Corn starch is a good thickener. Mom always used it for gravies and stuff. -
ARCHIVED Why Has My Hunger Craving Hasn't Changed Since Going gluten-free?

"One thing that can't hurt you is adding green leafy vegetables. You never see anyone here complaining about what their salad did to them." Actually, when I first started the diet, leafy greens went through me like water. I wasn't intolerant to them but my system was so messed up it seemed like EVERYTHING was giving me trouble. Switching to all organic foods... -
I'll see if I can find a decent banana and try that. And if I DO get blueberries back I'll do it with them. No need to add sugar. Tart blueberries are just fine with me.

Yeah, when I first started I ate a banana for breakfast every day. But I wasted a lot of money trying to find good ones. Several times I would buy some that were still green and they would rot to liquid before they turned yellow. I'm serious. The produce in this town is beyond pitiful. I'll be going to Rapid on Sunday to get some of the good stuff and yesterday...

ARCHIVED Why Has My Hunger Craving Hasn't Changed Since Going gluten-free?

COULD be CC. Or it could be the type of nuts. I can't do almonds for some reason but cashews work just fine. And as I said before, you can eat Planter's nuts without fear. They are one of the good guys (I believe Kraft owns them.) ANY gluten will be CLEARLY labeled, and anything that is processed in a facility that uses gluten will be clearly labeled. -

Can you eat nuts? I was having a bit of trouble with C after going gluten-free. (Before going gluten-free it was the opposite.) Since I eat a handful or two of nuts every day now I haven't had that problem. -
I have never cared for peanut butter. I know people think I'm crazy but even as a kid I would tell Mom, "No peanut butter on my sandwich please. Just jelly." Now, jelly is a different thing. I LOVE it, but the pectin used in commercial jellies is derived from corn so i can't eat it. I'll have to talk to some of my friends who make jelly and see if they'd...

"but way more goes in then out." That surprised me at first too. Then I realized I was finally DIGESTING my food instead of it passing through. (The savings in TP almost covers my grocery bill! ) Just keep eating lots of small meals for a while. And there's nothing wrong with getting up in the middle of the night and eating a bit if your hunger wakes... -
The ice cream I've been eating is vanilla. But I don't want to do fruit because of the sugar. I know I can't have a sweet treat, I was just wondering if anyone could think of something besides bread that would fill the hole in my stomach in the evening and taste good at the same time. I suppose another handful of cashews would do it, but I already eat those...

No farmers in the region. Just ranchers. I wish I could buy some steaks or pork chops on the side of the road, but alas, they sell to the big beef processing plants. SOMEDAY I'm going to buy a freezer and buy some grass fed beef from a rancher. The smallest amount they will sell is half a beef. I've got another question. I have been eating ice cream...

The American Veterans Traveling Tribute arrived in town about an hour ago. This is an 80% scale copy of the Viet Nam Wall in Washington DC. For the next several days there are events in town honoring our veterans. (This is particularly significant in this town. We have one of the very best VA hospitals in the country. It has been rated in the top three every...

ARCHIVED First Experience At Refusing The Food Someone Cooked For Me.
bartfull replied to Renegade's topic in Coping with Celiac Disease
Good for you! It isn't easy telling well meaning friends that you can't eat something they made special for you, but you did it. I had people trying to cook for me at first and finally I just told people I made a new rule for myself, that if I didn't cook it, I can't eat it. I hope the "may" turns out to be a "didn't", and this doesn't set you back... -
There IS a farmer's market but they only hold it once a month. Some friends have gardens and have promised me some squash soon. I COULD put in a garden if I had time and money. I put in so many hours at my business I don't have much time to weed a garden, and because there are so many deer in town I would have to put up a six foot fence around it. I had thought...

Part of it might be cross-contamination. Read the Newbie 101 thread so you can learn about places gluten can hide like, wooden spoons and cutting boards, old toasters, strainers, and condiment jars. Also, check any medications or supplements you might take. And lipstick or lip balm. Also, I think what you are going through is gluten withdrawal. Part of...

Bok choy is something I remember from when I lived in civilization, but I don't think anyone here ever heard of it. I haven't done frozen because some frozen veggies are dusted with corn starch to keep them from clumping together. But I THINK I can probably do corn starch again and besides, if I'm lucky I might find some that is not dusted with it. It's worth...

Renegade, I live "in the middle of nowhere" and we get the dregs off the back of the delivery truck. Desperate Lady, who said I was going to move??!! Just because the food here stinks, that's no reason to move. Except for the food I love it here. Not fond of turnips but I do like squash. IF I can find some that aren't rotten! The cabbage thing isn't...

OK, so I've mentioned before that I can't get anything good to eat where I live. But today it REALLY got to me. I cooked some chicken this morning and I needed to go to the store for some sweet potatoes. The first store had old dried out ones that were splitting open. I looked at the white potatoes and they were the same. So I went to the other grocery store...

ARCHIVED How About A Reward For Avoiding Getting Glutened!
bartfull replied to AlwaysLearning's topic in Coping with Celiac Disease
Your returning good health is a reward. But I know that's not what you mean. How about choosing a really tasty gluten-free treat ? Something like Udi's double chocolate muffins. They are SOOOOO GOOOOOD! You wouldn't want to eat them all the time because they are high in calories and low in nutrition, but as an occasional treat to reward yourself, hey... -

ARCHIVED Anyone Suffered Or Suffer From Asthma/shortness Of Breathe?
bartfull replied to Renegade's topic in Coping with Celiac Disease
It doesn't sound like asthma to me. It sounds more like emphysema. Not trying to scare you, but you really should get it checked. -
ARCHIVED Cross-Contamination Question, How Safe To We Have To Be?
bartfull replied to Renegade's topic in Gluten-Free Foods, Products, Shopping & Medications
If you can find Planter's almonds you can safely eat them I believe. Planter's is one of the good companies that label for gluten AND label if there is gluten in the facility they were processed in. I eat their cashews every day. You could also buy almonds in the shell. -
ARCHIVED Cross-Contamination Question, How Safe To We Have To Be?
bartfull replied to Renegade's topic in Gluten-Free Foods, Products, Shopping & Medications
Some folks are sensitive enough to react to any amount of CC. Others aren't. For right now I would eat only things that are NOT processed in a facility that also processes wheat, simply so you can get all traces of gluten out of your system. I would treat items like this as potential sources of CC until I started feeling better, got past withdrawal, and was... -

ARCHIVED Responses To "i Have Celiac" Or "i Have Food Allergies" ...... Gotta Vent A Little!
bartfull replied to cap6's topic in Coping with Celiac Disease
For the first vent, I just tell them, "Hey, everybody's got something. At least for what I've got I don't need surgery, I don't need medication, heck I don't even need a doctor. Not only that but there are so many foods that are gluten-free and delicious I don't feel deprived at all." As for the second vent, she should have asked you first. If she hasn...
