  1. I don't think I'm "ultra-sensitive"....I think I'm "Celiac".

    The medical literature says even traces of gluten can make a Celiac sick. It doesn't say only "ultra-sensitive" Celiacs will get sick from traces of gluten.

    This is another great topic worthy of a discussion. Perhaps eatmeat4good would like to begin a new topic. :)

    Continue on....with the OP's topic. How do you handle eating out?

  2. I saw Dr Leffler one of the big guns in Boston. Gave a list of all the symptoms I'm having. Not sure what I have. Had a systemic allergic reaction to a drug I've taken 100's of times and everything makes me itch. Have been gluten-free since May which he did not think was very long. He did several blood tests including the genes and wants me to do the camera pill to find out why I am losing iron.

    Has anyone had such allergic reactions it doesn't matter what you swallow? Won't have results for a few weeks. Feeling discouraged with so many health issues and need a smarty to put the pieces of the puzzle together. Thanks in advance for any thoughts.

  3. Had a rough patch and really struggling to keep eating when my guts are killing me. 5 days of D and now slightly afraid to eat. All my safe foods are bothering my delicate system.

    My legs are crampy at night and now the extreme headaches have started up.

    I started taking Magnesium and Calcium and it's slowly helping. I am starting to think I need to head back to the doctor. Worried about anemia and mineral deficiencies. Most multiple vitamins make me sick and really hurt once they are slightly digested. So tired of the IBS label that explains nothing.

    The sublinguals cost so much that I opt out of them too often because the cost of my groceries is so high, my budget is toast.

    I know that I just need to be patient but being able to share my issues somewhere does make me feel better.

    Now to find the energy to cook something...

    I don't recall your history, so I will assume that you have had a diagnosis. Have you eliminated dairy? Dairy is absorbed on the tips of your villi and if they are gone due to Celiac...you get the same sort of symptoms like those with gluten.

    Magnesium can give you diarrhea. Go easy with that.

    Keep a food journal and document everything that gets past your mouth, from meds, lotions, lipsticks or balms and shampoo. Check your dog food, cat litter. And get a toaster for your own use only. Do you see the trend?

  4. Wait til you find out that the supermarket isn't much better and that foods labeled gluten free are not necessarily gluten free. Just yesterday I grabbed a jar of Mom's Spaghetti sauce. It had a nice cute gluten free label on it. But right under the ingredients it had the processed in a facility that also processes wheat, soy, etc. Well, I didn't think I would be sensitive to those products in the beginning. But I am.

    In the US the standard for labeling products gluten free is not in place yet. So it's totally voluntary at this time.

    If there are no gluten containing ingredients, and it's processed at a place that also processed gluten products...does not mean that it's contaminated. Although some very ultra sensitive people may find a reaction, most times it's a disclaimer.

    Production lines are washed and sanitized between products and a shared facility is never a concern for me.

    Taking baby steps in search of your own level of sensitivity will take some time and education. :)

    I always have snacks in my car or purse and generally you have to plan ahead and assume nothing. Mushroom has offered some great advise.

    I don't cheat and I'm very diligent about cc. Being sick, losing weight and "living" in the toilet is still very fresh in my memory. But, I know I've been glutened and I know I don't have the severe reactions like I did.

    I think I need to find a knowledgable doctor I can talk to.

    This place is probably the best resource you can find. I would encourage you to take a walk around. :D

    You won't find better information or support. And if you find a knowledgeable doctor, you are a fortunate one.

  6. This will be my first doc appt. since self diagnosis. I'm seeing a competent NP. My appt. is on Wednesday & I'm trying to get my list together of all the tests I need to have run. I know I need thyroid & vit. levels & such but I know you guys have mentioned specific tests in those regards such as not just TSH but X & X & X, & not just iron level but X & X & X to get true readings so I ask your help in specifying the particular tests I need to have done.

    Oh! I also have a fatty liver which showed up on a abdominal CT scan I had in late 2010. What liver panel should I have?

    As a new doctor, I would assume that he/she would order a full Metabolic Panel. And if any abnormalities would show up, then, a more specific test could be ordered.

  7. I would NEVER say to myself that it's okay for me to get cc'd to the point of 20ppm --- NEVER! That is for testing purposes of gluten free food & does not mean that we can gauge how much cc equals 20ppm.

    Squirmingitch, I hope you did not misinterpret what I said. I am as careful as most, but I also know I live an environment where gluten is everywhere. Zero gluten, although wishful, is a total improbability in the world we live in. Cross contamination is inevitable. I suspect that most of us consume far more gluten than we realize, even the best among us.

