ARCHIVED Favorite Soup Recipe?
Katydid replied to JustCan's topic in Gluten-Free Recipes & Cooking Tips
When making soups, stews or gravies that require flour, I always use sweet rice flour. It doesn't separate when refrigerated or frozen. For a super quick and delicious Cream of Tomatio Soup, take a jar of Ragu Old World Sauce and add equal parts of milk, heat and then, if desired, keep adding more milk and taste test until its where you want it. Stirring... -
Oh Dear! we use Log Cabin Syrup. Can anyone suggest another that is gluten free?

Hi Maggi- I was able to access the photos just fine. While the rash does look like DH there could also be a number of other reasons. Where on her body does the rash occur? While my husband's was on his knees, elbows, knuckles and buttocks, I am sure it could probably appear elsewhere. Does she have any other symptoms? Where is she on the growth chart...

ARCHIVED New Symptoms For Me
Katydid replied to sore joints's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
Unless nutritionists have improved vastly, you will most likely get better and more reliable information right here on this forum. My celiac husband was referred to a nutritionist after diagnosis and he only went once. She really didn't have a clue as to what was available in gluten free food. She basicaly said he would just have to eat meat, fish, poultry... -
This thread caught my attention because my celiac husband's mother was always a very sickly woman. Fatigue, headaches, stomach bloating and discomfort, the big D, etc. She was able to do so little that her house was always a shambles. They actually diagnosed her with diverticulitus; and while she died of a heart ailment, there is no doubt in anyone's mind...

ARCHIVED Thanksgiving With Il's
Katydid replied to moonlitemama's topic in Coping with Celiac Disease
I kind of got the giggles when I read this thread because it reminded me of going to Florida to visit my daughter and her family as we do every year for Thanksgiving. Now my daughter is very considerate of her dad's celiac; but this one Thanksgiving in paticular we weren't going to arrive until about 1:00 on Thanksgiving Day so most of the dinner was going... -
I posted this on another thread but will share again. I have a friend whose 10 year old son had a perfectly smooth bald spot right on the top of his head of otherwise very thick hair. When the dermatologist and skin speciialist couldn't help, his doctor decided it might be caused from malabsorption and ran a celiac panel..and sure enough he was positive...

ARCHIVED "flour" Tortillas...
Katydid replied to sickchick's topic in Gluten-Free Recipes & Cooking Tips
I have an older tortilla press thats called "Santa Fe Wrap Master" and its made by Salton. I don't think they make them anymore, but you might be able to find one used on ebay. Then I also have another press that made by Villaware. The only reason I bought another one is that the Villaware will make 10" tortillas where the my older one would only make... -
ARCHIVED "flour" Tortillas...
Katydid replied to sickchick's topic in Gluten-Free Recipes & Cooking Tips
I have one of those electric tortilla presses and it works realy well. There are a lot of recipes in different cookbooks for tortillas, but I'm for easy. I use Kinnikinnick Pizza crust mix and mix it according to the directions on the package but I omit the yeast. I use a greased cookie scoop to make balls of dough and deposit them on a greased cookie... -
ARCHIVED More Cheesecake Suggestions
Katydid replied to a topic in Gluten-Free Recipes & Cooking Tips
This isn't exactly a crust, but last night when I was making a cheesecake to take to a friend, I had extra filling left over.....and that stuff is just too good to waste. I looked around my kitchen and I had part of a plain white gluten free cake sitting on the counter which was leftover from strawberry shortcake; so I sliced it horizontally and cut out... -

Yes, that's what I do....and when substituting in a regular recipe, don't forget to add xanthan gum. -
ARCHIVED New To Baking gluten-free/questions About Flour
Katydid replied to LoriG's topic in Gluten-Free Recipes & Cooking Tips
You can buy Bette Hagmn's original recipe of rice flour, tapioca flour and potato starch through EnerG. but it isn't avilable in most health food stores. You need to get it directly from them. Its called Gluten Free Gourmet Blend. You can buy Bette Hagman's Featherlite mix, which is rice flour, tapioca flour, corn starch and potato flour under the... -
Prior to my husband's celiac diagnosis, I never made pies; so I had some learning to do. Now I make at lease 3 or 4 pies every month. I think my recipe is the same as yours, but this is my secret. I purchased one of those pie crust makers. It is made of flexible plastic material (similar to that of the old fashioned bowl covers) It is round, with a...

