  1. You can be gluten sensitive but have "silent" symptoms. I got tested (by Enterolab) because I was curious and I figured knowing for sure would make my resolve to stick to the diet greater. I also thought it would convince my family that perhaps they should too. But the whole family aspect didn't work out. I didn't want to go through a regular GI specialist...
  2. I'm surprised! I figured they'd all have gluten as a major ingredient. Well... if it isn't that perhaps it is the soy. Or the sugar alcohols, they can cause diarrhea and flatulence in folks who are sensitive.
  3. Yeah, I could've told you that! Low carb products use wheat gluten in enormous quantities because it is the high protein, low carb portion of wheat. I used to do a lot of low carb baking myself and wheat gluten was a staple.

  5. The genetic info is interesting and might correlate to your symptoms. For instance, the 0501 gene seems to be associated with neurological effects of gluten sensitivity. You can always google your specific genes and read up!

Anything ending in "ol" like Malitol or Sorbitol. Those produce horrible gas because the molecules aren't digestable and they go to the intestines where bacteria break it down, kind of like...

I think a gluten sensitivity increases your risk of all autoimmune diseases because hypothetically, it makes your intestines permeable and then your body reacts to stuff that shouldn't be crossing through to the blood stream.   14. My Mom had something similar happen when she was put on an antibiotic. Turns out it killed the good flora off in the bowels and allowed C. Difficile to take over. So they put her on an antibiotic to kill the C. Diff and she was ok. You might want to get that checked.

  16. Try getting a good vitamin B complex. I think it helped with my neurological issues. And a B12 that is sub-lingual (in addition).

  18. Unfortunately my gluten sensitivity probably is what caused my autoimmune arthritis, so I will probably have it forever. But it definitely is better. I've been gluten-free for almost a year.   21. Unfortunately those low carb bars are loaded with wheat gluten since it is the low-carb, high-protein part of wheat. I'd say be very strict about avoiding gluten. Who knows, maybe it'll help your diverticulosis.

  23. Most doctors don't/aren't recognizing that there is a phase of the disease before celiac. We call it gluten sensitivity. Your risk of autoimmune disease, cancers and other things are a lot higher. I suggest going to enterolab.com and reading up on it. Another source I recommend is the book "Dangerous Grains".
  24. I think a "paleo" type of diet is very healthy. Basically it is fruits, veggies, meat and fish. Sometimes nuts are used but only in moderation.   25. You really can whip up a bunch of meals very quickly. One thing I do is buy frozen chicken breasts, a bottle of really good gluten free sauce (usually curry of some sort) and frozen veggies.
