I kept a food diary. I have been gluten-free for over two years now and for quite a while I only ate the same foods after figuring out which ones didn't hurt me. Now I have been adding foods back and I do so one food at a time, wait a week, then try something else. -

Plain whole foods are gluten-free. Meat, potatoes, sweet potatoes, veggies and fruit. Think about it - most meals we eat consist of those things. If you've been gluten-free for 2 years you will test negative on the blood tests and the biopsy. Your doctor should KNOW that. And both of them should know that you CAN'T eat a little bread once in a while. They are both idiots, IMO! -

I wouldn't eat at a Perkins even before celiac. All of their food comes from the main plant. It all comes in frozen. Even things like a pot pie - the dough comes in frozen, and the filling is in a big plastic bag. They put it together and bake it, but they do no real cooking. I think you answered your own question - your metabolism DID change, partly from age, and a good part from quitting smoking. Even if you aren't digesting your food and absorbing nutrients, sugar goes into your system almost instantly, along with all of its calories. -

I don't have the bottles here so I'm not sure of the brands. But make sure the B12 is METHYL, not cyano. Methyl is the one most easily absorbed and is more active in the system. Just make sure whatever supplements you get are gluten-free. -
