Personally, I think you need to respect the person's wishes and not discuss it. While having celiac disease isn't a secret, I find it a little annoying when someone "outs" me when there is no food present, there is no discussion of food, and there doesn't need to be a discussion of food. I keep a tub of Bette Hagman's gluten-free flour mix on hand (recipe is in her books). I use it as a substitute for flour in gravy all the time and it turns out beautifully. I haven't tried making one from scratch yet. I like Pamela's Luschious Chocolate Cake mix. It's moist enough I'm sure you could cut it into pieces to make a plane shape, or even bake in one of those Wilton shaped cake pans. Good luck! -

Hi Betty, Just wanted to chime in and say that yes, you can heal in 7 months. I had complete villious atrophy last August, and in mid June of this year I had only minimal blunting, which qualifies as significant improvement. -

Kellogg's RK, not gluten-free. I had some gluten-free ones around here, I think they were made by Nature's Path. I honestly found them to be rather anemic and had very little flavour. I finally made them into faux Rice Krispie treats and they weren't half bad after I added a 1/2 cup of chocolate chips!! -

If you want to keep it simple, get a Pamela's Luscious Chocolate Cake mix. It is pretty good. My DD had me make one for her birthday (she doesn't have celiac disease) because she wanted me to be able to eat it. All the kids at her party ate it, we didn't tell them there was anything "special" about it. -

Pretty much ditto what the others said. My sister (celiac disease) was so anemic when she was diagnosed she nearly needed a transfusion. I was not anemic at all, and never have been. celiac disease can present in many ways, or in my case, not at all. I am definitely not "classic". I hope your DD feels better soon.
