ARCHIVED Specific Carbohydrate Diet?
Rachel--24 replied to PreOptMegs's topic in Related Issues & Disorders
I can eat a whole jar in one hour by myself. I think there is something just WRONG with my eating habits. No wonder I got myself sick. Dani, I used to make the yogurt out of goats milk...it tasted good to me and I ate it plain. I dont know if I'm the best judge though because I seriously eat almost anything and like it...except sushi. I... -

Tarnalberry, thats interesting because one of my first posts on this board was a question re: citric acid.....I was reacting to everything w/ citric acid in it and had one very bad episode so I wanted to know if it could contain gluten. I was told its usually derived from corn. You think I might have clued in a bit sooner huh? Another one I had asked... -

Thanks ChelsE!! Obviously I've been doing it all wrong. No wonder why I broke my Mom's fork in half yesterday when I was cutting my pancakes! She was blaming it on my gluten-free baking...the nerve! -

On the topic of baking powder....is it necessary for baking? I'm new at baking and I stopped using the powder because I just felt like it was "bad" for some reason. Everytime I used it I felt worse so I just used baking soda instead. My stuff doesnt come out great but its edible and I'm not picky so I eat it no matter what. What purpose does the tiny bit... -

My symptoms are basically poor digestion, cant gain weight, swelling, fluid retention, headaches, fatigue, brainfog, dont feel good when I eat, cant tolerate alot of foods....this is when I'm taking my meds, vitamins and supplements but eating no corn. I have problems with oils...I'm thinking they have corn in them. If I actually EAT something with... -

Rachel--24 replied to Rachel--24's topic in Food Intolerance & Leaky Gut
Oh...and here's another one...did you guy's know that ALL baking powder (except one brand) is from corn?? So if I have corn intolerance I cant have any of the gluten-free foods because almost all have corn starch/syrup, xanthan gum, and baking powder. Bummer. I'll have to bake everything. I'm getting a breadmaker for sure now! -

Thanks for the link Tarnalberry, that helps alot. Ursula, I hope its not ALL grains but I dont seem to have any problems with rice or potatoes (is potato a lectin?) Cornbread, Why is your name Cornbread if you can't have corn? Yeah....I cant believe how much stuff corn is in. They say you usually get an intolerance to the food you eat most... -

Thanks, I dont know anything about compounding pharmacies but will call around tomorrow. If this is something I need to do long-term I'm wondering if it costs more or does insurance cover it the same? -
I think its a real possibility the Graves will get better after being gluten-free for awhile. I wish I had that chance...I finally gave in to RAI (why do they always push for this?) and I regret it now. I felt like my symptoms were because of the Graves and my meds didnt seem to be working anymore so thats why I gave in. My symptoms had nothing to do with...

Well I've been struggling for quite some time now. It doesnt matter what I eliminate I'm still sick. Its like it HAS to be something that is constantly in my system because I havent had a single symtom-free day for over 3 years now. Even when I limit myself to 2 safe foods I'm still having symptoms so basically nothing has worked. All meds or supplements...

I agree its good to be scheduled with the Endo. but it would be much BETTER if the bloodtests have been taken BEFORE she sees the Endo so that the appt. will be much more useful. Once I got diagnosed with Graves and had my CT scan and uptake test I was seeing my Endo. every 3 months for that first year and I always did bloodwork the week before my appts....

ARCHIVED Safeway Carrying Stuff
Rachel--24 replied to sneako's topic in Gluten-Free Foods, Products, Shopping & Medications
I work for Safeway and at my store we only carry one item...Bob's Red Mill all purpose flour. Its pretty sad. Some of the other Safeway stores carry Amy's, Pamelas and a few other items. I shop at Raleys and they have a decent gluten-free section and for everything else I go to Whole Foods. I was always loyal to Safeway and never shopped anywhere else but... -
ARCHIVED The Best Advice Or Info About celiac disease You Have Gotten From
Rachel--24 replied to Jnkmnky's topic in Coping with Celiac Disease
I don't even know where to begin....I've learned so much from this board. Like someone previously stated...."everyone here has something to offer". Since I got sick I can honestly say this board is one of the best things to come my way. I've never had a question go unanswered and no matter what might be going on...someone is always there to offer help, wisdom... -

ARCHIVED First Loaf Of Bread
Rachel--24 replied to Rachel--24's topic in Gluten-Free Recipes & Cooking Tips
Yeah really. The Ener-g bread I just bought last night was $4.79 and I've never seen anything under $4. I think I'm gonna get one. I'm gonna go look at them and see what kind I want. I'm all about convenience...do you think its much easier to use a breadmaker? Do the loaves come out soft? I miss soft bread. All the stuff I buy is refrigerated and... -
ARCHIVED Not Feeling Better After Going Gluten Free...help!
Rachel--24 replied to Laura--G's topic in Parents, Friends and Loved Ones of Celiacs
I'm sorry your son is having a hard time. It could be alot of anxiety he is experiencing since his diagnosis. If his tummy is still bothering him it wouldnt be a bad idea to remove dairy for awhile. He is probably lactose intolerant since he's newly diagnosed....once he heals the dairy can be added back in. He may be genuinely scared to eat because he's not... -
ARCHIVED First Loaf Of Bread
Rachel--24 replied to Rachel--24's topic in Gluten-Free Recipes & Cooking Tips
Thanks Lorka, Sounds really easy....I'm gonna start looking into the bread machines. For some reason (even though I know zip about this) I had always thought the bread makers didnt work well and that it was better to just use the oven. Apparantly I was wrong...thats cool that they have a setting for gluten-free breads too. -

OK...I'm thinking about the bread maker so if you dont mind could you post the recipe for it? Is the bread maker a good investment? Do you have good success with it? Any particular brand you reccommend? -
ARCHIVED First Loaf Of Bread
Rachel--24 replied to Rachel--24's topic in Gluten-Free Recipes & Cooking Tips
Amanda, Is it really that much better making it with the machine as oppossed to the oven? I dont know anything about this stuff. Can it still turn out good if I'm dairy and egg free? My birthday is coming so I could ask for a breadmaker but I only want one if the bread is gonna be fluffy and moist...in other words better than the Ener-G rice... -

Bummer. Amanda, I don't have a bread machine. Bummer. This isnt looking good....I guess I'll have to buy more of the ener-g rice bread. -
I've had pretty good luck with baking muffins, cookies and cakes so far. Today I thought I'd try a bread. First, I'm no Betty Crocker and I just kind of throw stuff together. I have to substitute dairy, eggs and soy also. I followed one of the recipes from the Betty H. bread book (sort-of). The bread came out totally hard on top and really sticky in the...

I think if I were in your shoes (and I may be in a similar situation someday) I would proceed with caution since the symptoms could develop over time. Its weird how these intolerances work but I dont think everyone would experience an immediate reaction from gluten...it could build up. Someone with a casein intolerance (I think Mango04??) recently posted...

Hi, I use HLC probiotic by Pharmax.....I'm not sure if its sold in stores but I get it from my doctor. I use this one because it doesnt have any extra stuff in it and its gluten and casein free and good quality....I dont trust stuff thats not refrigerated.
