  1. I'm in agreement about the potatos. Keep a food diary to try to figure out which foods bother you and yes, you can get more food intolerances after going gluten-free. The other food intolerances may have been there all along but you never noticed them because you were still eating gluten.

  3. Thanks Rusla, Mine is the clay non-flushable kind (Fresh Step). I've never been careful with it. I just pour it, scoop it, whatever. Theres always a big dusty cloud. Have you actually gotten glutened from it? Thats good news about your husband...I'm sure he'll come around. Its just a stressful time and alot to take in at once.
  4. Thanks Nikki, I'm already casein free so its not that....that was one of the first things the doc asked. He'll be putting me on an elimination diet so hopefully we'll figure some things out. I'm definately going to ask him more about the soy, amaranth, quinoa thing though.
  5. Personally, I think it would be sort of difficult to get someone to understand every ingredient I cant have...sooo I would just bring my own food. I think other people mean well and most wouldnt know that soy sauce contains wheat so unless they have time to sit and study the diet (which most dont esp. around xmas) I would think there would be much room...

  8. I'm having alot of trouble gaining weight on the diet. I'm really restricted with what I can eat so that doesnt help either.   10. I definately wouldnt try eating Oats...even if they are pure. I'm really curious about the amaranth and quinoa though. This past week has probably been the worst for me since going gluten-free.   11. For some reason I really miss cookies alot. I wasnt a big cookie eater when I COULD have them but now I want them badly. I think about fig newtons, oreos, nutter butters, pepperidge farm cookies (the chocolate mint ones) and on and on....
  12. As I mentioned in a previous post I found a new doctor knowledgeable in the area of gluten sensitivity. I visited the clinic's website and they had a special section dedicated to learning about gluten intolerance. I read something that I'm confused about regarding Amaranth, Quinoa and Teff.   15. I agree George, I just saw a doctor who believes in finding the root cause of symptoms rather than treating them with meds. He said his "pet peeve" was doctors who believe "it's all in your head" just because tests are negative or they cant perscribe a drug to "fix" the problem. He said when something shows up in a test that they can "understand" and...
  16. Bummer. Do you have to stick with that same practice? If you're not happy with any of the doctors there maybe you could find someone who is as good as he is. Maybe you can contact him and see if he knows of someone you might be happy with??

    I believe he was talking about parasites mainly. He asked me if I had been tested for parasites and I told him I had through Kaiser. He said their test consists of only 1 stool sample and ONLY checks for Ghidardia (sp?) and is totally insufficient. He also said looking at one stool sample will give you 50% chance of finding the parasite...a second sample...

    Yeah...I can relate. I was doing fine at work but the last few weeks they've been keeping me in the checkstand (Safeway) for the last 3 hours of my shift. This is suppossed to change next week but my experience with having to deal with customer after customer with perfumes and colognes has been a nightmare.     Thanks for the responses. I will definately keep everyone updated as to what goes on with my treatment. I wont be seeing him again until after my insurance change takes effect but he will have a plan laid out for me of what we'll be doing. I think his first priority is checking for infections. Unfortunately his clinic is not part of a network so my coverage...

  24. I have no trouble finding nut butters and I recently tried sunflower butter (Trader Joes). I eat Macadamia butter (sooo good), peanut butter, and almond butter. Next one to try is cashew butter. Oh yeah...I also have sesame butter but I dont like it as much as the others. I think I have to aquire a taste for it.
  25. Tiffany is right, you can't 100% rule celiac in or out with genetic testing. You can also have gluten intolerance with all the same problems of celiac but w/out villi damage. It's called non-celiac gluten sensitivity.