ARCHIVED Where Do I Go From Here...
Katydid replied to mama2's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
I think that's absolutely wonderful that you feel so much better now --in spite of the doctors. I have a dear friend who had a similar experience until she too decided she didn't need the doctors permission to go on the diet. (it was a GI doc and he refused her the blood tests if you can believe that) Today that former weak, frail shell of a human being... -
I have also used crushed gluten-free corn flake crumbs with sugar and cinnamon added and it realy is quite good.

ARCHIVED Gluten Free Magazine Subscription!
Katydid replied to LoveBeingATwin's topic in Introduce Yourself / Share Stuff
Living Without Magazine is great, but Gluten Free Living service is really bad. My first issue had Christmas stuff in it and I didn't receive until late March. When I contacted them to tell them there had been a mistake, they said there was no mistake, they were just that far behind. Needless to say I cancelled. -
ARCHIVED Inconsistent Reactions To Glucose
Katydid replied to Flynn's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
As to sporadic reactions to gluten - In the early stages of my husbands celiac, prior to diagnosis, he very definitely had sporadic reactions. One day he would eat pancakes with no problem and then another day they would make him horribly sick. That's why it was so very hard to pin down the cause. It took 15 years from the first symptom. As a matter... -
ARCHIVED Omgoooodness....cupcakes Out Of This World Cupcakes...
Katydid replied to kbabe1968's topic in Gluten-Free Recipes & Cooking Tips
Help - I can't find this recipe on allrecipes.com. I found some recipes, but they don't have the vanilla pudding powder mentioned in the posts. Can someone steer me in the right direction? -
Hi Splash- Part of the reason you are so sensitive to other peoples comments is because you are relatively new to this. You will find that in time this will diminish. In the meantime, just pretend, lie, or whatever it takes to back them off. Sometimes just saying "Would you knowingly eat something that you knew was going to make you sick?" is all...

ARCHIVED Visual Fatigue?
Katydid replied to holdthegluten's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
My celiac husband claims this is one of the first symptoms of being glutened. His eyes get heavy and ache and he doesn't even try to read While its always worse when glutened, he had it to some degree even when not. He mentioned it to his doctor at a regular checkup and the dr looked closer under a magnifier at them and said he had a mild exzema on his... -
ARCHIVED Homemade Flour Mixes
Katydid replied to imsohungry's topic in Gluten-Free Recipes & Cooking Tips
To answer your question, it doesn't hurt a bit to add the xanthan gum to the flour mixture. As a matter if fact, I mix all my dry igredients for bread (except yeast) in a zip lock bag about 5 or 6 at a time, so all I have to do when I'm ready to make bread is dump the bag in the mixer and add my wet ingredients. (I did this one year when we went to Florida... -
ARCHIVED Gluten Free Soups?
Katydid replied to Lissa's topic in Gluten-Free Foods, Products, Shopping & Medications
Here's a couple: Easy Cream of Tomato Soup: 1 Part Ragu 'Old World' Pasta Sauce 2 Parts Milk I usually add a tablespoon of butter for a richer taste; and when I have it on hand I stir in a tablespoon of cream; but even without, its great. Reminds you of Campbells Tomato Soup and so good with a grilled cheese sandwich. Chicken Noodle Soup... -
My husband is the celiac in our house; and, while I'm not sure you'd call it a craving, once in a while when we are in a restaurant and I am eating someting gluten, he will say..."Gosh that looks good..I wish I could eat something like that" Of course, this statement then becomes my challenge, and sometimes they turn out pretty good. I will share the...

ARCHIVED Fantastic Flavor - Bad Consistency
Katydid replied to DawnS's topic in Gluten-Free Recipes & Cooking Tips
Dawn - since you can't have rice or potato flour, you might be interested in this bread reciipe. Reminds you a lot of whole wheat, is light in texture and it is so yummy. (I have some cooling on the counter right now and can't wait until its cool enough to slice) The name of it is Sesame Bean Bread, which I didn't think sounded that great; but when... -
I had to relply when you mentioned 'pizza and beer'. This was the first trigger my husband recognized; however it took the doctors 15 more years to figure out that it was celiac. As the other posters have said, there is no doubt you have celiac and you need to go gluten free right away to protect your health YOU CAN DO IT - I KNOW YOU CAN! And if...
