Once I removed the gluten, several weeks later I had issues with dairy. I gave it up for about a month and then tried it again, without issues. -

With your family history, a positive biopsy and positive dietary response ----that's three out of the four criteria. It appears that you have your answer. Although I understand your concern Marilyn, I tend to agree with Peter. It would make no sense to dust cheese with one of the main allergens on a serving that is declared gluten free. Many graded cheeses that you find in the grocery store have cellulose as an anti-caking ingredient. They look similar i.e. cellulose/flour. But then....stupid happens...

I would think it wise to contact Olive Garden and confirm what the manager told you. Although, good intentioned, that information may or may not be accurate. I guess you will get a variety of replies...everyone has different comfort levels. Most likely, you will have to find your level by trial and error. I am a firm believer that a good hand rinse and a run in the dishwasher is good enough. I would replace your scratched Teflon pots and pans. But I would do that gluten free or not. A private toaster is a must and I have a separate colander for my gluten free pasta. And make sure your fiancee is good about cleaning up after himself. And no smooching...
