  1. Hi - I am inviting myself to this discussion if you don't mine.. First of all there many 'milk' available: including soymilk, several varieties of nut milk and rice milk if you can locate one that is gluten free (some use barley in processing). Casein is the milk protein - equivalent to the gluten portein of wheat. They are structurally all but identical...
  2. This is a great post. I hope many will read it. Last night Larry King Live did a session with a group of people with MS. It included a neurologist/researcher. He said he didn't see any 'cure' as such but was so hopeful because of all the new drugs that were in one trial stage or another. You are right that the emphasis is on drugs - treating the symptoms...
  3. Think of it this way; take the example of two steps forward, one step back. Ideally we are on forward march toward better health and freedom for the multiple symptoms of a disease. An accidental 'glutening' is a step backward but you certainly do not lose all that you have gained. The more forward progress you make the furtherahead you are. Logically...
  4. The brain damage that causes various neurological symptoms including ataxia, essential tremors and peripherel neuropathies - all look very much the same on MRI. The neuron degeneration - the demylyenizing of the nerve sheath is widespread through the brain with MS - more localized in cerebellar ataxia - which can be caused by celiac, non - celiac GS and...
  5. I will look into Fleishmann's when I am next at the market. I have found that I can drink soymilk without any obvious kickback but have some trouble when I eat a solid soy based producted. I made scones this week and I soured soymilk and used a soy based margerine. The product was quite good - just a wee bit crumbly. However it was an overkill on soy and...
  6. Wheat as we know it IS a genetically modified food. It is NOT what people were eating thousands of years ago. The 'staff of life' once was - but not anymore. Someone on this forum previously posted the following article which tells just how altered this food really is. Claire Open Original Shared Link
  7. You should get loads of responses to this. They will mostly agree I imagine. I don't entirely trust blood tests. Too many variables - especially if the lab work is done locally where they don't know or see celiac very often. I do believe that genetic testing or stool sample testing is more reliable. You ask: Could someone have positive blood work...
  8. Thank you. Can you use the oil in equal measure to replace a solid fat? For scones I would need to use the solid shortening. Claire
  9. Glad you liked it. Always like to get a thread going that generates some interest. This is a little on the 'heavy' side but not too much. Claire
  10. DQI and DQ3 are related to non-celiac gluten sensitivity - a genetic disorder every bit as serious as Celiac (especially related to neurological damage) If you did a genetic swab test for Celiac it would be accurate. A blood test would not be if you have been gluten-free for even a short time as the antibodies begin to decrease the minute you remove gluten...
  11. Glad to see someone else challenged by this concept! Claire
  12. Thanks for these replies. Any idea what I can use to substitute for butter where a liquid oil will not do - specifically making scones or anything else that requires 'cutting in' a solid fat? Claire
  13. Were you tested for non-Celiac gluten sensitivity? For delayed food reactions? Your symptoms sound more like a direct allergy than Celiac or non-celiac GS. The delayed food reactions would also act quite differently than what you describe. Allergy reactions are immediatel. Delayed food reactions are just that - delayed but with more serious, long term...
  14. Just an FYI - for what its' worth. For those taking either Nexium or Acifex: doctors make mistakes.. Surprise. One thing they mess up on from time to time is the 'stomach acid' issue. The symptoms of too little and too much are quite the same. My dau. was on one of these meds and getting progressively worse. I suggested to her that maybe the...
  15. Read this and think about Celiac, gluten sensitivity and other autoimmune diseases. Claire Genes can be 'changed' by foods "It's quite a strong possibility that nutrients might cause DNA changes. We think diet may have a role to play as a regulator in genes. Open Original Shared Link
  16. I am just beginning to try Gluten-free Casein-free cooking. Most fat substitutes are soy based. I seem to be able to drink soymilk (predigested) but not eat soy products without annoying though not severe reaction. As my immune system doesn't need to be over stimulated I am looking for a sub for the soy based spreads. I find that liquids don't do well as...
  17. Interested! Keep the info coming. Claire
  18. Gluten free for roughly six weeks is likely to reduce the chances of an accurate test. You probably still have antibodies but the number would already be considerably reduced. Claire
  19. I came on here in August and I am still baffled by the technical aspects of the forum. I am generally quite computer savvy - work with one all the time but I sure am confused here. Thanks for reply. Claire
  20. I keep seeing posts that are with the new posts for the day but they are not NEW. Some are a few days old. Others haven't had a post for a month or more. Why does this happen? Claire
  21. Oops. Here I am again to groan over any indication that a small amount of gluten may slow down progress but only do "a small amount of damage". The example a neurologist gave me will be offered here yet again. A grain of gluten put into a petri dish with a drop of blood from a celiac patient will initiate an almost immediate reaction that can be sustained...
  22. I feel I need to jump in here. I am responding to the short post above about casein from Elonwy. I have posted on this issue before and will do so again now because I consider this a very important issue. A Gluten-free Casein-free diet has been recommended for celiacs from way back - with good reason. The milk protein Casein and the wheat protein gluten...
  23. I certainly will try it. I like the Pecan Shortbread cookies oh too much. Claire
  24. The above post contains a URL that has been changed and the new one is not turning up the article. I found it elsewhere and am posting it below: - Claire High Prevalence of Small Intestinal Bacterial Overgrowth in Celiac Patients with Persistence of Gastrointestinal Symptoms after Gluten Withdrawal. Tursi A, Brandimarte G, Giorgetti G. Department...
  25. I was hunting for one thing and found another. Thought this might be interesting to many here on the forum. Claire HIGH PREVALENCE OF SMALL INTESTINAL BACTERIAL OVERGROWTH IN CELIAC PATIENTS WITH PERSISTENCE OF GASTROINTESTINAL SYMPTOMS AFTER GLUTEN WITHDRAWEL Celiac disease is a gluten-sensitive enteropathy with a broad spectrum of clinical manifestation...
