  1. Here is my latest delicious gluten-free creation.... I bought a bunch of Gluten Free Pantry boxed pie crust mixes, with the intention of making lots of pie crusts in alluminum pie pans and freezing them, because the frozen gluten-free crusts are so expensive. But I found the dough to be very difficult to work with, too sticky to get into the pie plate...
  2. I was thinking this as well. It sounds like there is something else going on other than WHAT you are eating. If your GI system is diseased (ie. Crohns, colitis, etc.) then it's not likely you can fix it with a special diet. It sounds like you are not eating nearly enough nutrients/protein to sustain a healthy body. Please follow up with your doc about...
  3. I used a Whole Foods brand gluten-free frozen pie crust when I made my pumpkin praline pie and it was fantastic! So light and flakey, with a great taste! I'm not even going to try another brand....I am sold!
  4. I just needed to come here and show off my pretty little gluten-free Pumpkin Praline pie. I used a Whole Foods brand frozen gluten-free pie crust, and it turned out soooooo good! I cut a slice out of it right after I took this pic (I didn't want to serve something that was gross). OMG..it's better than regular crusts that sometimes get soggy on the bottom...
  5. I have found that for crispy pizzas, Glutino crusts are edible. But I think I hit the jackpot when my local Dominicks grocery store had all of their French Meadow gluten-free frozen items for 1/2 price last week and I stocked up. The pizza crusts were SO GOOD! I had to double check because I thought maybe they had mixed up and put gluten pizza crusts in...
  6. Have you had your thyroid checked? Sounds like low thyroid could be a possible cause of a lot of your symptoms. Hashimoto's thyroiditis is very common in those with Celiac.
  7. Can I rant with you? In the last 3 months I have been DX with the following: Celiac disease Hashimoto's thyroiditis Sjogren's disease Rheumatoid Arthritis (early stages, thank God) All of this is in addition to Premature Ovarian Failure, Endometriosis, Fibromyalgia (maybe I don't have this since I now have RA??), Degenerative Disc Disease...
  8. Sandsurfgirl, I am so glad you posted about your problems, as I am going thru something similar right now and could use some insight! I recently saw an endocrinologist for Hashimoto's confirmation (I have it), and she ran my TSH, free T3 and free T4. My TSH was 3.8 (considered normal by her, even though I told her about the new recommended .3-3.0 range...
  9. My biopsy was normal, too. My GI doc dismissed me without any follow up to discuss my obvious Celiac symptoms. According to him (and a lot of docs), if the biopsy was negative, I don't have a problem. What an idiot. When my rheumatologist took one look at my DGP levels, he said it was most certainly Celiac and to avoid gluten like the plague. DGP...
  10. Thank you all for the helpful advise! I have a question, though. If my body is attacking my thyroid, and I am fluctuating between normal, hyper, and hypo (which I believe I am according to symptoms), how on earth do you supplement? One day the dose might be fine, but the next it would be too much, or too little, no? Can't the docs just zap my thyroid...
  11. Skylark...I know!! I was SHOCKED when I saw my TSH #'s from 2009! My medical clinic recently made all lab tests available to view online, so I can see all of my past test results. Here is that result copied directly from my chart : Component Results Component TSH Your Value 4.45 Standard Range .450 - 4.50 uIU/ml I was feeling...
  12. Thank you for responding, Gemini! My TSH has been: 4.450 in 2009 2.820 in 2010 3.500 in June 2011 So, if I go by the 2.5 being the upper limit, then Houston, we have a problem! I am going to see an endocrinologist as soon as I have my follow up with my rheumy, so I guess I will see what she says. Yes, I do have symptoms of RA. I have...
  13. Ok, I got my results from my rheumy appt. last week. Here are my test results that were positive/elevated: CCP Antibodies IgG/IgA 61 strong positive (0-19) Antibodies to CCP is the latest serological marker available for the diagnosis of RA. It is tested by ELISA and is more specific than Rheumatoid factor for the early diagnosis of RA. TPO AB...
  14. I love your attitude, Bigbird! LOL! Please post a picture of that awesome cookie when you make it!
  15. From American Celiac.org...... One negative aspect of the TTG antibody is that it can be falsely positive in a patient who has another autoimmune condition. TTG false positivity has been described in patients with both type I diabetes and autoimmune hepatitis. Theoretically, it can also be falsely positive in other autoimmune disease. Open Original...
  16. I really feel you on this one! I made a loaf of gluten-free bread on Sunday, and while it wasn't hard to do, it was still time consuming! It was soooooo good, but I have been trying hard not to eat it because it was so much work to make! Sandwiches are a huge luxury now, because I have to use up the bread that took me 3 hours to make. I'm not about to...
  17. Yep, time will tell. And be very strict about hidden gluten, to make sure that there is none slipping into your diet under the radar.
  18. Yeah, I completely agree with you on those last 2 points! This one is just plain sad and wrong : If you come to my office and say I feel sick when exposed to gluten and I do my tests and I figure out you don
  19. I hope this might offer some of you with either a negative biopsy (like me) or those who didn't have one, a little bit of hope . Dr Fassano is the Medical Director of the Center for Celiac Research at the University of Maryland School of Medicine. He is considered one of the leaders in Celiac research. It looks like the medical community might be coming...
  20. No way would I put my kid back on gluten with those test results!! He had those tests on July 4th and no doc said anything to you about it until you requested them yourself 3 weeks later? Ugghhh.... He is positive for both ttg and the endomysial antibody, he has Celiac. Your pediatrician is correct.
  21. Bob's Red Mill gluten-free Cornbread is fantastic!! I love my beans and cornbread, too, so I was pleasantly suprised to find a good mix! IT's really easy to make, too! P.S. Where in TN is your hubby from? I lived in Memphis for 10 years....still miss that place (especially during the long Chicago winters)!
  22. Agreed! You need to make sure that these other symptoms are not something else. As for the depression, itt's a chemical imbalance in your brain, and it's nothing to be ashamed of or something that you can just "suck up" if it's effecting your life like this. Have you talked to a doctor about the insomnia and feelings of hoplessness? I have been there...
  23. I read somewhere that DGP is the first antibody to become positive in response to gluten, so it would make sense that it was elevated if you had been glutened 2 days prior, but I'm not sure it would be that elevated. The most likely scenerio is you are getting cc'd more often than you think! Now if I could just find where I read that.... ....there is...
  24. Hi Twinkle! Licorice has gluten in it, so yes, you got gluttened! Keep us posted on your blood results (even though I think you have your answer about needing to be gluten free).....
  25. YES!! My dry eyes were terrible before going gluten-free! I would also get random attacks of episcleritis (red, burning eye that looks like pink eye without the goop). I had to use steriod drops in my eye. Since going gluten-free, I haven't had one attack, and my eyes are not dry and gritty. It's high allergy season here, too, and my eyes feel great...
