I have resigned myself to make sure and plan things that do not involve food with a close friend because she seems to prefer to never hear the words Celiac or gluten.   4. I KNOW! We have a family reunion in Sept (DH family) and most of them have never heard of Celiac much less gluten! I can't imagine how that's going to go - lol ! We even have our own cabin with FIl who gets it to an extent since the big cabin will be full of nothing but gluten. Do any of you have friends of family members that act like you can just walk into any restaurant and order something plain (first of all how boring is that?!) and not get sick from cross contamination? I know no one should have to learn the intracacies of this diet if they don't eat gluten free. But really, why can't people just get it when you tell them...
  6. I'm going to use Pamela's cookies for my crust. I'll use Gillian's crust for quiche - taking off the hard crust edge. My pumpkin bread is a quick bread so I don't need zanthum gum. Thanks to everyone who helped me figure this out!
  7. Okay - here is what the tea fare includes: gluten free sandwiches, gluten free brownie cakes, choc. covered strawberries and truffles. When I asked about scones (the most important tea food to me) the chef said he's working on it. I'll report back after I try it out.

  9. On another Celiac forum, I found out that in Cashiers, there is Cornucopias for lunch fare, and The Orchard for dinner. Both places can accomodate a gluten-free meal (not boring and plain either) IF you take a dining card and explain all food restsictions you have. My trip isn't until Sept. so I won't be posting about the experience until then.
  10. I ordered some Bry's gluten-free bread and it came today in the mail. It is vaccuum packed, not frozen. This bread is meant to be toasted but I just had to take a tiny bite of it at room temp.   11. Oh - I didn't know about KK graham crackers crumbs - thanks for the tip. Tarnalberry - yes - the recipe calls for both baking soda and baking powder so I will not get the self rising gluten-free flour mix. Thanks for telling me that!   12. Thanks! I'll try the GFP mix. It looks fairly easy even to me! I found from another site a great idea for a easy subs. graham cracker crust. Use Pamela's ready made shortbread cookies and make as usual with butter and sugar (depending on your taste).   13. Okay - I only bake about 4 times a year. Make homemade pumpkin bread from Family cookbook in the Fall and pecan pies over the winter holidays.   15. I would love OSF to serve gluten-free pasta (that I don't have to bring) but according to the corp. office, they offered it in Atlanta years ago and no one ever ordered it. Now at the Atlanta OSF, they have several gluten-free patrons a week that bring in their own pasta so I suggested they bring it back. I would even pay an upcharge for it since the lunch...

  18. I take my own gluten-free pasta to the OSF in Atlanta and never get sick but I only go when I know the head cook Ken is working.   20. I had a positive experience with one but it's pretty uncomon to find one who knows more about gluten than you do. My support group leader referred mine to me and she happend to be an ex-chef who used to teach gluten free cooking lessons at Kroger so that's why she knew all about what we could and could not have.   25. I'm pretty sure I can't do cold turkey but I think I'll try 3/4 decaf and 1/4 reg. to start and see how that goes. I know decaf has some tiny bit of caffeine but if I only drink decaf and not two cups of reg. a week that's about as good as it gets for me.
