  1. cross contamination from the tortilla? sauce to marinate the beef in? filler/flavor in the beans? filler in the spices? other contamination in the kitchen? there are a number of potential sources - ditto on avoiding restaurants until healthy, and then being very clear on the need to not contaminate your food when you're willing to take the risk again...
  2. I've used Imagine's 'creamy portabello soup' and added mushrooms of my own (and thickened with sweet rice flour). works well!
  3. deep breath - I'm talking about the present. you did what you thought was best, and I didn't intend to say that you were wrong for that. it's all we can ever do. we do all feel like that sometimes - well, I know I do. and sometimes, you have to make yourself do it. and sometimes, you have to recognize your limits and not do it. (I say that with a...
  4. Whew. It does sound overwhelming. The bad news is that there's no reason for you to expect miracles in three weeks. You'll be on the recovery road for months, at least. And that's *after* you've mastered the learning curve, which one little pamphlet isn't going to do. Take a deep breath and start learning about the diet in an organized way. Keep...
  5. My husband's been great with it. He doesn't believe that anything that makes me sick is gluten - but that's a very logical stance as lots of things can make a celiac sick besides gluten! He's careful with contamination, and is happy enough to have our joint meals gluten free as long as they are edible. The main feature here is that he respects my decision...
  6. Congrats on the teacher training! I'm going to do the same thing next year (though not Bikram). A couple of thoughts come to mind: 1. If they're keeping the room as heated during the entire training as practice, electrolyte balance is going to be a problem that you'll have to be very careful about - just drinking enough water won't be enough. That can...
  7. heh I don't mind hemp bliss.
  8. did you eat tapioca before you were gluten-free? perhaps its an unknown allergy?
  9. kamut is a variety of wheat, and not safe, ditto spelt.
  10. I'd agree with what hathor said - not everyone's wisdom teeth need to come out. The fact that this guy likes to do it as a rule actually is *not* a good sign. I'd look into other opinions - and quite frankly, I'd see at least one oral surgeon on the issue; they do this sort of thing more than orthodontists. *If* it's just that the teeth are starting...
  11. You can always make apple-cinnamon muffins, using just about any recipe (and muffins hold up reasonably well to sub-ing in gluten-free flours, in my experience anyway), and then crumble them and dry them in the oven.
  12. I generally mix the cocoa powder (a heaping tablespoon or so) with a small amount of water to create a slurry (thick liquid), then add hot water or add it to a hot milk substitute, then sweeten to taste.
  13. You'll come across other 'tritical's of the world - ingredients that you have no idea what they are. Here's the thing with a gluten-free diet: if you don't *know* that it's free of gluten, don't eat it. This isn't a "I don't know that any of these ingredients have gluten, so it's ok" but a "I know that none of these ingredients have gluten, so it's ok"...
  14. Turkey meat is fine, but check for things like self-basting turkeys. If a wheat (or grain) containing ingredient is added to meat, it has to be labeled (by USDA law, not the food allergen labeling law). I generally cook an entirely gluten-free thanksgiving meal for my husband and I and the in-laws (and sometimes guests). It's always been very tasty, and...
  15. I take it, from the first statement, that it's possible that they haven't actually come in yet - in which case they could well just be breaking through, which could give you a 'toothache'. Do call the dentist, and see if you can get in ASAP (given the timing). You may need to see if you can hold off on the move until Tuesday, if this needs to happen sooner...
  16. Rather than all the chemicals in a store-mix, I use cocoa power, a sweetener (like sugar - I use agave), and milk (or a milk substitute). There are also a lot of other 'gourmet' pre-made mixes that will be nothing but cocoa powder and sugar. Some also will have powdered milk, but keep looking and reading ingredients - the good ones will only have the obvious...
  17. actually, if you were rear-ended, I would take her in. you may think that you're fine, but actually have had enough force on the spine to cause an alignment shift that causes her hip pain. if it comes up again, I would definitely take her in, and not necessarily suspect that it's gluten related unless there is an extremely tight correlation.
  18. part of the problem is that food allergy testing is: 1) unpredictable 2) unreliable 3) incomplete it won't necessary always show a result when it should, doesn't always accurately reflect your allergy status, and won't even hint at things you can't tolerate but aren't allergic two (two different physiologic processes).
  19. Common in the US? No. But that in no way means that you don't have one. It's not unheard of or impossible, and so I would encourage you to keep a food journal and try staying rice-free for a few days (or weeks), reintroducing it, recording symptoms the whole time, and repeating a few times to verify a pattern if one exists.
  20. I would encourage you to talk to your doctor about it - and not take it again. But *DO* talk to him/her about it and get tested for allergies to painkillers. Those *are* things that they may give you in an emergency situation for fever/inflammation/etc, and you need to know if you need special records that note if you have an allergy.
  21. actually, I have to agree that it is too much to expect your guests to all bring gluten free appetizers. it takes newbies a while to learn the ropes on ingredients and contamination, and you don't want to risk it on first-timers who don't have a vested interest in the problem. it's really quite a huge request for a one-time event like this. I would provide...
  22. thanks for understanding. I realized about half an hour after posting that I could have sounded *totally* snarky, when I just meant to be helpful if someone hadn't realized that bit.
  23. here's what I don't get - celiac disease doesn't do most of these things. it doesn't make it hard to eat out, it doesn't make our kids feel ostracized, it doesn't make our family bug us about holiday dinners, it doesn't make us feel like social outcasts. we do these things, our families do these things, our society does these things, and our culture does...
  24. Call the credit card company. Tell them that you want to contest a charge and they'll walk you through it.
  25. if I wasn't going to be in Maui for my birthday this year, I'd be having dinner at that restaurant again.
