I get very similar symptoms from soy now. I never seemed to notice any reaction before going gluten-free. Are you keeping a log of what you eat? It's not unusual to develope a second food intollerance after being fg. Keeping a log may help you find your culprit. It gets tricky because some reactions to food can be delayed for a day or two.

I had to go several places to find a bucket for making sour kraut. Found one at Walmart! The "recipe" I have says to use canning salt. I couldn't find that either, so I got Kosher salt. One thing I didn't think of when first going gluten-free was the can opener. We have a mixed household and one day as my son was opening a can of spaghettios he thought of it. I now have a gluten-free can opener and one that can be used with gluten. Replace her toothbrush too. That's another thing I didn't think of at first. -

If you're done with tests my best advice is to try a diet completely free of all traces of gluten. Blood tests can come back negative even if you have Celiac, and an endoscope may not reach the area of your intestine where there's damage. I don't have any experience with Bob's Red Mill products. I've read on here that a lot of people find their flours are cc. They also make wheat flours and even a bag of something that's just wheat gluten that's used to boost something when making wheat bread. I'm afraid to try their products! -

It's my understanding that malt is used in cereals for retaining crispness. Malt is from barley, therefore has gluten. You shouldn't eat cereals with that ingredient. In the past Rice Crispies were a no-no for us, but they've come out with a gluten free version. The difference is that malt. -

I had normal blood tests, but severe villi damage, which was my DX. I had a lot of symptoms that seemed like gall bladder, and still do occasionally. One of the reasons they like to do the colonoscopy is to see if there is some Crohn's damage. It some of the same symptoms as Celiac. There is also a staining test of biopsies that can be done to check for Mast cells. They can help a Dr. DX problems too, but most don't do that one since it's a fairly new idea. -

I'm absolutely shocked that you weren't given a DX in 2004 and told to be 100% gluten free! I feel really bad for you. If you're losing weight it's a pretty good sign that your villous atrophy has gotten worse. I just can't understand why Dr.s are SO against giving a celiac DX? -

I'm a bit concerned what reaction the GI will have if this new PCP calls her. If her DX and lack of info is being questioned she may not want to be helpful? Plus..I have a $35 copay if I go see her. I'm not scheduled to go back until next year. I meet with a dietician today, so will ask her if she knows any Dr.s that have other patients and are knowlegeable...

When you get back be sure to get a copy of your tests results. I've had Dr.s tell me everything is normal in the past, when it actually wasn't. It was borderline. If eating gluten-free made you fell any better at all..you can go back to it. you'll probably go through a withdrawl period though. You know what I find odd? A LOT of people seem to crave... -
It's also possible that another food is causing reactions in you. I'm finding that soy completley zaps my energy. When I ingest it I don't just get tired..it's like I've been drugged. I guess my best advice would be to keep a log of what foods you eat, including brands. Log any reactions you have and see if you can make a connection. You could also...

If you're still eating gluten I'd ask for a Celiac blood panel to be done at the very least. In some people (about 30%)the blood tests come back normal even with Celiac disease..and..you could still have a sensitivity/intollerance if not full blown Celiac. Your symptoms sound like you have a problem with gluten. If your Dr doesn't want to run the test...
