  1. Sometimes, you just never find out what is was that made you ill.

    But, when it happens to me, I go back to the basics for a while until I feel better. And, then I revisit everything again.

    It may very well be that you are still healing and perhaps what you ate was not gluten related, but may have been irritating to a compromised system. Maybe too many chips on a healing gut. ;)

    If this continues, I suggest a food journal.

  2. . A lot of spices are made in China. Unfortunately some U.S. manufacturers do not check what they import from China. So I would never say with 100% conviction that a spice didnt have wheat in the U.S (or something else bad).

    A US company would be in serious violation of labeling import laws and subject to severe fines. Any product imported into the US is subject of the FDA laws. Although, I would think it unwise to purchase a product labeled in a foreign language at a foreign market. Illegal product imports can happen.

    Common sense would be a good rule to follow. ;)

    btw, try McCormicks spices, they will clearly list any forms of gluten.

    I was wondering if there was any kind of walk or any kind of awareness being promoted. I would be very interested in being part of getting one together.

    Maybe to restaurants, grocery stores, etc.....

    If you let us know what area of the country you are we can hook you up with support organizations.

  4. What about that article I saw saying that scientists won't claim gluten free on all distilled alcohol/vinegar because not all distillation processes eliminate gluten all of the time. Sorry I can't link you to it.. Maybe you've heard this or read about it?

    The distillation process is said to remove the offending gluten to a safe level for Celiac to consume. There rarely is an assurance that anything is 100% gluten free.

    Some sensitive people may react to distilled grain based alcohol and vinegars.

  5. I have just found out, from a wine labeling company no less, that red wines, some teas and coffee are de-acidified by rinsing them over and over with ....... gluten and/or milk proteins! GEEZ! No wonder I was having problems with "100% Coffee." The article went on to say tha the European Union is going to enforce that if a product uses allergens in its processing it must be on the label. Here in the USA where Cool Whip can label their casein filled product "Dairy Free" I am not holding my breath that our labeling laws will improve.

    In the mean time I am avoiding the above products, and now the itchy, cramping, painful abdominal sensations gone. I have read in other gluten free books that caffiene stimulates the frayed nerves left over from the gluten intollerance neuropathies, so they say to avoid any and all caffiene drinks. I use jiaogulan tea as a waker-upper as it opens up blood vessels aiding in the get up and go and brain-fog clearing in the AM. It also lowers blood presure!

    Found my way back down to Adam's cove. Unfortunately there was enough light this time to see the 'private property' signs, but I decided not to hold their selfishness against them. AND Fortune is with us! There's a Open Original Shared Link for sale there! "Manda, Are you willing to relocate? The housing market is down here, I'm sure they'd take a lower offer.

    After making the loop, I found the street I was looking for yesterday and started down that. After a few yards there was an enticing side street that I marched up a bit until the view opened and I saw this funky little Open Original Shared Link.

    I marched down to the spit and went a little ways out, but the sun was coming up so I slipped through the fence into Open Original Shared Link to watch the sunrise. Turned out to not be such a clever plan 'cause your staring directly into the sun, but I hung out on the beach for a bit and burned out my retinas before starting the (oh so) long walk back home,

    WOW! Now that is somewhere I could relocate. Jim used to fly into Seattle a lot and sometimes I could hop a ride. It's a wonderful place.

  7. WooooHOOOOO I'm the first post of the morning!!

    I NEVER get to be the first one :D

    Yesterday, when I went for my walk, I thought I'd walk a little farther so I went one more street section before turning downhill (ruralesque here, street sections are 1/2 mile).

    As it turns out, the streets are named a bit inconsistently (old territorial roads) and I got lost. I ended up at this beautiful little cove and walked along the edge of the water. Roosters off in the distance. The trickle of water down the hill, finish its journey to the sea. The smallest slap of waves as the last of the ocean's power dissipated against the shore.

    I'm gonna try to find it again this morning.

    I need better directions PLEASE!

    Would you mind if I asked you what test your son had?

    The gluten free diet can be really tricky in the beginning. Toasters, wooden spoons, scratched pots and pans, vitamines, meds and lotions can all hide gluten. Play doh is gluten.

    Should he have Celiac just one crumb could be very upsetting to his system.

    Some adults have improvement within days and others in several weeks.

  10. I'm totally new to all of this and am so thankful to have found a site that deals with children and celiac.

    My 21 month old son has had gastro problems since birth and one of his doctors mentioned 2 weeks ago that he may have celiac disease. We're waiting on blood test results to confirm. I've eliminated gluten from his diet (and he's doing so much better), as best I can with not really knowing what I'm doing yet...but when he goes to visit his father, he gives him things he shouldn't eat and constantly takes the kids out for fast food.

    So, I'm trying to come up with a list of foods he can feed him...my son also has a lot of other problems with feeding and food allergies...but I'm wondering if french fries from restaurants have gluten in them.

    It might be better to stay away from fast foods until you know the results of his testing. French fries can be easily made at home.
