  1. Hi all! I wanted to share some of the new great recipes I've tried! I've really been enjoying paleo and no-grain recipes, so this one was great for my pizza fix. It's a cauliflower/carrot/kale pizza crust. I really enjoyed it. I wouldn't call it pizza exactly, but I would call it a great mock-pizza. Make sure you have a great sauce - I really think that...
  2. I had the most amazing gluten-free french toast at a restaurant last week! If bread could melt in your mouth, this would. It was so light and fluffy and moist. I haven't been able to find a similar recipe online, so I think I'd like to try to recreate it. In the ingredients list, I know there was: Coconut flour and arrowroot starch (there were no other...
  3. I'm very simple and like oatmeal with cinnamon and sea salt. Yum!
  4. Thanks Gemini. It seems like every few months something crops up that I hadn't thought of before. Glad this one isn't an issue.
  5. I did a search but could only find some old threads about it. I was thinking about this yesterday...What do you think? Does having a gluten free dish soap matter if you do not have skin issues when coming into contact with gluten? At home I currently use Ajax dish soap (I'm pretty sure that when I went gluten-free originally I looked this up but I...
  6. Here's my take on it: I am diagnosed via blood work, endoscopy, and positive response to the diet. One of my family members is self-diagnosed and just tells everyone that she has Celiac. We have all of the same symptoms, and we can trace symptoms and complications back through several generations of our family. She didn't have the best health insurance...
  7. Lots of good advice on here, so I'm just going to add my experience: I met my current (and wonderful and supportive) boyfriend online. I didn't say anything in my profile about my diet because I don't want to be defined by Celiac or stereotyped by the name of a fad diet. I did mention that I love cooking and baking from scratch. I'd meet people for coffee...
  8. Sometimes doctors have a policy of making you come in to discuss any results, good or bad. It's really annoying. I had to pay a $30 copay and get out of work to have my doctor tell me that all of the test results in my yearly physical were normal.
  9. It was literally off the charts. I think my lab's top range was 300, and my tTg was somewhere higher than that. No way to determine the exact number.
  10. My boyfriend and I had a discussion about The Secret over the weekend. I believe in it, to an extent. I believe that good energy and vibrations attracts more good. However, that brings about the question "Why do bad things happen to good people?" My answer - sometimes things just happen, and that is outside of our control. However, we can use our positive...
  11. I had my endoscopy done twice (the first time they couldn't see anything because there was too much undigested food in my system ). Both times I felt very sick afterwards. The first time, I remember eating a banana and feeling incredibly bloated and was unable to eat more. The second time, my appointment was later at 2:30 in the afternoon, so I didn't eat...
  12. Latest update: According to the scale, I weigh almost half a pound less than I was the morning of my cheat day 8 days ago (with the stomach aches and light weight gain, the cheat day wasn't worth it). In total, I've lost about 4 pounds in 18 days. I skipped my cheat day this weekend. I had no cravings for anything. I did have a glass of wine (which...
  13. Update on my cheat day: I finished my bagel and got a big stomach ache soon after. I felt rather bloated and could feel that my body was having a hard time digesting it. I decided to have dessert with my boyfriend that night because I had already made strawberry shortcake and truffles for our make-up Valentine's Day. Sure enough I went to bed with a stomach...
  14. I was thinking about turning this into a blog, but I'm just going to keep posting updates here in case someone does a search for it someday. I did a total of 9 days without a cheat day! I feel amazing! It's SOOOO much easier now that I made it past the first few days. So far I've lost 3.5 pounds, and I feel like my digestive system is really working efficiently...
  15. Yeah!!! I hope you have the BEST time!!
  16. I've never had good luck asking people in the store itself Most of them were totally clueless as to how to answer one of my questions, so I gave up. I've stopped anything processed from TJ's. I stick with fruit, veggies, cheese, and oils for the most part. I have also found the almond butter to be okay. But the nuts all have different labels about shared...
  17. I forgot to mention two things in my last post: 1. The reason why I think I am so hungry is because my body is craving sugar. So my brain is telling me, "You aren't feeding me what I want, so I'm going to tell you to keep feeding me until I get what I want!" 2. Part of the good feeling that I'm getting is that I feel like my digestive system is working...
  18. Update! I'm on Day #5 of the correct diet (40g carbs/day - I admit that sometimes I am between 41-43), and am feeling pretty good. I've lost two pounds! I've only been doing light strength training, nothing excessive outside of my normal routine. Just making a point to do a couple of extra exercises when I can. I'm still dealing with continual hunger...
  19. My blood test results were off the charts. I got the endoscopy which confirmed Celiac. It took me a year and a half to bring my antibodies down to the normal range. Good luck!
  20. Welcome to the board! You will always find friends and support on this forum. Many of have been on this site for years because we find this kind of community support is incredibly important and also because it so important to help out others - we were all in your shoes at one point. Remember: it may be hard now, but once you get the hang of it you will...
  21. I do! lol Another thread: https://www.celiac.com/forums/topic/104668-glutening-dreams/
  22. Hi there! It's not unheard of to have a delayed reaction such as yours. I've been told that reactions can happened immediately or be delayed by up to two weeks. Yikes! I don't know what my reaction time is because thankfully I haven't been glutened very often, and when I have I cannot pin point where it came from. It might be helpful for you to keep a...
  23. I hope you feel better! .....I want a cupcake. Like a REALLY big one! lol I haven't had sugar cravings like this in a long time. I've been told that they go away after the first few days. I try to not eat a lot of red meat because I feel like I don't digest it very well. Occasionally I'll have sausage or hamburger, but I mostly stick with chicken or turkey...
  24. A little update: Unfortunately, I found out that I wasn’t doing the diet effectively. The book was misleading because it said you could eat as many vegetables as you’d like. However, the carb content in green beans, garlic and onion (which were on the "good" list) was pushing me WAY past 40 grams of carbs per day – I was probably more like 80-100g wh...
