ARCHIVED What Are You Canning/preserving?
Bubba's Mom replied to love2travel's topic in Gluten-Free Recipes & Cooking Tips
my kraut is still sitting there..fermenting itself. About a week after I started it I'd get a faint smell of something like a spoiled potato every once in a while. I went through the basket of potatoes and found they were ok. Later I smelled it again. Then I realized..it was the kraut. Doh! Now it smells like sour kraut should. I'm hopeful/excited... -
ARCHIVED What Are You Canning/preserving?
Bubba's Mom replied to love2travel's topic in Gluten-Free Recipes & Cooking Tips
I haven't tried canning apples, but have done pears in the past. They were easy! I added cinnamon to a couple of jars for spiced pears and they were good too. Open Original Shared Link -
Balsamic Vinegar
Bubba's Mom replied to missceliac2010's topic in Gluten-Free Foods, Products, Shopping & Medications
Rooibos tea is very nice too. It's not a true tea..but is high in anti-oxidants. Very healthy. I find that having tea is very calming. It's partly the warm drink..but it's also the holding of the warm cup that's soothing to the soul. -
ARCHIVED Is There A Master List Of gluten-free Products?
Bubba's Mom replied to Britgirl's topic in Gluten-Free Foods, Products, Shopping & Medications
After my DX I had to go through my pantry and spice cabinet looking for things to pitch. Seasoned rice mixes, soups, bouillion, chili beans, noodle side dishes, pasta, seasoning/gravy mixes, salad dressings, etc. First I pulled out all of the obvious ones, then started reading labels. I had several boxes of stuff to donate to the local food pantry. I... -
ARCHIVED If Cross-Contaminated How Long Do Ur Symptoms Last?
Bubba's Mom replied to Applegirl's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
My most recent "glutening" was from trace amounts in a Bob's Red Mill gluten-free flour mix used to make cookies. I had only one cookie, so the amount that entered my system had to be VERY small. My effects lasted about 24 hours. It's really hard when you get cc by something and don't know what it is. It could be something very small that you're getting... -
ARCHIVED How Long For Gi Symptoms?
Bubba's Mom replied to pucaandpixie's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
Sometimes symptoms will come on very quickly, and sometimes there's a delayed reaction. Everyone's system is different, and even your own system will react differently from time to time. If it were me and I had just eaten something bad I'd stick my finger down my throat to bring it back up. Gross I know..but in my mind better than it going through your whole... -
ARCHIVED I Suspect I Am Gluten Intolerant. Any Advice?
Bubba's Mom replied to LOWNskater52's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
I agree..ask for a full Celiac panel to be drawn..and the genetic marker test too. Once you've had the blood drawn go completely gluten free. It's worth trying so you can settle down and feel better? Stick with whole foods (fruit, vegs, unprocessed meats, dairy)and use digestive enzymes if you feel you need them. They help a lot with digestion. Watch for... -
ARCHIVED Gluten "attack" Without Eating Gluten?
Bubba's Mom replied to caffadeus's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
About 3-4 weeks gluten-free I found I was reacting to soy. I guess a lot of us find out we have secondary intollerances once the gluten gets out of our systems? Also consider..you may have been "glutened" by touching something a gluten eater touched and it got into your system? Touching a shopping cart, handling money, door handle, ATM buttons, the list... -
ARCHIVED gluten-free Turkey's For Thanskgiving
Bubba's Mom replied to AmyKB's topic in Gluten-Free Foods, Products, Shopping & Medications
My local grocery store (Kroger's) is already selling frozen Turkeys at .59lb. They are Riverside brand. I read the packaging and there's no mention of anything that would have gluten. -
You might want to experiment with a diet low in salicylates? These naturally occur in some foods and can react in your tummy and intestine just like aspirin, causing upset and even ulcers. Open Original Shared Link

ARCHIVED What Do You Miss?
Bubba's Mom replied to celiacchef's topic in Gluten-Free Foods, Products, Shopping & Medications
I can't pick just one thing... a really good pizza crust would be nice a soft, non crumbly bun for a good burger egg pasta ravioli, manicotti egg rolls..not rice paper rolls and the holy grail..really good bread! -
ARCHIVED Gluten Enzymes - Experience/reviews?
