  7. Kentucky Fried Chicken. I'd been eating normally for 36 years with no symptoms, so the day of my biopsy I decided I'd have a gluteny dinner for the last time and start the next day. Had a heck of a time trying to decide between the chicken dinner or the Big Crunch Sandwich. I kinda wish now I'd had the Big Crunch, lol.

  16. You can nuke chocolate and butter, but you have to do it in very short increments of time and stir it a lot. If you heat/melt it too quickly, the butter will just clarify and then it's not mixed so well.   17. I think salt is one of those things you develop a taste and tolerance for over the years. My ex was on a low sodium diet a number of years ago, and I cut the added salt from all my cooking. I thought it tasted really bland at first, but got used to it, and now I rarely add salt to anything. I don't salt vegetables when I cook them, I don't salt meats etc...

  20. I had a bone density scan last summer (while I was waiting to get in for my biopsy and still eating normally) and it was normal. Interesting, since my sister was dx with celiac disease based on the fact she broke her hip last winter (at age 37) and her surgeon told her her bones were s**t.
  21. Karen, one thing I found particularily interesting about that article was the recommendation of follow up using antibody levels. My own GI told me that while antibody levels are obviously useful in diagnosis, they do not an accurate predictor of the extent of the disease. Your own results seem to show that.   23. I could get away with anything, Celiac wise. I'm not a reliable source!!! I never did like beer anyhow, terribly un-Canadian of me!!! My sister is very sensitive to gluten and a number of other food additives (sulphites, MSG) and she drinks Scotch straight up without a problem.
  24. Not Vincent, but allegedly the gluten proteins are too big and are "filtered out" for lack of a better word during the distillation process. Here in Canada, vodka coolers are considered safe for people with celiac disease, so I happily indulge in my Smirnoff Ice and my Mike's Hard Lemonade on occasion. I'm not a big drinker to start with, but the playoffs...
  25. Gluten-lite, I like that! That is probably the best way to describe my kids diet around here. I fix whatever they want for breakfast or lunch (except pancakes are always gluten-free now, they like them better anyhow), but dinner is ALWAYS gluten free cuz I am not slaving over dinner I can't eat. Besides, I know for a fact the only thing their dad knows...
