    I strongly suggest that anytime any of you gets sick after a server or any restaurant cook, staff or manager states they will ensure you only get gluten free food that you go back the next day or within a few days and you demand your money back. I have done this three times and only had one of the three places refuse to refund my money. At the place that would not refund my money, I went back and sat at the bar and had a few Patrons on the rocks and left a $5 tip for the bartender and told her to put the bill on the manager and walked past the manager and said thank you. He was not sure why I said thank you after the conversation we had where he refused to refund my money when he said how could I be sure it was his restaurants food that got me sick. Great customer service...

    While I do not suggest you take things to the extreme that I do; but when you get something that makes you sick when you get assurances that they will accommodate and serve you gluten-free food that you stand your ground.

    I do not put up with other peoples ignorance about gluten. Ok, enough of my rants.

    Note sure what phone you have. I have an iPhone and did a search for diary notes and found a bunch of Apps. The one I liked best was called "NoteMaster". It costs $3.99 and is pretty robust.

    Don't get me wrong I prefer home made stuff. I just don't like cooking beyond the basic food stuff for myself. I would love to cook for someone though and cook together.

  7. I agree that eating out is the biggest challenge for dealing with a gluten-free diet. I am a single man who up until less than a month ago ate out most of my meals. While I always had an eat to live mentality I ate out with friends or dates as a social thing. I think there is a difference for those who have a family life in the home and either they or a family member prepares and cooks their own meals and someone like me and maybe you.

    I suggest that when eating out that you change the type of places you eat at. Firstly, stay away from fast food places that serve highly processed food and eat at places like Chipolte or similar where they use more whole-type foods. Secondly, when eating at a non-fast food restaurant learn the difference between highly processed bar type food and stick with a place that serves healthier choices that are again whole-type foods. You will always have the chance of CC no matter what but always attack your food choices with the most obvious (whole-foods) first then fine tune your choices to mitigate CC.

    Lastly, educate your friends and if they don't work with you when deciding where to eat then get new friends. Surround yourself with a**holes and they will always let you down. A good person/friend will respect your needs.

  8. More rambling about my gluten-free journey:

    In the past 12 days I have not consumed any gluten. I noticed the past few nights that I have not slept much and while I have problems getting out of bed I have not felt totally exhausted during the day. Hope this doesn't last too long or I will have to run across the country like Forest Gump.

    I have not been eating all that much (except for the evil cookies I made in the middle of the night the night before last) and continue to feel a little bloated. Not sure what to expect next regarding my energy level and my mood.

    Last night I met a few friends out at a bar/ restaurant and while they ate I just had a glass of water and a Patron on the rocks. I imagine that eating out is going to be my biggest challenge. While I know that my gluten-free diet change with still drinking a little bit of tequila or wine is probably not wise for my gut I will not change that unless I see it causes further harm. I guess we all vary slightly in how we react to certain things physically or mentally beyond the certainty of the common immunological response to gluten.

    I know that I will continue to kick this gluten diet stuff in the ass and that I will have a few setbacks along the way. All in all...I have continued to feel better day by day and as of this day my brain fog is pretty much gone.

    My gluten-free life moves on...

    This is all I have. I am signed up with an online system to view all my records and it doesn't help when you can't read them! This is what I have and my Pediatrician is waiting for all bloodwork to come back before she calls me with the results.

    My daughter is being tested for something else, but I asked her to give her this test while she was in there doing all the lab work.

    My daughter was diagnosed with ADD and is always constipated, mouth sores, ect. I talked to a PA about it once, casually, b/c she has it. She said it was worth it for me to check her out...so it was a long shot diagnosis, but I thought I would check anyways.

    Please let me know what you think. I copied and pasted everything that was given on the results page.

    Not knowing how the results compare to the "normal" range for the test done, I suggest that if your daughter does end up being diagnosed with Celiac Disease then you change your diet along with hers to be gluten free. It would do you no harm and it would help her tremendously.

  10. Note to self: I must stay away from cookie discussions.

    I couldn't sleep last night and saw this evil cookie talk... So I made my version of the peanut butter cookie and modified the first posts recipe and used what I had. I cut the sugar in half (using a mix of 1/2 regular sugar and 1/2 brown sugar) plus I added vanilla plus Pamela's Ultimate Baking & Pancake Mix plus Nestles Chocolate Chips plus gluten-free oatmeal.

    I didn't adhere to exact measurements of anything and just mixed things until I had a good cookie dough. I cooked them and that's when they turned evil. The possessed evil cookie came out tasting very good and I ate about 20 of them and that made it even harder to get back to sleep.

    Today I am tired and have to make this affirmation to myself to stay away from cookie discussions and to state that I am a Cookie Addict!

    It is often hard to stand alone with your convictions in face of other peoples ignorance. You are the parent of your child and trying to do what is best for her. Don't be concerned about what they think and view their opinions as misguided information and let them talk with you in private about anything they want.     Don't let anyone set the tone for you or your family's emotional and physical well being. Continue educating yourself and surround yourself with smart friends.

  12. Having had a number of injuries during my life I found that sometimes when my body was healing I sometimes felt worse in some areas after the major healing was well underway. It is sort of like when you injure your back and your back muscles tighten to act as a splint to stop your back movement so the back can heal. Once the back heals you find your back muscles are all tight and need to be stretched. The same thing happens when your core body temperature drops as result of hypothermia. Your body cuts or slows blood flow to your extremities.

    What I am trying to say is maybe your body is now healing in secondary areas now that your intestinal villi are getting better. I am not a doctor. I would ask your doctor if that might be happening here. I don't know you so this might be just grasping at a long shot.

    I hope you find the reason for your odd aches.

  13. I read ravenwoodglass' post after writing my reply. I agree with what she said.

    Unfortunately most of us are wired to be complacent when things are good (your not feeling sick from gluten) then you forget about the sick times and you eat the wrong foods. I would not waste time beating yourself up. You mentioned you went out to eat with a new boyfriend. If you are still involved with him then talk to him and educate him of your gluten problem. Tell him how you got sick after you two went out and make sure he understands that you can use a little help from him as your second line of defense. How he handles this new knowledge will speak volumes about both his character and how he feels about you.

    You are no different than any of us. Up until May 28, 2011, I ate gluten food when eating out with friends or on a date. I thought if I had to be on a gluten-free diet I was weak in some way. It turns out that I am not weak, I am just wired genetically different when it comes to gluten.

    Answer the question as to why you allowed yourself to eat gluten. Was it to please or in some wacky way win-over your new boyfriend? Or was it to feel normal and just fit in with the majority? Don't beat yourself up. Just make your conviction to remain gluten-free a priority and stand strong.

    I will not eat pizza at a place that serves gluten-free pizza unless the people working there have celiac disease. I was in a local pizza place and watched this young kid make my gluten-free pizza. He placed the pizza dough onto the same prep counter that was covered in regular wheat flour. I ended up not getting pizza there.

    Beware of false gluten-free pizza makers...

    He is not gluten-intolerant or a celiac but went gluten-free for me. I think he only misses the beer. He is rewarded frequently for his sacrifice. :lol:

    Maybe soon. They only just started selling outside of their state, so it's mostly in the southwest at the moment.

    My brother and father's beers of choice before diagnosis were usually Guinness and close equivalents. :-)

    I live in Huntington, NY (Long Island). I am looking to move from here but just have not decided on where yet. I have never made any home-brewed beer. My plan for the day after tomorrow is not set in stone and open for changes. When you go to NJ...just remember to stay away from gluten laden pizza. Let me know if you need a pizza watchdog.
