  1. That probably isn't lactose intolerance then, probably casein intolerance.
  2. I like the diet, sans the milk products. It seems like about the healthiest diet you could eat. But I'm very skeptical about the claims of curing celiac.
  3. I think it is because they make it from petroleum products, not milk. At least, that's how it always tasted to me!
  4. Probably depends if they're from the Spanish influenced parts of mexico or the purely Indian parts of Mexico. I live in a border town and I know that I'm risking glutening if I eat mexican food.
  5. Great letter! You know though you might want to explain what gluten is and where it is commonly found. You probably have some people scritching their heads going "duh... gluten?" not knowing it is part of wheat.
  6. No offense to any hispanics reading this but... I have terrible luck communicating about "wheat" with folks from South of the US border. At Jack-in-the-box I drew blank stares when I said I had a wheat allergy. One person asked, "what is wheat?". I said, "It's the stuff they make flour out of, and bread". Still got an utterly blank look. They looked...
  7. Could be the iron, I know it irritates my stomach. You can get iron from dark or blackstrap molasses. Another "acquired" taste. Also, cooking with cast iron pans will get you some more iron as well.
  8. The testing strips just show high blood glucose, not insulin levels. You could have high blood glucose because your body is producing enough, or even too much, insulin but your body isn't using it correctly (hyperinsulinima) or because your body isn't producing enough insulin (type 1 diabetes). So you've got no idea really. There's a test called A1C...

    ARCHIVED Casein

I've been casein free for about 6 months. People get confused over casein and lactose, two totally different animals. Lactose is the sugar in milk and some processes, like culturing for yogurt and some cheese, the lactose is reduced. There's also an enzyme you can take or put in it that'll help you digest it. Some celiacs, the ones with intestinal damage...
  10. You're much more likely to have a false negative than a false positive. Enterolab would probably be the best bet for you, given that you've already gone gluten-free. Go to a good health food store and look through their gluten-free products, there should be loads of stuff there, some of which you might like! Good luck! If it were me, I'd err on the...
  11. I find there's more than just wheat out there that irritates my GI tract, and when the GI tract is unhappy, the belly swells. For me, it seems that almost any grain and dairy do a number on me. If I avoid all those, my tummy gets nice a flat.
  12. I don't want to scare you but there's an autoimmune arthritis called Ankylosing Spondylitis that can become active in young folks and show up as leg pains. They're usually written off as "growing pains" by doctors. Just tuck this info away in your mind and if, later, your child continues to have a lot of joint, muscle, tendon pain, this is an avenue to...
  13. I've learned that gas and bloating are symptoms of food intolerance and should be taken very seriously. We always laughed it off in our family, I figured everyone farted all the time because it was what I grew up with. Now I realize that was a symptoms of our intolerances.
  14. There's two things in milk you can react to, Lactose and Casein. Unfortunately it appears I'm not good with the casein. Soy messes me up hugely. I had some soy chips the other day and suffered a lot for 2 days afterwards. I'm trying to figure out if it is quanitity related, I did eat far too many of them.
  15. Just as an experiment you might try eating just meat, veggies, fish, and fruit for a week. See if that fixes your problem. When I eat too many refined carbs, too much sugar or starches, I get all kidns of weird things happening like pounding heart, water retention, achy joints. I just went through a couple of weeks of eating garbage like potato chips and...
  16. Probably the last thing in the world you want to do is give up more food but you might be like me and also have dairy problems. My Enterolab.com testing showed both gluten and casein sensitivity. I felt better off gluten, but really didn't feel great until I got off the casein too. Have you thought about using enterolab? You can be tested there with...
  17. Read over your vitamin ingredients very carefully, some of them have gluten. I find that the best diet for my digestion is meat, veggies and fruit. I use coconut milk too for things. When I start eating too many grains or soy or nuts then things start to fall apart. If raw fruits and veggies are too much for you, then cook them.
  18. Heh, now that you mention it, right about the time I got my kit I couldn't go. And afterwards, I was totally freaked out by having a container of poop in my freeezer. Even worse was the next day, when I had to take it to work so I could mail it out.
  19. Just saw an episode of Mystery Diagnosis where a girl that had an enormous list of symptoms of Lyme's disease had a test and came out with a false negative. Poor thing, she got very, very sick and doctors couldn't find anything, eventually they said it was all in her head. Finally she came across another sort of doctor that used a different sort of test...
  20. Read the book "Dangerous Grains", that should motivate you.
  21. I was recently diagnosed with ankylosing spondylitis, which explains why my joints, muscles and tendons have been hurting me since I was in my 20's.
  22. My IBS continued, though not quite as painfully, until I got off the dairy products too. IBS is just another term for "We don't know what the heck is wrong with you".
  23. Well, if you're an adult you don't need your family's understanding or approval, you just gotta do what you know you gotta do. Most of us don't get the sort of understanding we'd like from our families but trudge onward regardless. :\
  24. Yeah, there's a lot of people that have NO idea what is in food. Unfortunately most of them work in restaurants.... I had to explain to someone what wheat is recently.
  25. Magnesium in high doses is a laxative. The way to take it is in small doses several times a day, not on an empty stomach. There are some time released magnesiums on the market too but you can probably only order them online.
