  1. SMALL AMOUNT OF GLUTEN! Oops. Here I am again to groan over any indication that a small amount of gluten may slow down progress but only do "a small amount of damage". The example a neurologist gave me will be offered here yet again. A grain of gluten put into a petri dish with a drop of blood from a celiac patient will initiate an almost immediate reaction...
  2. I have Type II, Delayed Food Reactions - gluten among many. I have reactions anywhere from a couple of hours to several days. As the symptoms are not indentical for each reactive food I can tell (usually) what set it off - therefore know how long a time from exposure. Claire
  3. Hi George, This article is better than average. Even the good articles usually fail to address the devastating neurological damage that can result from celiac and genetic gluten sensitivity. Thanks for the post. Claire
  4. Sorry. I had not seen the previous post on this subject. NIH is only one of many to suffer from the massive budget cuts pending. College students, senior citizens and many research facilities will all suffer - sooner rather than later. Claire

  7. Pardon me for adding more confusion to a confusing subject but - doesn't casein also cause intestinal damage? One reason I have felt the so called ' gold standard' should not be. I have had the intestinal damage - though it may be healed somewhat now. I haven't been tested for a long while. I do not have celiac - according to genetic testing You...
  8. I think Nini has it right. Planning goes a long way. Take gluten-free dishes that are tasty enough for everyone and you will be sure to have something to eat. I went to a family Christmas Eve dinner. There was little there that I could eat but certainly enough that I didn't starve! I went to visit with family - not to eat. At home my daughter cooked...
  9. I never heard of having this condition 'from birth'. Gluten and casein are the principal instigators of the gut damage but an infant isn't getting gluten but is getting casein. There had to be a culprit - as far as I know it doesn't just happen. I have been reading and researching on this for a long time and have read anything that didn't imply that 'something...

  12. Hi Jeff, Gluten has a pronounced effect on the brain - as you already know. If you are not aware of the opioid quality of gluten then you might want to read the article below. ZOMBIE FOOD Open Original Shared Link A search on gluten and opioid (together) will turn up some interesting material - some will be quite technical. Look up opioid separately...
  13. See how different we all are! I cannot handle things mad with soy flour. I can handle soy margarine in small amounts. I can drink soy milk. We are each weird in our own way. Claire
  14. Hi neighbor! I remember seeing something about Carlisle in one of your posts. Also that you have moved. I am not familiar with Bloomfield. Where is that? I have lived in PA since 1995. Lived in Greencastle for the first five years and then moved here. I came here from New England (MA) but originally came to the US from Canada (Nova Scotia). Claire
  15. Your doctors certainly gave you some very faulty information. I have LGS - have had it for many years.I am not nor have never been hospitalized for this and I am quite able to move. There is plenty of information on this subject available - on sites that are not selling anything. Doctors know little to nothing about this. My GP admitted that it was...
  16. It is an unfortunate truth that often we have to get worse before we can get better. I have a friend whose husband fights going to a doctor because they always tell him "come back when it's worse", I had to pass out and hit my head on the bathtub before I really began to get attention. The chances are the passing out incident was related to a 'bug' that...
  17. I don't trust myself to eat bean flours. I have a great sounding recipe that calls for 2 cups of bean flour. What would you suggest for substitute? I have heard about using buckwheat but would you use that alone or would the taste be too strong? The recipe is for a Mincemeat quick bread. Ideas please. Thanks. Claire

  19. Having had this problem for a long time I have quite a lot of accumulated information - no books though. It is discussed in books that I have but not the main subject. 20. An add on to Tiffany's remark: "If you follow the gluten-free diet, strictly, you're pretty much on par, health risk wise, with everyone who doesn't have celiac disease." I would say that if you follow a gluten free diet faithfully you will probably be healthier than you have ever been and certainly healthier than most of your family, friends and co-workers...

  23. Well this thread sure generated response. Goes to show you, most of us have some of these difficult people in our lives. What great replies! If I could think of something to say I would. I think the bases got covered very well. Claire
  24. If Celiac is genetically determined then that gene came with you at birth. It is often discussed that the actual development of the disease requires a 'trigger' - illness, pregnancy, trauma. I have read of several people who first manifested the disease after having mono. Claire
  25. MarshaM - Hi and welcome. I hope all these 'discussions' haven't hopelessly confused you. Certainly you need to do what seems best to you. Genetic tests, blood tests and stool sample tests are all available and this forum has a search feature that you can use to look backwards at what has been said on a given subject. Do keep us posted.
