    We haven't been eating wheat since time began. Wheats been around for about 10,000 years, and has only been in western Europe for about 2,000 years. Oh yeah - the other thing I do is get the contessa ( or whatever brand as long as they don't put crap on the veggies) frozen stir-fry meal kits, throw away the sauce packet and use my gluten-free sauces.   3. My favorite method for fast and easy dinner is poaching/pan steaming. I take chicken or beef or fish, saute it to seal in juices in olive oil, then throw in any veggies or potatoes or spices or whatever, some broth or water then cover and walk away for twenty minutes.   8. It's official. A box from Pamela's was on my doorstep today addressed to "informal LA Celiac support group". I was so excited I had to peek inside and it is crammed with goodies!!!! My sensetivity is still adjusting to me being gluten-free, But I'm clearly more sensetive than I was. vodka, whiskey, etc used to give me a horrible head-cold like sensation, runny nose, sneezing stuffy head, and I have no idea if thats a gluten reaction or not.   18. Grr it's sweetened with Splenda. Splenda can cause issues with anyone who has IBS-like symptoms, just to warn people. The one good call my GI ever made was to tell me about that, because Splenda does cause cramping when I eat it. It's a bummer, the regular stuff makes my eyes cross when I eat it 'cause its so sweet.