Bubba's Mom replied to Leper Messiah's topic in Coping with Celiac Disease
My hubby bought me Gluten Defense capsules when he went to a little health food market near his hotel when he was out of town. I've heard they're a waste of time, but I ate some baked goods made with Bob's Red Mill flour, started feeling ill and took one in desperation. I figured it couldn't hurt? The amount of gluten in my system had to be very small, but... -
ARCHIVED How Long Till %100
Bubba's Mom replied to Gfresh404's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
Diagnosed at age 54, but had various symptoms most of my life.. gluten-free 3.5 months So far..maybe 5% better? I have a LONG way to go! -
ARCHIVED Reliable Food Intolerance Testing
Bubba's Mom replied to Celiacattack's topic in Food Intolerance & Leaky Gut
A Dr. so mis-informed is scary..but unfortunately common. My PCP is right out of medical school. I had hopes she would be better informed about Celiac but she's not. She questioned my Dx because I didn't fit into the narrow "frame" of symptoms she expected. I feel so bad that the Dr. wasted your time. Go gluten-free and best of luck to you. If your... -
ARCHIVED Question About Lactose Intolerance
Bubba's Mom replied to BeFree's topic in Food Intolerance & Leaky Gut
I was referred to a dietician to discuss my Celiac diet. I asked her the same question. She said it would be good to take a lactase suppliment if dairy gave me discomfort. She said if adding some cheese or butter to things made them taste better to encourage me to eat, go ahead and do so. -
ARCHIVED Please Help! New Celiac In Need Of Advice
Bubba's Mom replied to MandaSue's topic in Gluten-Free Foods, Products, Shopping & Medications
The meal sounds innocent, but you may have had something the day before and as it went through your system symptoms were triggered? I also would question the sources for anything you've baked. I'm 3 months into gluten-free and went to a gluten-free bakery yesterday. I bought several different cookies and a couple of scones. I ate the scone with tea in... -
ARCHIVED Impatient
Bubba's Mom replied to DonnaMM's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms

ARCHIVED Anyone Ever Feel Like Giving Up?
Bubba's Mom replied to Gfresh404's topic in Coping with Celiac Disease
Thanks so much for understang..and for your support. I met with a dietician that usually counsels diabetic patients. She had a lot of mis-information and didn't know the answers to some of my questions. She told me to just eat the gluten free verasions of the foods I had to give up..and Bob's Red Mill was highly recommended. I explained the 20ppm allowed... -
ARCHIVED Semi-Elimination Diet
Bubba's Mom replied to Strawberry-Jam's topic in Coping with Celiac Disease
It's a real shame there isn't a better way to narrow down what the problem is? Going to the grocery store is super depressing me. Being surrounded by foods we can't have. Reading magazines and clipping coupons is sad too. I'm faced with pics of tempting food. AND watching tv is hard in the evening. It seems like every other commercial is for some... -
ARCHIVED Anyone Ever Feel Like Giving Up?
Bubba's Mom replied to Gfresh404's topic in Coping with Celiac Disease
I feel like giving up too. My Dr. questions my DX because I'm newly DXed at the age of 54. She said it should have shown up sooner if I really have it. I said I thought I had a soy sensitivity too, because I get all sorts of neuro symptoms if I ingest it. She said "soy can't do that". My blood work was negative, but biopsy showed flattened villi and... -
ARCHIVED Semi-Elimination Diet
Bubba's Mom replied to Strawberry-Jam's topic in Coping with Celiac Disease
I'm glad to see you've found rooibos tea. That popped into my mind as I read your posts. It's hard to cut out SO many things! Since I've gone gluten-free I've noticed soy giving me neuro issues, so cut that out. I seem to react to the soy oil and lethicin that doesn't bother others. I've been having GERD and gallbladder type pains off and on lately... -
ARCHIVED Distended Abdomen
Bubba's Mom replied to Findberlee's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
Yes! I get the bloating and swollen belly from gluten. You can have Celiac disease and be overweight. Most Dr.s think of wasting away as a symptom but that isn't always the case. If you carry extra weight around your middle it's your body's reaction to inflamation and stress on the body. Inflamation is also present in Diabetes, and a lot of type 2 Diabetics... -
ARCHIVED Celiac And Lyme-So Confused About What's Causing My Symptoms!
Bubba's Mom replied to Spartan89's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
I had a LOT of your same symptoms from just Celiac. Eat gluten-free and make sure you aren't getting trace amounts from cutting boards, ooden spoons, your can opener. Get a new toothbrush, colander, and get rid of any scratched non stick cookware. Try to stay with whole foods (fruits, veggies, eggs, rice, dairy, and non processed meats)at first. It will... -
ARCHIVED Found Discounted Bob's Red Mill....
Bubba's Mom replied to kendon0015's topic in Gluten-Free Foods, Products, Shopping & Medications
"My" Big Lots has the mixes, DeBoles gluten-free noodles at $1 box and Oriental rice noodle soups in a microwave bowl. It's nice to find these items at a discount. -
ARCHIVED Melatonin Rules For Sleep Issues
Bubba's Mom replied to imracin68j's topic in Related Issues & Disorders
I wouldn't be able to sleep without it! I take it about an hour before bedtime every night. I don't always sleep through the whole night, but before taking it I wasn't sleeping except for maybe an hour or two every couple of days. Huge improvement!
