  1. As I read your results Simona it all sounded like gobeldy-gook to me! I'm so glad Josh was able to translate for you. Josh..if you are that fluent in double-speak you could have a promising future in politics? LOL
  2. Thanks for your upbeat message Pete! I'm glad to hear that gluten-free has worked for you. I'm pretty new to all of this so it's always encouraging to hear good outcomes.
  3. Your kitchen is really cute, even though it's tiny. Hooray for you..experimenting with the bread! I just got my mixer. I took it out of the box yesterday, but didn't run it yet. I'm a little scared of it. LOL With your mixer on that little stand it kind of makes me nervous that it could get bumped and topple over. Could you sit it at an angle...
  4. I have Celiac and my blood test was negative. My diagnoses was done via biopsy, just as yours was diagnosed by your DH. The thought that you can eat gluten is very harmful!
  5. I'm so glad that you had a good time..and let us know about it. It must have been like a REAL vacation...you didn't have to worry about food the whole time?! The thought of going on a trip anywhere really scares me. I've only been out to eat once since my Dx and it was a nightmare.
  6. I've had a lot of dental work done. Bad teeth run in my family. My Dentist told me about 2 years ago that the enamel on my teeth was bad..like an immune response symptom. I had no idea what she was talking about! I just went in for a clean and check today. I told her about my recent Dx when I made the appointment so she could check that the polish doesn...
  7. If I get glutened I get hyper and happy at first, then I sort of crash and I'm depressed. My hubby noticed it before I did. If I start talking fast and sound real energenic he asks me what I've had to eat.
  8. The thought that you have a disease and must treat it by never consuming gluten again can be very overwhelming at first. Take some time to read about it and the good foods you CAN have. At first, it's best to stick to whole foods like fresh fruits, unprocessed meats, and later..once your villi heal..add dairy. You can still have wine! As you heal...
  9. My hubby had a nearly fatal heart attack at the age of 51, in 2005. He went to nutrition classes and the one of the top things on the list was NO trans-fats. We avoid it like the plague! They are not normal in nature. They are a manufactured form of fat that the body doesn't know what to do with. They cause inflamation, which causes all sorts of bad...
  10. I ate a Hershy's bar with almonds two days ago and got gluten symptoms. I'm logging everything I eat and it's the only new item I added to my diet.
  11. Raven..I've onl;y been here for a short time, but want you to know I'm so thankful you're here. You're always so compasionate and helpful to others. I lost a dear basset hound 2 months ago. I know what it's like to have that unconditional love and what it's like to lose it. My family is very much like yours. Very wrapped up in their own life and too busy...
  12. Hello and welcome. First off, I have to tell you that typing in all caps is considered yelling when typing on a forum. It kind of puts people off and I know you don't want to do that. Nightshades(tomatoes, potatoes, peppers and eggplant) can be a problem for a lot of people. There are a lot of books on the subject and quite a few websites. I'd...
  13. Your blood tests seem to show a potential for problems? It doesn't mean you have developed Celiac, but could. With no villi damage it should be safe for you to do a gluten challenge to see how you react? Gerd could be from dairy or some other food that doesn't agree with you? Are you keeping a log of what you eat with reactions noted? It can help pinpoint...
  14. Well..I've seen that many others have a few "bricks" from their baking exercises. LOL I guess we will be able to answer the question.."how many bricks does it take to "build" a good loaf of bread"? I never ate a lot of bread either. One loaf of Udi bread lasted me 6 weeks..kept in the freezer of course. The last of it was used to make croutons...
  15. i'm glad you're able to do the challenge without too much trouble. Hopefully you'll get some answers!
  16. My hubby just bought a box of this mix so we could try making pizza crusts. It's good to know it makes nice bread too.
  17. I think a lot of people that have a chronic disease or condition suffer with a bit of depression? It's also normal to greive the loss of some foods or activities...BUT it sounds like you self medicating with alcohol? That's not good! I wonder if the "friend" who poured gluten on your food was "under the influence" or just an XXX? A person like that is...
  18. Nausea was one of my worst symptoms before being Dxed. It showed up 2 months before my Dx and I think contributed a lot to the weight loss I had? I hope you're able to continue on with your challenge, but some people can't due to how lousy gluten makes them feel.
  19. LOL Sylvia! You have a better chance of making the perfect bread. I don't have any experience with the various flours. I was never much of a baker because everything has to be weighed or measured and have the correct ratios, etc. I'm better at cooking where I can just sprinkle a bit this or add a pinch of that..and it all works out.
  20. Before going gluten-free I used to get lemon poppyseed scones at the bakery near here. I've been craving them like mad! Does anybody have a recipe they can share?
  21. I ordered a KitchenAid Artisan. They had a rebate available. I'm thinking one of the first things I'm going to want to try is a pizza crust? Haven't had a pizza in ages!
  22. So are you saying you know you have gluten intollerance, but have been eating it anyway? If so, that's the reason for the vitamin deficiencies and weight loss. It sounds like full blown celiac disease. Some people, myself included, have normal blood tests, but villi damage can still happen. I'm curious what tests you've had in the past. How do you know...
  23. Congratulations...well done! I think it would be especially hard for you to be vigilant since you don't get digestive symptoms from gluten? You're obviously doing it right. I love that you share your passion for cooking/baking here. I've just ordered a stand mixer..my first. I may have questions for you once I get into more baking.
  24. I get pain in my left ear, followed by a dizzy feeling if glutened. I never had that symptom before going gluten-free.
  25. I was recently diagnosed with celiac disease. I immediately stopped eating gluten, but had a sensation of my throat closing when walking through the bakery department in the grocery store. It was scary, so I asked my allergist for food allergy testing. I didn't react to anything! Not even wheat, which really surprised me. I seem to get a dizzy feeling...
