I know that some canned tuna packed in water have a soy based vegetable broth in the "water" that is gluten-free, but could that possibly be bothering you with your allergy to soy? I've had good meals at Denny's as well. The local one we visit has actually had quite a few people stop by who "can't eat wheat" and most of the staff I have encountered have at least been very accomadating. The only reason we don't eat there more often is because my kids end up eating a ton of bacon! That is about the only thing they want when we go there...

Do NOT stop eating gluten until after your biopsy. It will affect the results. The lining of the intestines repairs relatively quickly and you will not get accurate results if you are gluten free even a week before the biopsy! If you are strictly gluten free for a few months and you are taking the Lactaid supplements, but are still experiencing stomach issues when eating dairy, then it might be a good idea to try dairy free to see if casein might be an issue with you. Some products in other countries (the UK, and maybe others) do allow CODEX wheat starch in their gluten free products. It does contain gluten but in a very low amount that they say doesn't cause symptoms. (but I still wonder if it will cause damage in the intestines over time and repeated consumption!) According to this first list it is gluten-free. But I would still contact the manufacturer to find out why the don't recommend using it for people with gastro diseases. Casein is one of the main proteins in milk. It is in all forms of dairy, including the lactose free ones. It causes similar gastric problems in many people with celiac disease. I had a hiatal hernia when I had my biopsy. It was not severe, and it was also not there at an earlier endoscopic exam in 2001! I read that the endoscopic exam can actually cause a hiatal hernia. I don't know if that is actually true, but in my case I am suspicious. If yours is not very bad then there are things you can do to help your body to heal...

I gave up and got rid of my breadmaker. I know it helps if you mix and let rise separately and then use a bake only cycle on your machine. Marilyn, I had a much easier time with the biopsy, than with the colonoscopy. Both procedures were fairly easy, but the prep kit for the colonoscopy made me very ill.
