I'm not sure what all those letters mean! I personally would call your dr/nurse and ask what tests they are running (in layman's terms). Tell her you specifically want to make sure the FULL Celiac panel is run. I would even tell her specifically what you want (the tests that nisla listed for you). Unfortunately, dr's don't always fully "get" Celiac... -

Do you know how many biopsy samples he took? He should have taken numerous ones (from different sites). I had high blood levels and a "negative" biopsy (because the damn dr. told me to go gluten-free before the biopsy) and he only took one sample. That is funny, Smunkeemom, about "Do not let Joey's kids eat anything" I feel like that is my motto-don't feed me! I can't eat it unless I made it! hmm, wolfie, I don't know what to say! poor thing. my only additional thought is that since you have only been gluten-free for 4 weeks, you are probably still healing. I would eat very basic things and still get sick....I had cut out a bunch of stuff (which further confused me about gluten) and then once I was healed, I was fine. For me, I think my intestines... -

I should have clarified on my post---that was in reference to the man I spoke with on the phone, who said that because the suppliers have told them that the par-frying takes out the gluten (supposedly!), they are still saying that it is gluten free. They are just listing the wheat/gluten because of the new labeling laws, BUT they are maintaining it is gluten... -

It gets better, but it might get worse before it gets better! I was happy and devastated at the same time to learn my diagnosis. Grew increasingly devastated as I was so overwhelmed. Then, all of a sudden, I "got" it. Now, I made a lot of mistakes, and glutened myself numerous times. Poor thing, I wish all the "experienced" people could just fast forward...

Agreed. It is one thing to risk cross contamination, but it is another thing to eat something that THEY knew contained gluten. I don't know one person here who would eat gluten willingly. It worries me that people will still continue to eat fries because they "don't have symptoms." Shudder. Aren't the majority of Celiacs "silent Celiacs" meaning... -

I just got off the phone with them. I was on hold for 10 minutes. I spoke to "Herman." He said it is their beef bouillon that contains the gluten. But, the word from their supplier is that it is par-fried out so it is still considered gluten free. I expressed my disbelief at that, saying that gluten cannot be killed at high temperatures. Killernj13----well said. I had given up eating their french fries awhile ago (after thinking for a good amount of time that it was always something else). So its not that I am sad as I haven't eaten them in awhile. However, I am very mad that they listed them as gluten free. What a shameful thing to do. They will NOT be getting my business at all anymore... -

I have found that the best gluten free breads have been made in my oven, not a bread maker. But there are many others who have made them successfully with a breadmaker. I have a regular Sunbeam stand mixer and it works great for everything I've done. My mom has a super old (and I'm sure, no where near as powerful) stand mixer and it has made me lots of...
