  1. A monkey is my absolute favorite!
  2. I found a sorghum based roux! Felt like I won a prize!! Meatball and potato stew with sweet peas on the side : )
  3. I've always wondered if this occurred. I always tell myself that's what it is when I can't find a source. I'm following to see the replies!
  4. Im not too helpful other than listing the obvious things. I'd keep cans of fruit, veggies, and beans. You can stock up different nuts or make your own trail mix and store it. You can possibly find some gluten-free crackers and protein bars that are vegan, also. Those are the things I'll go for if a storm hits the gulf.
  5. I also apologize, I thought the post was questioning the dx. Thanks for the extra info : )
  6. We're very aware of this. It was biopsy and resolution of symptoms on the diet that preempted the dx.
  7. I'm DQ2 positive with negative blood work. My dr said it was seronegative celiac.
  8. Absorbing better.. Hmm... That may be it! I haven't tried a beer yet. Which kind do you like? And sure, what's one more beer... : )
  9. I've had ciders before, without that reaction. Could it be hard liquor that I react to and not cider? Crazy stuff when your digestive tract is so picky...
  10. Lol, hello neighbor!
  11. Thanks, Fruit!! I sure hope so, too! Your story is quite frightening! I've never heard of that type of reaction before. I'll certainly be more careful!
  12. Thank you all for the replies. I've never reacted this way before, but that was when my stomach was a total mess. I guess I'll avoid it for now and see if I can tolerate it later. One more restriction...sigh! Lol
  13. Thanks!! I appreciate it!
  14. Open Original Shared Link Open Original Shared Link These are some of the articles I've read. It does test below 20ppm so it's technically gluten-free. However, I'm sure some super-sensitive people can react.
  15. This makes my heart happy!! When I looked up if fries were gluten-free or not at McDonald's, I found many sites talking about this "beef flavoring". Thanks for letting me know.
  16. Last I heard, McDonalds adds a "beef flavor" to their oil and it contains gluten.
  17. My stomach is often irritated after drinking alcohol. So I do not drink much, and not often. I noticed on 2 different occasions with rum, I was up all night with nausea and a rapid heart rate. I do not get drunk, so that wasn't it. But I was up both nights with a very anxious feeling. By morning, I'm tired and my heart rate is still a little high. Anyone...
  18. If I were more Southern, I'd be in the Gulf of Mexico : )
  19. I like Bob's Red Mill "wonderful bread mix". I bought a bread machine and find its better than the frozen stuff. It tastes close to the gluten goodness we all knew. I add flax seeds for extra fiber. Good luck on your quest!
  20. I don't use celery or paprika. When it's been cooking for a couple of hours, the beans are nice and dark. The typical Louisiana seasoning blend is usually onions, bell peppers, and celery. Sometimes I use it, sometimes I do just onion. It's a matter of preference. I use more flavors when I make white beans because they're so mild in flavor. Salt meat is amazing...
  21. Red beans are one of the easiest dishes to make, and you can control your flavor! Boil dry beans and onion. Add a good bit of garlic powder and salt. then add any other seasoning you like. Add sausage at the end of your boil and that's it! Definitely a Louisiana favorite : )
  22. Lol!!! I feel the same way! I thank God I found it before I suffered what other celiacs have suffered without the correct dx. Now on to better days : )
  23. Look at your pathology report and read what type of damage was seen, (increased IELs, villi blunting, scalloping, was the structure normal, crypt ratios, etc.) Mine was only increased IELs (Marsh 1) and negative bloodwork, still got a celiac dx. False negatives happen all the time, especially if you're catching the disease in the beginning. That's what...
  24. Open Original Shared Link Here is a link someone shared with me when I asked the same questions. I'm sorry, I don't know how to make the link active, but type it out and read it, it'll answer some of your questions. It helped me.
