ARCHIVED Gluten Free Lasagna
tarnalberry replied to VegasCeliacBuckeye's topic in Gluten-Free Recipes & Cooking Tips
I use the boil method, since I have been making vegetarian lasagna without cheese, and the cook time on that is around 30 minutes, with not necessarily enough liquid (until it's done) to cook the noodles. I cook them until they're al dente, but really all I can say is that it can vary and using a set number of minutes is not nearly as effective as just regularly... -
ARCHIVED Banana Bread With Pecans
tarnalberry replied to hayley3's topic in Gluten-Free Recipes & Cooking Tips
If you have decided that you can have oats, you can sub oat flour 1:1 for wheat flour for the whole recipe. I used to do this *before* I was gluten free because it tasted better. Of course, you may well want to grind your own flour from gluten free oats (unless those farms sell flour as well), since oats are generally contaminated and can trigger a... -
ARCHIVED Mama's Fish House In Maui
tarnalberry replied to Rivergirl's topic in Gluten-Free Restaurants
While we didn't make it to Mama's while we were there in the beginning of November, we went to Sansei twice (there's one in Kihei and one in Kapalua, not to mention two other islands), and had *fabulous* sushi. They had also dealt with gluten-free requests before, and were very good about modifications and checking on things. Also in Pa'ia was Mana Foods... -
ARCHIVED Healing Garden... Safe?
tarnalberry replied to silly celiac's topic in Gluten-Free Foods, Products, Shopping & Medications
If you have DH, you may find that it takes months for it to heal. Also, taking as much iodine out of your diet as possible, until you heal, will help as the iodine is part of the reaction that causes DH. -
ARCHIVED We Are Having A Lot Of Cc Issues
tarnalberry replied to Cath4k's topic in Gluten-Free Foods, Products, Shopping & Medications
The best bet is to call the companies. You may also want to look into other food intolerances. For instance, someone who was very sensitive to soy might react to the soy lecithin in the almond milk. Less common, but still possible, is a reaction to the carageenan. Of course, that is all on the assumption that tree nuts - a major allergen - aren't a problem... -
ARCHIVED Ski Recommendations For Gluten Free
tarnalberry replied to paulab's topic in Traveling with Celiac Disease
The two times I went to Whistler last year (it's in driving distance), I stayed at a place with a kitchen and cooked my own meals. (I even brought a couple pans. ) That worked wonderfully, though there were a few places I could find food by talking with the people (like sushi). -
ARCHIVED Thanksgiving Successes
tarnalberry replied to mftnchn's topic in Gluten-Free Recipes & Cooking Tips
The whole thing turned out well: Middle-Eastern Bean Soup Mixed Green Salad with Clementines and Pomegrante Seeds with a Raspberry Dressing Rosted Turkey Turkey Gravy Shitake Rice Stuffing Pineapple Cranberry Sauce Steamed Green Beans Roasted Beets and Chard with Pineapple Sweet Potato Fries Baked Apples Nothing was excessively new, just tweaks... -
ARCHIVED What Cracker Do You Use To Make Smores?
tarnalberry replied to Darn210's topic in Gluten-Free Foods, Products, Shopping & Medications
nature's path gluten free vanilla crackers - though not the ordinary size - work quite well, and I like the texture. -
ARCHIVED How Important Is It To Find A Doctor And How Do I Find A Good One?
tarnalberry replied to Cath4k's topic in Doctors
My doctors have entirely been respectful of my decision to remain gluten free despite inconclusive test results. Only two ever questioned it at all, and while one of those did seem skeptical, he was respectful that I had made my decision when I gave him the solid basis on which I had made my decision. Do they all agree or think it's the best course of action... -
ARCHIVED Safe Dating? Any Safe Brands?
tarnalberry replied to oceangirl's topic in Gluten-Free Foods, Products, Shopping & Medications
whole dates shouldn't be a problem. rolled dates would be the ones coated in oat flour. -
ARCHIVED How Was Your Halloween?
tarnalberry replied to dandelionmom's topic in Parents, Friends and Loved Ones of Celiacs
We had Open Original Shared Link! And Open Original Shared Link things on the fire. And made Open Original Shared Link faces. And Open Original Shared Link on a pumpkin. Because that's what you do on halloween. -
ARCHIVED Processed Gluten Free Foods
tarnalberry replied to PaulaHayden's topic in Coping with Celiac Disease
Many people have found that they have other intolerances besides just gluten, and thta includes many of the grains and legumes used to make gluten-free alternatives. You may want to try either a food diary or elimination diet of some variety to see if that is true for you. -
gluten isn't a microorganism that can be 'killed'. it is a very sturdy, large molecule which has been shown to survive temperatures upwards of 600F. that is one of the reasons why people often recommend replacing cast iron, because it is not a smooth surface that can be uniformly cleaned and high temperature cannot breakdown the molecule (not something...

