ARCHIVED Accupuncture/naturopathic Celiac Treatments
CajunChic replied to C-Girl's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
I tried visiting an accupuncturist. He said he found nothing wrong with my nervous system, as that is what Accupuncture treats. I always thought it was for anything! So he sent me home apologizing and said my celiac must be under control as my nervous system was optimal. I was a bit bummed to not try it! -
ARCHIVED 7 Year Old Recently Diagnosed/ 504 Plan
CajunChic replied to SarahJ921's topic in Parents, Friends and Loved Ones of Celiacs
A 504 plan can include learning accom's. especially in a health oriented case. You want an IEP when you want time with special services. I pray you all get the best for your kiddos! -
ARCHIVED 7 Year Old Recently Diagnosed/ 504 Plan

I was only looking at the learning aspect of being qualified, if learning accom's aren't needed, then stephanieL made a great list. -
ARCHIVED 7 Year Old Recently Diagnosed/ 504 Plan
CajunChic replied to SarahJ921's topic in Parents, Friends and Loved Ones of Celiacs
We mostly look to see if his work is affected, or will be affected. I come from an extremely low SES (social economic status) school and we have tons of kids with deficits. So our process is more lenient than others I've heard of. Because he's ADHD, it helps, but that he's advanced, hurts the process. I'd ask for him to be qualified as OHI (other health... -
ARCHIVED 7 Year Old Recently Diagnosed/ 504 Plan
CajunChic replied to SarahJ921's topic in Parents, Friends and Loved Ones of Celiacs
I'm an elementary teacher and help develop plans very often. What type of accommodations are you looking for? If it were my child, with knowing how tough celiac can be, I'd ask for extended time at the least. Just for those days when he's feeling bad. Does he have ADD/ADHD tendencies? Reading or math difficulties? Did he have prior services or accommodations... -
After a glutening, everything seems to make me sick. I stick to whole, bland, single ingredient foods for a few days. My go-to-- grapes and green beans, sometimes ham. Lame, yes. But it's all I can handle when sick. I think it's totally normal to not tolerate foods you usually can when you're inflamed. I'll throw in a baked sweet potato-no toppings when it...

ARCHIVED Save $ Making Bread In Bread Maker Machine?
CajunChic replied to buckwheat's topic in Gluten-Free Recipes & Cooking Tips
I buy the mixes for machines because I haven't ventured out to mixing my own flours just yet.I find it is better because the loaves are bigger. I also like the taste and texture better from fresh baked bread. I like Bob's Red Mill wonderful bread mix and I add flax seeds to it. Definitely worth the investment! -
ARCHIVED How Do You Read The Genetic Test Results?
CajunChic replied to SMRI's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
I see! It's tough when children are involved! I'll be having my two girls tested though they show no signs of celiac. As I understand, you have to have certain pairs of alleles (those 02:01 number things) to have the gene be positive. They look at the alpha and beta subunits to find pairs. From what I've read, the beta subunits are more specific to celiac... -
ARCHIVED How Do You Read The Genetic Test Results?
CajunChic replied to SMRI's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
They are coded for which genes are positive. Then there are different combinations that put you at different risks. Looks like you're DQ2 positive? Call the lab that ran them and ask for an interpretation. I did because my dr's office had no idea what it all meant. Turned out I am homozygous DQ2 (two copies) which is an extremely high risk. I'm including... -

ARCHIVED Most Ridiculous Gluten Comment I've Heard
CajunChic replied to C-Girl's topic in Coping with Celiac Disease
When asking a pizza place that boasted about a gluten-free crust which toppings were gluten-free, the waitress said, "Gluten is bread and we OBVIOUSLY don't put bread on our pizza! If you want to be healthy we have a veggie pizza." Ummm... How much for the water, we're not hungry anymore.. -
ARCHIVED gluten-free Bbq In The Southern States
CajunChic replied to jddh's topic in Traveling with Celiac Disease
..and that south is what I call home! This gluten-free ride has been quite rough!! I've found a little lunch stand in the French market that cooks an amazing gluten-free crab cake sandwich. It's my go-to when in NOLA. Hopefully all this deep-fried, roux based culture (that I'm part of) will catch on soon! Here's to hoping, anyway. -
The What's For Dinner Tonight Chat
CajunChic replied to jess-gf's topic in Gluten-Free Recipes & Cooking Tips
It's a delicious rice dressing (meat, rice, liver, heavy seasoning) wrapped in a casing. (Like sausage) Not too sure what its made of now. Traditionally it was wrapped in the intestines of a pig... Yuck! Then it's smoked. Pure deliciousness! The Manda brand is gluten free. I haven't had trouble with sausage neither, but finding this was quite exciting... -

I agree with Irish! I live next to a sugarcane field and when it's harvest time, they come a'runnin: ( Having cats is the only thing that worked for us. I can't have one inside because of my daughter's allergy to them. But if you can put one inside, the smell of them will have the mice looking for a way out! -
ARCHIVED Glutened By Gluten-Free Tostitos?
CajunChic replied to Kias4's topic in Gluten-Free Foods, Products, Shopping & Medications
I thought gluten was getting me, all the time. I found it was corn. It didnt make sense to me because I'd have it one day and be fine. On the second day I'd be in bed with an upset stomach. I can tolerate very small amounts of corn at one time, then I have to wait at least a week before eating it again. Same with tomatoes and bellpeppers for me. Chips... -

ARCHIVED Question On Biopsy Results.
CajunChic replied to elless's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
My blood test was negative. (I've had the full celiac panel) My biopsy was just like yours, which correlates to a Marsh 1 lesion. My dr told me it was seronegative celiac. I've had the gene test (positive DQ2), felt better on the gluten-free diet, and had other reasons for biopsy results ruled out. So, He thinks I caught it at the beginning of the disease... -
