You're right about the Hypothyroid part. I think that will all the problems soy causes, that they're only now just starting to take serious note of, it's best not to mess with it. The fact is, soy disrupts thyroid function. It may someday be proven that 100% of the time--for every person--, this leads to gaining weight. But every individual is different... -

Steve- You have a very "Atkins" style of eating right now. Meat roll-ups for lunch are very Atkins style. The bread will increase your calories and your carbs. You need to do both to gain weight. Also, water all day is usually great, but you're looking to put on some weight. You should cut your water consumption in half and start having some drinks... -

The book Dangerous Grains is really good. It's written in a very readable style. The authors talk about the health consequences of undiagnosed Celiac/gluten sensitivity. Aggravating your immune system with little accidents can have devastating effects. It's good you're going to be more vigilant with your children's diets. -

You don't need to buy all or even most of your foods from a *health food store*. Many products in your local store are gluten-free and you can use coupons for those items. Infact, if you weren't a big coupon user in the past, buy a Sunday paper tomorrow and start clipping. The money you save on your entire grocery bill can be applied to the specialty items... -

Shoot, if nuts don't fill you up it MUST be psychological. Seriously, most of the foods you listed are very low in protien, so you can eat a lot without getting the "I'm full" signal. Try eating hard-boiled eggs and see if your full mechinism is working. I think you'll find it is. -
