Apparently Kinnikinnik has a new "Soft Bread". I saw it on their site but have yet to procure any for myself. I have looked around for it but have not seen it for sale anywhere yet. I am in Canada. Just curious if anyone here has tried it and is it worth all the hype? They claim you can eat it UNtoasted and it's soft and supple like real bread. -
This is my first wedding invite since going gluten-free. What is the etiquette when you have a special dietary need? And, since we all know that gluten-free means gluten FREE how do you have faith the caterer really understands this? Of course, the invite had the usual check which meal you would like options but nothing to put in any restrictions etc. ...

You could also make a really nice, homemade oatmeal and then nuke it at work. Oatmeal stands up well to being reheated. And you can top it with all sorts of delicious options. -

I LOVE the Udi's gluten-free buns - both hot dog (good for "subs") and hamburger buns. YUMMY! They are, IMO, the best gluten-free buns I have found. But, as someone else said, just like everything in life, there is always going to be individual preferences and tastes at play. As for bread.....have you tried Glutino's Genius bread? You can see it here... -
Are you in Calgary? If so, I hope your family is holding up well and you suffered little damage. It's just awful what Calgarians and those in High River and other Alberta areas have gone through. Terrible, just terrible.

I ran across this today while out. Has anyone tried this? How did it measure up? I have tried the store brand (Irresistibles) gluten-free pasta and mac and cheese and it was absolutely horrid. The cake mix, on the other hand was quite good. Curious about the flour blend. But at $6 a bag I thought I would see if anyone else has used it before I purchased...

First off, I am in Canada. I am also a private daycare and I can not be sued for not taking on a child I can not guarantee will be safe. I just don't want to make that sort of promise when I don't have 100% control over what other families feed their kids in the morning before they come here, how another child eats messily or not etc. I also did not... -

I am a daycare provider. I have been providing daycare for many, many years. I know this isn't what you want to hear but daycare is not conducive to having any child with celiac disease. You should, instead, get a nanny that you can train and have your child cared for in your own, gluten-free home. Here's why...............any great daycare, even those... -

This is because, contrary to popular belief, medical doctors do not take nutrition training while in school. And if you don't understand nutrition and what is IN foods then you can't possibly have a handle on what happens with regard to that particular food once it enters the body. "Let food be thy medicine and medicine be thy food"......wise words!

Ugh....I am in Ontario too and was seriously thinking about going and getting tested. I hate our sick care system. Honestly, the province does NOTHING to support preventative medicine. All they do is play catch-up once you are already sick. I am so tired of our crappy health care. And, I agree, it would make more sense to offer the testing for no fee so celiacs...

This was my initial thought, too, when I first read the OP's post. If you are not accustomed to a boat load of over-carbing, as most celiacs don't have the luxury of doing, a Slushie can throw your blood sugar into over-drive. I know that I can't tolerate the sugar load in such drinks either. -

I really like GoGo Quinoa brand. It is a rice/quinoa combo pasta and it has a mouth feel and texture of wheat pasta. I belong to the ONFC and order it all from there as it is much cheaper than any grocery store or Walmart. -

I read a study a while back, online, about those with celiac being able to eat sourdough bread with little to no side effects. Has anyone else read this study or aware of it? Yes, you need it. I am/was a terrific wheat baker before I went gluten-free and if you understand how gluten affects flour in the baking process then you will also understand why rice flour can NOT replicate the chemical processes of wheat flour in baking - hence the need for xanthum gum. You could also use guar gum. -

That's too bad that the chef isn't really on board. Mexican is, IMO, one of the easier ethnic fares to do gluten-free. There are so many non-wheat/gluten options that are still super delicious and not a far cry from the "regular" Mexican foods we see on menus. -

I had the opposite effect. When on gluten I have always, in the 27 years I have been having my period (I am 41), has incapacitating cramps. I had to take NSAIDS all day just to function and not be puking the cramps were so bad. I went off gluten and now I don't even get cramps. It's wonderful! Sorry, I know that isn't what you wanted to hear.