    Am I suggesting that everyone should be allowed one crumb of gluten per day. No, I don't think so. :)

  8. With these bags of flours and baking mixes accumulating in my cupboard, I'm in need of a better storage solution.

    I bought one big Rubbermaid thing (4 liters, I believe) which seems like a good solid container, but because it's tall and narrow, it's pretty hard to measure the flour -- the one-cup measure barely fits inside and then you have to reach way down. Does anyone have a favorite (inexpensive) container that is sturdy and has a lid that stays on, and a nice wide opening?

    I use Ziplock containers. They stack well, but I don't buy things in bulk or large amount. I use them for my rice, brown sugar, grits, candy, corn meal, etc. I do have a larger RubberMaid for my Bisquick or flour mix. I hate a messy pantry! :rolleyes:

  9. I've been gluten-free since I was diagnosed with Celiac in October 2010. My reactions to accidental contamination is very minimal now. Am I doing damage even if I have little to no reaction?

    Studies indicate that most people with Celiac Disease can tolerate 20 parts per million of gluten without damage. Some are more sensitive. And just because you have a mild symptoms, there is no indication that the autoimmune response will be mild. There are those among us who have no symptoms and have had severe damage.

    I don't cheat intentionally, because I feel I get enough potential cross contamination/contact to fulfill my 20ppm. :rolleyes:

  10. Hey guys....again. I was wondering whether anyone could recommend a good gluten free and yeast free bouillon cube or powder. I found some with chicken but not beef :-( I live in Chattanooga and I usually shop at earth fare or fresh market, but I am willing to buy online if I find a good organic brand.

    I buy HerbOX granular. all the time. I know it's gluten free, but not too sure about yeast free. Is there a reason why you would want a yeast free bouillon? Is yeast your concern?

  11. After being glutened and after the D is over, does your whole lower intestinal area feel very sore or bruised. Is there anything to help the pain other than time?

    Yes, drink lots of water and calm foods, like apple sauce, rice, bananas.

  12. What about parts of the animal that do get in direct contant with gluten? Or farm-raised fish that pretty much swim in gluten soup all their life? Does anybody here get unexplained reactions to those?

    As I know that the gluten molecule could not penetrate the human skin, I assume the same would be for a fish.

    If it were a danger the national organizations would be yelling DON'T EAT THE FISH, DON'T EAT THE FISH.

    But, they don't so I eat the fish. B) I'm happy. :D

  13. Who all was hit by the storm on June 29th? I didn't have power for 4 days some people are still without power or water. I was very lucky to continue to still have water, only be without for a few short days, and just got cable internet and phone back yesterday! this is a mess!

    We were not effected by the storm. But, we have suffered through many a hurricane, so I feel your pain. B) Wishing you a full and speedy recovery.

    I know i'am new, but dairy dosen't seem to bother me, are there others who, are gluten free, but can still use dairy. I have been gluten free for about 2weeks. I've never had problems with dairy, l like cheese of all kinds, and so far l have had no advers reactions. So please comment, and tell me if you've had similar good results with dairy.

    Hey Lewiss!

    After diagnosed, I went gluten free. Once I successfully quieted the gluten voice, the dairy voice made itself known...about six to eight weeks later. Both were there all along, at that time.

    I eliminated dairy for several weeks and was able to reintroduce it with success.

    No one is the same and you may have no problems. If, so great! :)

  15. I'm housing my daughter's cat for, umm...five weeks now, with two to go.

    My eyes are scratchy, blood shot and watery. Contacts are a no go.

    My question is: We have had cats for many years. But in their later years we were in less direct contact. The last of three passed a year ago. All of which were in their twenties.

    Could I be allergic to a particular cat. :unsure:

  16. I must add a funny.

    Husband comes in from walking the dog and walked past a library chest where we house lots of useful and insignificant stuff and upon which, the router sits.

    He walked by this chest and stopped. Paused. And then comes and get me. "LISA THE ROUTER IS FARTING". I asked if a tree limb hit him on his head during his walk. "No, really" and insisted that I come hear.

    Indeed there was farting and lots of it, in rapid succession.

    I look at his curious face and start cracking up. I pulled open one of the top small drawers. In that drawer, lives a fart machine, which we keep for simple minded adults (all of us) and nine year old grandchildren. Apparently, the battery was dying and it was giving it's last GASp.

    Okay....well, you had to be there. :huh: Lesson learned...Routers don't fart. Husbands know farts when they hear one, even from strange sources. And women always know the source. :lol:
