ARCHIVED Ear Problems? Dizziness?
Claire replied to PicturePerfect's topic in Related Issues & Disorders
Are you gluten free? In addition to ENT specialist you might see a neurologist. Some dizziness can be traced to the ears - some to the brain. Cover all the bases. By all means get the gluten out. Try Bonine for the dizziness. A whole pill may not be necessary - less is better because it may make you sleepy. I don't know how old you are but MS... -
ARCHIVED I Guess I Have To Starve?
Claire replied to frustratedneicey's topic in Coping with Celiac Disease
This comment may not be appreciated. It is my belief that those who have the hardest time with the gluten-free diet - whether by emotional deprivation or financial stress - really have a basic problem in commin. All are looking to replace the so called pleasure/comfort foods of the pre Celiac days. Cakes, pies, ice cream, pizza, bread, doughnuts and on... -
My unlicenced opinion is 'no' . However people with an autoimmune disease never seem to have just one. The compromised intestinal wall admits all manner of things to the blood stream where the immune system sees 'invader'. Read up on 'mimicry' - this is how the immune system identifies something that shouldn't be there and attacks. Unfortunately the attack...

ARCHIVED What's Up?
Claire replied to Claire's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
Yes, I think so. Also think L-Glutamine would be a good way to go. About 5 grams a day. Claire Note comments t Matilda. Good for you as well. Claire -
ARCHIVED Casin Free,
Claire replied to elisabet's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
Last line here is definitely the way to go - BUT if you are going to eat cheese be sure to eat only very aged cheese - better still raw cheese (i.e. unpasteurized). Also try making yogurt with organic milk. My daughter who cannot eat dairy at all can eat the yogurt she makes this way - no problem at all. Claire -
I was making something for Thanksgiving that required bourbon. This is supposedly a no no - except for one that is 'approved - Makers Mark . See https://www.celiac.com/st_prod.html?p_prodid=271 I wrote the company and had the following reply: Hi Claire, Maker's Mark is double distilled, so it is gluten free. I hope this helps answer the question...

This excerpt from 'A History of Wheat'may interest you: THE NATURAL HISTORY OF WHEAT The Roman Empire was built on Egyptian wheat, which they called "korn". It was Einkorn, which is the ancestor of modern wheats. (In Latin, this was the earliest form of Triticum, not to be confused with what we call "corn", which is Zea.) It had two sets of chromosomes...

Certainly it's alright. A good thought. I am thinking more about those who will rely on a pill (if one becomes available) so they can eat all the goodies they miss. Some people already use Lactaid and the spinoffs to do that. A body process is being interfered with - on a regular basis. It may be harmless. It may not. AT-1001 sounds like a Lactaid type...

Just addressing your first paragraph. It is my understanding of At-1001 that it is not working against the immune system but is acting as an antagonist against Zonulin (celiacs have higher than average levels of this). Zonulin works at the tight junctions in the intestinal wall - regulating their opening and closing. Apparently in the case of celiac these...

ARCHIVED Is A Tiny Amount As Evil As A Pizza?
Claire replied to Random Guy's topic in Coping with Celiac Disease
My problem is neurological so gluten is like radioactivity - there is no way to see the damage. It is cumulative and one day you have a problem caused by damage done to your brain. How muchis too much. For me - any is too much. Claire -
ARCHIVED Casin Free,
Claire replied to elisabet's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
My daughter who is highly intolerant of dairy recently made yogurt with organic milk. She had no problem with it at all. Likewise she can eat (as can I if I chose to) cheese made with unpasteurized milk. Some of you may know this - others not. Years ago when milk was pasteurized it was heated to approx. 105 degrees. Anything above 110 degrees kills... -
ARCHIVED What To Cook For Turkey Day?
Claire replied to racergirl435's topic in Gluten-Free Recipes & Cooking Tips
Reponding to the cookie crumb crust idea. Aren't these crusts used for fillings that are not baked. If you cook the crust ahead then are you actually filling it with your pumpkin mix and recooking or do you put your filling in the crumb crust and cook both together? I am confused! I have always used this type of crust for an unbaked pie. Straighten... -
ARCHIVED Please Help Asap !
Claire replied to Judyin Philly's topic in Gluten-Free Foods, Products, Shopping & Medications
Jessica has about said it all Yeast or eggs definitely could be easily be the culprit. I would, as she has said, go back to square one but be sure to give yourself at least a week on a diet of foods that you know are safe. You need to stablize your tummy before you start tempting it to rebel. Claire -
I do not have celiac disease. I have not yet tested for non-celiac gluten sensitivity. I am a postive Type II, Delayed Food Reactions - all grains except oats and rice. I itched steadily for 10 years! Mostly this was in the evening and into the night. I used to have a friend spray me with Solarcane before I went to bed so I could sleep. I had every...

ARCHIVED Genes Can Be 'changed' By Foods
Claire replied to Claire's topic in Related Issues & Disorders
Here I am again. Hopefully we won't be considered off topic with these discussions. If so we can communicate via PM but then other miss the discussion. I can always open a new topic. I am so impressed with the research minded approach you are taking to your son's condition. I am even more impressed with some of your conclusions - specifically those related... -
ARCHIVED Results Negative, Family History, And Symptoms
Claire replied to Hall100's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
I responded to you earlier and will do so again. I do not have celiac disease. I am as yet undiagnosed for non-celiac gluten sensitivity. I am being evaluated for the cause of neurological damage that has happened related to whatever it is that I do have. I have a confirmed diagnosis of Type II, Delayed Food Reactions that includes all grains except... -

ARCHIVED Substitute For Sour Cream?
Claire replied to Claire's topic in Gluten-Free Recipes & Cooking Tips
Tofutti Cream Chesse - very good but it is soy so off limits for some. I drink soy milk without a problem and can eat a small amount of soy. I just have to limit the amount as well as how often I use it. By the way soy milk sours very well (vinegar may cause curdling). You can just let it sit out for a day or so or heat the oven to about 200 degrees,... -
ARCHIVED Substitute For Sour Cream?
Claire replied to Claire's topic in Gluten-Free Recipes & Cooking Tips
That is what I used before I went CF. Now it's a no no. Thanks. Claire -
Has anyone found anything to use instead of sour cream? It needs to be Gluten-free Casein-free and no soy Sounds impossible doesn't it? Claire

Very familiar to me. If you have read any of my posts you will know that I do not have celiac disease. No test yet for the other side of the celiac coin - gluten sensitivity. I have been diagnosed with cerebellar ataxia but that is not confirmed. Confirmation is by DNA testing and this is in the rare disease category so it will be mid January before I have...

The people who need help the most are usually the ones to resent it. No one likes the idea of having to 'give up' something. We are all quite entrenched in our presumed birth right to all good things. MS is a tough sentence and I am sure this person doesn't even want to think about having yet another disease. If you get another opportunity you...

ARCHIVED Genes Can Be 'changed' By Foods
Claire replied to Claire's topic in Related Issues & Disorders
Neurological diseases are at the least intimidating and yes also - scary! U personally believe that some people do far better than the doctor's prognosis. These are, I think, people who have a determination and will to do their very best to 'have a decent life' in spite of the issues. Sometimes it is a family member (like you) who is aggressive in the...
