  1. I get very similar symptoms from soy now. I never seemed to notice any reaction before going gluten-free. Are you keeping a log of what you eat? It's not unusual to develope a second food intollerance after being fg. Keeping a log may help you find your culprit. It gets tricky because some reactions to food can be delayed for a day or two.
  2. My bread turned out beautiful. This is a great recipe. Thanks SO much for posting it!
  3. I was pretty sick when I went to the GI. She said she was going to run some blood tests and schedule a stomach emptying test and an endoscope. All of these tests were prescribed right away and done as soon as they could get me in, all within a week or so. She wanted everything done before trying to give me a DX. I'm really glad she did it that way. If...
  4. I had to go several places to find a bucket for making sour kraut. Found one at Walmart! The "recipe" I have says to use canning salt. I couldn't find that either, so I got Kosher salt. Ingredients: salt Will start slicing and layering tomorrow. I made bread for the first time today, and will start making kraut tomorrow. I didn't can tomatoes...
  5. One thing I didn't think of when first going gluten-free was the can opener. We have a mixed household and one day as my son was opening a can of spaghettios he thought of it. I now have a gluten-free can opener and one that can be used with gluten. Replace her toothbrush too. That's another thing I didn't think of at first.
  6. If you're done with tests my best advice is to try a diet completely free of all traces of gluten. Blood tests can come back negative even if you have Celiac, and an endoscope may not reach the area of your intestine where there's damage. It's also possible that you are gluten intollerant, rather than full blown Celiac. In either case the treatment is to...
  7. I don't have any experience with Bob's Red Mill products. I've read on here that a lot of people find their flours are cc. They also make wheat flours and even a bag of something that's just wheat gluten that's used to boost something when making wheat bread. I'm afraid to try their products!
  8. I'm pretty new to this gluten-free thing. I was diagnosed at the beginning of July of this year. I've lost 20 lbs. but didn't need to lose it, so I'm looking pretty thin right now. I may not have a choice about buying new jeans and a few other pieces of clothes because my old ones don't fit? I'm so happy for you having your head in such a positive...
  9. I have this bread dough rising right now. It's just even with the sides of the pan, so a bit more to go. This is my first time making bread ever! I got the KA flour (240z) at Meijer's grocery store for $5.99. There was enough flour to make the loaf plus some left over. I didn't measure, but it looks like maybe there's at least 1cup or so left? I didn...
  10. It's my understanding that malt is used in cereals for retaining crispness. Malt is from barley, therefore has gluten. You shouldn't eat cereals with that ingredient. In the past Rice Crispies were a no-no for us, but they've come out with a gluten free version. The difference is that malt.
  11. I had normal blood tests, but severe villi damage, which was my DX. I had a lot of symptoms that seemed like gall bladder, and still do occasionally. The best I can recommend to you is to stick with with whole foods like fruits and veggies and non processed meats. If you have villi damage you won't be producing the enzyme that digests milk. If you drink...
  12. One of the reasons they like to do the colonoscopy is to see if there is some Crohn's damage. It some of the same symptoms as Celiac. There is also a staining test of biopsies that can be done to check for Mast cells. They can help a Dr. DX problems too, but most don't do that one since it's a fairly new idea.
  13. Shortly after being DXed I was in the grocery store. I had to walk through the bakery section to get to the special foods. I got a feeling like my throat was closing and I couldn't breathe well. It was scary! I've been getting allergy shots for pollen, grasses, molds, dog dander, etc. for the past 3 years. When I went to my allergist I told him about...
  14. Thanks! I was thinking maybe they slipped a new kind of Dr. into the mix?
  15. Sometimes I feel like we are just science experiments to Dr.s! They don't think through what effect their tests have on the patients, they just want scientific data. I would call the office to get a clarification on who said to have her eat gluten. If it was just the nurse stating usually procedure without knowing all of the facts, that's one thing...
  16. I'm absolutely shocked that you weren't given a DX in 2004 and told to be 100% gluten free! I feel really bad for you. If you're losing weight it's a pretty good sign that your villous atrophy has gotten worse. I just can't understand why Dr.s are SO against giving a celiac DX?
  17. I'm at a point right now where I don't have too much positive to say..but if I were to pick one thing..it has taught me to be my own advocate. To speak up and not be a "shy Violet". I've been horribly shy my whole life, so this is a big change for me.
  18. If you can have mayo..I thought deviled eggs might work for you too? You could take them in a thermal lunch bag and have the nurse keep it in their cooler? Good luck with your tests!
  19. I'm a bit concerned what reaction the GI will have if this new PCP calls her. If her DX and lack of info is being questioned she may not want to be helpful? Plus..I have a $35 copay if I go see her. I'm not scheduled to go back until next year. I meet with a dietician today, so will ask her if she knows any Dr.s that have other patients and are knowlegeable...
  20. Thanks SO much for searching in my behalf. I found that Dr. Naddaf is a pediatric GI. He's affiliated with the Mercy hospitals here in our town. They are the rivals of the Hospitals that are in plan for my insurance. I'm sure it wouldn't be an option to see him? It appears that at one time there was a Celiac support group here? I tried contacting...
  21. I'm guessing maybe the insurance regulations are the reason the Dr. said no to the Hashi's test? Actually, I have symptoms that seem like I'm flip-flopping between hypo and hyper thyroid. I don't know if knowing my TSH level will help diagnose or not? None of this seems to be easy? Does anybody know how I might find a Dr. that has treated Celiac and...
  22. Thanks so much for this info! I'd like to try this. It sounds like my kind of "cooking" I'm gonna look for one of those buckets.
  23. When you get back be sure to get a copy of your tests results. I've had Dr.s tell me everything is normal in the past, when it actually wasn't. It was borderline. If eating gluten-free made you fell any better at all..you can go back to it. you'll probably go through a withdrawl period though. You know what I find odd? A LOT of people seem to crave...
  24. It's also possible that another food is causing reactions in you. I'm finding that soy completley zaps my energy. When I ingest it I don't just get tired..it's like I've been drugged. I guess my best advice would be to keep a log of what foods you eat, including brands. Log any reactions you have and see if you can make a connection. You could also...
  25. If you're still eating gluten I'd ask for a Celiac blood panel to be done at the very least. In some people (about 30%)the blood tests come back normal even with Celiac disease..and..you could still have a sensitivity/intollerance if not full blown Celiac. Your symptoms sound like you have a problem with gluten. If your Dr doesn't want to run the test...
