs. I use frozen broc (in winter when there is no fresh available), micro for 2 mins. with a little water, and chop it up nice and tiny. Cover it with enough cheese and she may not notice? It's just my excuse to get in a vegetable serving. Like bloody mary's use to count for one veg --or two--if I had a celery stalk in it...
  11. Were you seen by a Gastrointestinal doctor? Is that who told you it was celiac? Did they do any barium studies? I am wondering if you do not have something else going on in your gut. An infection of some kind (given your description of boot camp) You said "they thought it was an infection"--who is they? and you mean like giardia?? Your post provokes...

  13. I gain weight just reading what we all write on this thread. Lordie, woman...imagine if we all really lived together? All we would do is....cook, eat, laugh, eat, watch good movies, read and discuss good books, eat, garden and did I mention....eat?

  15. Sounds like yum! That's like my white pizza, sort of. I can't "do" my tomato sauce right now, so we use our dough or a CHEBE crust, a 'lil olive oil on it, roasted garlic, mozzarella, provolone, ricotta and parm-reggiano and broccoli. 450 for 16 mins and it tastes amazing. Aren't we both clever girls?

Since freshly made squishy french bread and ANY cheese are my top two favorite food groups--I find gluten-free and dairy free living to be the ultimate cosmic "screw you" I mean, if only celiac were caused by something like fried livers or snails or fava beans for example, I would be the happiest celiac on the planet.

It is ironic you should post this right now---because I have been reading about this very topic as I have burning skin sensations and sometimes am very itchy (and have shortness of breath )and this BURNING is very intense at times (since Feb. 2008) which I had hoped would resolve by now (a year since DX and being gluten-free). Very painful and I am tired...
