    Sorry for the side track. I have never had a child with celiac disease (as of yet). When I get glutened, I do have dry mouth and feel the need for additional water.

    But, don't put all you chips is one bag. In other words, don't be "centered" on celiac. Your young guy may have other allergies that may cause him difficulties.

    Apparently, he is not able to communicated yet.

    I would recommed an allergy test, since he is not yet verbal, and in somewhat distress. Fluids are a great help, but not tooo much. You don't want to wash away all to good stuff.

    Kim, don't look for what-if's. It will make you crazy.

    Test him for alllergies with a good reliable doctor.

  2. All French Fries start life as simple potatoes. At this point they are gluten-free. However, some manufactured ones have a coating applied after cutting, and this may contain gluten. Plain fries are still okay, but then... they are fried in oil. Pure oil is gluten-free as well, but if other foods which contain gluten are fried in the same oil then cross contamination can occur. A restaurant may fry breaded chicken or fish in the same oil. Onion rings are breaded as well.

    So, plain fries prepared in a dedicated fryer are safe. If you get the frozen ones that you heat in your own oven, they are probably gluten-free too. Any added flavor or coating could be a source of gluten.

    In any case, the actual fries themselves are gluten free; it is what they might have added or come in contact with during cooking that is a concern.

    So the short, two-word answer is: "It depends." :o

  3. I LOVE to eat Japanese Hibachi especially for the soup and salad. i love the ginger dressing.

    I just realized that this recipe is gluten free so I am excited to pass it along. sorry in advance if this is a duplicate recipe:

    Ginger Dressing:

    1/4 c chopped Onion

    1/4 c Veg Oil

    2 Tbs Rice Wine Vinegar

    1 Tbs Water

    1 Tbs Ginger (i use tubed ginger or a chunk of fresh ginger)

    1 Tbs Celery

    1 Tbs Tamari

    1 1/2 Tomatoe Paste (or ketchup)

    1 1/2 tsp Sugar

    1 tsp lemon juice

    1/2 tsp salt

    toss all in a food processor and pulse until smooth- or blend in blender until smooth. It will still have a slightly grainy/lump texture. spoon as much or little as you like in a salad bowl with salad and toss.

    It sounds wonderful. I would just like to add to make sure that your Tamari is WHEAT FREE, as not all are. I am deff gonna try this one. :D

  4. This answer has many levels, so here we go:

    When you buy frozen fries at the grocery store, you have to watch for additives such as flavorings. Orida (sp) is pretty good and they have a long list of products that are gluten free. Check our their web site.

    When you prepare them at home, potatoes fried in corn oil or others oils, will be gluten free.

    Ordering them in restaurant, will be an issue. Often they use the same fryer to cook breaded chicken, onion battered rings and anything else deep fried. That is a major..DON'T GO THERE.

    McD's states that there fries are gluten free, but there is major discord among members here, whether they are safe of not.

    Potatos are just potatos, it is the manner of preparation that is a concern.

    Fight back with that information. :D

  5. Our Veterans' Day Parade was really great this year. Our JROTC Color Guard was infront of the entire parade, which was one the greatest honors I and my other fellow Color Guard members has had. Once we got to the Courthouse, four of our cadets were choosen to do a flag holding similiar to one that we did in DC.

    It brought back memories of the stories I heard at Arlington, the reality of what our soliders went/are going through to keep our nation safe. This day is so special---to remember all Veterans, whether they be alive, in Arlington or buried in the smallest town in the United States, we owe so much to them.

    God Bless all---especially our Military and Veterans today :)

    Do you think that we could get Scott on board for this?

    We could sell it to pay for cost and donate some/all of the funds to support this forum.

  7. Yup, go for it. Although, alot here uses to liquid taco sauce instead of the packet seasoning, as it has MSG in it. Many are sensitive to that. Many if not most of Paul Newmans salsas are gluten free. Mission tortillas corn tortilla's are gluten free.

    Paul Newman has a great web-sit and you can print out their gluten free products. They are one of the great ones. :D

  8. I just got back from the Remembrance Day ceremony here in Clarington. I love it - they really know how to honour our vets in this town - a huge turnout every year - rain or shine (of course, it poured this year....). I controlled myself very well this year, as the kids and Terry were with me this time (being a Saturday, instead of a weekday. I usually ball my eyes out every year.......

    Sending huge hugs to all the vets, those who made it back and those who didn't and those who are currently serving......

    Before and after my dx, I too was very dizzy. I felt that I was not walking strait as well.

    I began taking B-12 injections and it cleared up fairly quickly. I suspect that your B-12 levels are low as mine were.

  11. It has never been a big deal for me to cook the stuffing separate and not to stuff. I always thought it might be an issue as it does not get the interior heat up enough to make it safe.....and by that time, the bird is as dry as a bone. Should I pronounce here and now, that I hate suffing, or save it for a more festive time. :P

  12. I just wrote a long response, it went away. <_< so this will be brief.

    Maltodextrin in the US is from corn, but not the same for Canada.

    Kraft is a product that will always list wheat.

    Toothpaste, Crest is always a good option.

    Colored stools: I have found it refects what you eat

    Around wheat all day: wash you hands often and don't put your hands in your mouth

    Poss Blood test: Yeah, join the club. :)

  13. It is tough to not be able to eat food that other people are serving. Unfortunately I think you found out what happens when you put being polite over your diet. I'm pretty sure it must have been the soup. Gluten eating people don't even realize how much gluten is around and one ingredient is all it would take. In the future when you are in a similar situation I'm sure you will tell them that you will get violently ill, and thank you anyway. Painful lesson learned.

    Hope you feel better and sorry you were in that type of situation. I think the hardest part of this disease is the social aspect. Sometimes other people don't want to include you because they feel ackward, sometimes they bend over backwards to accommodate you but you still don't feel comfortable eating what they want you to eat.

    It can be frustrating but at least you have had a good couple of months.

    I agree. Now that I am able to read lables and am feeling much better, I took a look around and wondered where my friends went. I found it VERY hurtful. Yes, social event are very hard and we live in a small town and entertain in our homes often. I see this wonderful food and I have to just walk away. "Friends" are afraid to cook for me, so the dinner invites have dwindled to almost none.......so I entertain in my home and cook gluten free and no one knows the difference. Unfortunatly, there are fewer friends worth my effort.

    I am sorry if this is not very uplifting. We have all climbed a mightly mountain and this too shall pass :)

    ive just been reading around and been looking at wot people have been saying and i would just like to ask

    is 'Glucose derived from wheat' ok to eat, cauz i thought the glucose was the sugar and we r allowed the sugar that comes from wheat not the proteins.

    ahhhhhhhhhhhhh. :(

    could someone please tell me if we are allowed to have glucose derived from wheat or not.

    that would be great.
