  1. It is AMAZING to have a diagnosis. I considered it a huge blessing to finally have found out what was wrong and that there was something I could do about it. And so many people struggle with getting a diagnosis in the first place. So yes, be happy! Congratulations! You are now ready to help change his life for the better
  2. Thanks. Gonna stick with it!
  3. Another update from today - feeling overly full after each meal. It's the end of the day, and I've figured out that I'll have eaten roughly 1350 calories. It's not a lot, but I feel so full that it's hard to motivate myself to work out (I did a bit of weight training anyway and am on my way to teach a class in a bit). I feel like I couldn't possibly fit more...
  4. I enjoyed reading the book. Not too dense, but if you've heard him lecture there are probably parts of it you can skip. In fact, you may already know all of the info that he presents. An update from me - I'm beginning day 4. I've been pretty successful sticking with the diet. My only cheat is an extra piece of dark chocolate (which is allowed in the...
  5. No, Celiacs can never tolerate gluten. I've heard of people saying that they have "Light Celiac" or "Mild Celiac". There is no such thing. Celiac is Celiac. Even the smallest amount of gluten will affect you. What does vary is the type of reaction in terms of symptoms. Some people will have a very strong outward reaction to the tiniest amount of gluten...
  6. Gotcha. In this diet you nix all fruit for the first month. After that you can slowly start adding in occasional fruits and gluten-free grains. My regular healthy diet is basically the post-month 1 diet. I'm very interested in how this diet will affect me physically and mentally. I'm just concerned about when I'm at work and not able to get to my kitchen...
  7. I think the only dairy that is allowed is cheese. Do you eat fruit on your diet?
  8. Before I was diagnosed with Celiac I was very skinny and had a hard time gaining weight. I was eventually able to get my weight to a happy place. After going on the gluten-free diet, my body started accepting the calories and the nutrients, so I gained an extra 2.5 pounds. I was okay with that because I knew I was in a healthier place. However, I've been...
  9. My 23 year old sister has SPD. I have Celiac and my mother is not officially diagnosed, but all her symptoms went away when mine did. My sister has been tested once for Celiac, but the results came back negative. We suspect it was a false negative because she wasn't eating much gluten at the time and has all of the same symptoms as my mother and I. I...
  10. Thanks for all of the replies! It seemed okay, but I decided to just throw it away. I'm routinely checking my flours and cabinets now to see what food needs to be used sooner rather than later. Extra excuses to bake more cookies!
  11. Hi all, I have a bag of Bob's Red Mill arrowroot starch that says "Sell by 7/13". Weird because I could have sworn that it came in a box with other bags that have a much later sell by date. Oh well. Do you think this is still safe to use? It was unopened in my fridge and is now in my freezer. Thanks!
  12. Sorry for the long amounts of time in between my posts - I've been away for Christmas and have been ignoring my phone and computer. Bliss! Anyway, thanks for that article. I generally don't worry too much about perfume and makeup other than lip stick, and I always wash my hands thoroughly after applying my make up (I'm pretty sure that 95% of it is...
  13. There's nothing in the ingredients that say wheat, barley or oats. I don't have any skin problems if I am in contact with gluten but I worry about questionable lotion if I put it on and then eat something with my hands and forget about it.
  14. Does anyone know if their products are gluten free? My boyfriend got me hand lotion from their store for Christmas. I'd hate to hurt his feelings if I couldn't use it but I've gotta check. Thanks!
  15. Thanks I'll try it out!
  16. Anyone have a good one? Gotta impress the boyfriend's parents next week
  17. I agree with the post above, and I'll add my two cents - In my opinion, IBS is the name for a collection of symptoms, and doctors tell you that you have it when they don't know what's wrong. Don't settle for this diagnosis because it doesn't really give you an answer on how to fix the problem. It sounds like it could be either Celiac or a gluten intolerance...
  18. I agree with everyone on follow up testing. I'm concerned, as well, with what your doctor said about "not going overboard." It is WAAAAAYYYYYY more than just not eating gluten. Cross contamination is so easy in shared kitchens. Toasters, cooking utensils, pots, pans, cutting boards, plastic Tupperware containers, jars of peanut butter/jelly/condiments...
  19. Hi everyone! I have a bunch of coconut flour that expires in June 2014. Two questions: 1. I've been storing it in a sealed container in my fridge. Will it stay good longer than the expiration date? 2. What are your favorite coconut flour recipes? I have an amazing honey-short cake recipe, but I can't eat that nonstop until June Thanks!
  20. In short, definitely get tested. Many of your symptoms could be Celiac-related.
  21. I know someone whose only symptom is joint pain. No gastrointestinal issues. Everyone experiences Celiac symptoms differently, so yes it could be a symptom.
  22. Okay, so not only is my boyfriend amazing but I'm also in love with his mother! I'm going to their home for Christmas for the first time, and my boyfriend said his mom is concerned about what I could eat and wants recipes and ingredient lists. If I spend the holidays away from home, I generally have a very good game plan that makes it very easy on my...
  23. Thanks for the quick reply!
  24. Is Jello gluten free? I'm mostly concerned about the powder that comes in the little boxes. Having a hard time finding this info and am waiting to hear back from Kraft. My boyfriend's family makes some sort of jello creation for holiday desserts, and he wants to make it gluten free for me this year. Very sweet
  25. My three recipes come from Carol Fenster's book "1000 Gluten Free Recipes" - love this book! The third recipe is not really in there - I modified a different recipe of hers to make it similar to something else I used to make. Note: I prefer to refrigerate my dough overnight. Once baked, all three can be stored in a tightly covered container for two days...
