Do yourself a favor and read the book "Dangerous Grains". It will explain why you should take your own symptoms seriously. Sticking to the diet should be a lot easier with that knowledge. -

That is interesting, I'll have to look for those. When giving up dairy I decided stuff like casseroles was pretty much impossible, so I have been cooking more along the lines of SE asian things. Which is great, love their food! -
I use cauliflower or broccoli. Not really absorbent per se, but they're a nice base for adding sauces to. In Thai restaurants I order a side of steamed broccoli to put my Panang curry on. Yum!

This is exactly right. It is my sister's issue for sure. She's got a ton of symptoms but she just isn't interested in changing her diet or lifestyle. Apparently changing your diet is extremely intimidating for a lot of people. They'd rather face cancer or some horrible disease than learn how to eat differently. Ok, remind me not to try to serve you Pate fois gras. Actually, this reminds me of a story about my brother. He and his wife raised a turkey and they didn't quite have the necessary brutality to kill it in the usual manner (whatever that is), so they gave it choloroform. Unfortunately it tainted the meat and rendered it inedible.

I think Splenda is probably better for you than sugar is. People are killing themselves with sugar. It is estimated that something like 30% of the US is pre-diabetic and it is because the human body can't handle the sugars and carbs we're throwing at it in every increasing amounts. I think the difficulty family and friends have is one of disbelief. Either they think it is a faddish diagnosis or else they've never heard of it. I tried to clue in my family and quickly gave up. I decided best thing to do is bring my own food to gatherings. Get used to it. People can be really irritating when it comes to this. -

For me soy is also an issue. It was easier for me to change my entire diet than try to substitute around it. I found a great cookbook called "The Garden of Eating", adopted my diet to a Paleolithic (pre-agricultural) type of diet and also decided that SE Asians have great recipes that are closest to matching my needs. -

I've had them ever since I was a kid, usually on lip sometimes the gum once on the uvula. I'd always get them in the winter around Xmas. My brother too. Mom blamed it on sugar, but now I think it was because we were eating a lot more wheat products that time of the year.

Hypothyroid and hyperthyroid can have overlapping symptoms. Your heart flutters might be related to the hypothyroid, if you're hypo now. Hair falling out is another hypoT symptom. Sounds like your thyroid condition is still changing. -

I wonder if there's another food causing you issues? I'd eliminate all the usual suspects and see if that helps. Try going on a very basic meat, fruit and veggies diet for awhile then slowly add in foods. Keep a food journal and try to find the offenders. -

For me, it was the addictive nature of gluten. I'd eat some, feel kind of good for a few minutes, but have to keep eating more to keep the feeling going. It sort of "woke me up" to eat it but then I'd feel foggy and need to eat more to keep the brain fog at bay. -

I think most of the world is wheat intolerant. They're finding that eating wheat causes the tight junctions, even in non-celiacs, to open and let bad stuff out of the intestines that shouldn't be let out. Meanwhile, the world is eating more and more wheat all the time. We're headed toward a wheat-event horizon. -

Brain fog can also be caused by hypothyroid, do you have any hypothyroid symptoms? My brain fog seems to thrive on excess carbs and dairy and wheat. I keep to a basic, meat, veggies, fruit diet and I do really well. Start mucking around with too many carby foods, like rice or junk food (even non-gluten stuff) and I crash badly. -
I would bet the Fish House in Stanley Park would know how to treat you right. The chef is one who cares very much about health and caters to folks with special dietary needs. She is someone I've talked to several times on a message forum and has given me advise on how to talk to chefs about special dietary concerns. Oh wait... that is Vancouver, not Victoria...