ARCHIVED Trader Joe's- Unofficial Poll
tarnalberry replied to confusedks's topic in Gluten-Free Foods, Products, Shopping & Medications
while I haven't had a lot of problem with their stuff, I don't have it all that often. the good news, on that product, is that pumpkin butter is super easy to make from scratch - well, super easy from canned pumpkin, and just easy from a whole pie pumpkin, so if you still want it, you can just make your own. -
ARCHIVED Caffeine Free, Barley Free Coffee Substitute
tarnalberry replied to Joni63's topic in Gluten-Free Foods, Products, Shopping & Medications
What about an herbal tea? You can brew it much the same way. (A drip system may actual give you a weaker brew, so you could re-use the leaves/herbs a number of times.) -
ARCHIVED My Ob Put Me On A Diet!
tarnalberry replied to mommyagain's topic in Related Issues & Disorders
Since it's a delicate balance between a number of things, health wise, and you know your body far better than your doctor can, that's probably reasonable. It may be a good idea, however, to call in and leave a note for your doctor - before you start skipping appointments - and note that you will not be going to your weekly appointments with a *very brief... -
ARCHIVED My Ob Put Me On A Diet!
tarnalberry replied to mommyagain's topic in Related Issues & Disorders
recent research suggests that maternal weight gain does affect the child, primarily in the chance of having difficulty maintaining a normal body weight and in diabetes risk, later in life. how big of an impact? how clear a connection? I don't think anyone knows. but the changes that *you* undergo do affect your child too. perhaps keeping a close record... -
ARCHIVED Gluten Free/dairy Free Cheese
tarnalberry replied to Aligray's topic in Gluten-Free Foods, Products, Shopping & Medications
A solid cheese substitute - nope, never found one. There are one or two Gluten-free Casein-free cheeses that are eh... ok... after melting. But not great. Nothing that can be eaten like cheddar or mozerrella or more interesting cheeses. The vegan nut cheeses that you make yourself from raw nuts can work in creamy cheese situations, though. -
Unless you have very little business, are in an area with little competition for gluten free patrons, have a lot of gluten free people in the area, and do a lot of advertising, I think it's unlikely that you would *double* your business. But done right, it certainly provides the opportunity to increase business, particularly over time. A couple things that...

ARCHIVED Mri Question
tarnalberry replied to Cath4k's topic in Gluten-Free Foods, Products, Shopping & Medications
They will have you sign a release form that specifically talks about the shellfish allergy issue if they are using a contrast agent derived from shellfish. Not all of them have it, just some of them. Both times I've had contrast agent used, it was that kind and they were *very* clear about it and the allergy risk (and the folks there noted that not all... -
ARCHIVED Mri Question
tarnalberry replied to Cath4k's topic in Gluten-Free Foods, Products, Shopping & Medications
I believe it is gluten free, but most contrast agents for MRI have a derivative from shellfish. If yours had one, the forms they made you sign would have included a statement with an allergy warning, so you would have read it (because you do read all those forms, right?). -
If you're just lactose (the milk sugar) intolerant, you can still have milk by taking lactase enzymes. If you are casein (the milk protein) intolerant, you might be able to have goat's milk, but it depends upon your level of intolerance. Most people are intolerant to just one or two of the subsets of casein found in dairy, and while all mammals contain...

ARCHIVED Barley Has Gluten In It?
tarnalberry replied to a topic in Gluten-Free Foods, Products, Shopping & Medications
