I'm so glad you're feeling better! You should continue to gain good health if you stay strictly gluten free. I know at first one of your worst symptoms was anxiety and racing heart. That's scary. I'm glad that's resolving. -

For me it depends on the amount ingested. If it's soy lethicin..D, pain in lower right side of abdomen followed by joint pain. Bubba's Mom, I did have an endoscope with biopsy. I have patchy areas of atrophy in the duodenum, but the pathologist said the villi were fine. I had no other testing done, including genetic because my GI said it couldn't be celiac. She never explained the atrophy and isn't even concerned about that or the malabsorption. I told my grown sons they should be tested. They both have symptoms..and both refuse. My sister has Crohn's disease which cannot be put into remission. She has to get IV therapy every 6 weeks. Were blood panels drawn to test your vitamin/mineral levels? If yes, get copies of the results so you can track your levels and see if you need to suppliment. If the tests weren't done..ask for them to be. Ask for a copy of the biopsy report. How bad is your damage? Should you be taking digestive enzymes or probiotics? Ask for a written RX to be on... -

You can get a false negative with blood tests..but not false positive. If your numbers show that you are having an immune response to gluten there's no need to go through an endoscope procedure for a biopsy. You are Celiac. I'd be suspicious of the soy. Once I went gluten-free I found I was reacting to even very small amounts like soy lethicin. If I ingest it I get bad pain in my belly, GERD, too. I would recommend trying to just eat whole foods like fruit, vegetables, non processed meat, and dairy if you tollerate it well to start with. It's best not to go out and get a bunch of gluten-free versions of things, like baked goods and such at first. I think there's a typo in that link? At one place it says 200ppm, rather than 20ppm. Even with that in mind the poster is saying the amount would be similar in size to 1/4 a grain of rice. That "acceptable" 20ppm is a tricky thing. Does anybody really know what that amount would look like? I don't. I hear ya! Look how long it took to realize trans-fat was bad for us. It went into the food system in World War II and it's just been a couple of years that they realized the human body couldn't process it properly.
