    Start with corn starch. The protein is mostly processed out of it. That's why I can now tolerate it. But even though I got it back, I lost it again for a while after a glutening. I've got it back again now, after several months.
  3. I have yet to find a microwave popcorn that wasn't full of chemicals. Even before gluten-free and corn-free, I would never eat the stuff. It's just as easy to buy a jar or bag of Orville's or Jollytime and make it the old fashioned way. You can make as much or as little as you want that way too.
  4. Pegleg, the ones I buy are only the size of a cupcake and they come four to a pack. And since there is nothing like a gluten-free bakery here, and since I'm not all that far from Denver, I don't mind a bit.   5. Salax, there is a bit of corn starch in them, but no corn syrup solids. I have gotten to the point where I can handle corn starch. I eat it in other things, like Udi's bread, with no problems. Pugmug (love the name, by the way!), I went five days between servings. I think it really was because they are too rich with chocolate to handle on an empty stomach...

  7. Technically, it doesn't have the grain and so it should be gluten-free. But think about it - SOME of the grass may have a grain or two, and it is definitely harvested with the same machines as wheat. So it has GOT to be cross-contaminated. I would not eat it.

  10. It's OK!!! I can still have vanilla ice cream as long as there's no corn syrup, and where I live we have Blue Bunny All Natural Vanilla. It is SO good and So creamy! AND since they took the cornmeal out of Canyon Bakehouse, I can have that too! Those are my treats, and mighty good ones they are.

  16. Why in the WORLD would a doctor NOT test for celiac, but tell a person to try gluten-free and ASSUME they are NOT celiac???!!! It ticks me off to no end! The problem with going back on gluten in order to be tested is that you risk getting a MAJOR flare of DH that may not go away for TWO YEARS!!!   17. Oh Hon, I'm sorry, but you DO need to be tested for celiac. It sure sounds to me like you have it. IF you can find a KNOWLEDGABLE dermatologist, you can be tested by biopsy of the possible DH. They have to test a CLEAR spot, right NEXT TO an active lesion. If you do have DH, that is your celiac diagnosis right there. Or you could get the several blood tests...

  19. The best way (and I say this from experience), is to avoid ALL corn for about three months, then eat some processed corn - something like your corn chips or some gluten-free cornbread. Corn is in just about all processed foods so it's really hard to avoid. And it isn't labeled if it is "used in processing". That means you need to buy your salad fixings...

You DO run the risk of all sorts of nasty "complications" like cancer and lupus and other autoimmune diseases IF you don't stick to a gluten-free diet.
