Gluten-free, yes (assuming you stay away from the soy sauce), but besides corn sometimes being used in the carrier for the fortification (though not all sushi restaurants use fortified rice), sushi rice is seasoned, and usually has rice vinegar, sugar, and salt (and sometimes rice wine as well, but cooked). -

You should be able to see a gastro if your doc believes the referral is unrelated to celiac. It's possible to have celiac, and have other gastro problems that are not related to the condition. The flu shot is generally safe for celiacs (though not if you have an egg allergy) - vaccine debate aside, but "stomach flus" are usually not flus, in the first place. (They're generally food poisoning of some variety.) -

While I found dairy-free harder than gluten-free, my brother-in-law gave me a new perspective: he did a short trial and thinks dairy free would be easier as he's used to it from having a bunch of vegan friends. It's a matter of what you're used to, which means you can adapt to it. It may take some time, but you can do it! -
Based on what you write, I'm suspicious about their implementation of the labeling laws. After looking it up again, lactic acid starter culture is a bacterial culture, that is casein free on it's own, but it can be initially cultured on a milk substrate. So, in theory, it could contain casein if not thoroughly processed, but might not. I'd think the law...

Every gnocci recipe and package I've seen has flour. Just because they're called "potato dumplings" doesn't mean they don't have other things in them. I *know* you're trying - you're demonstrating that. Kudos if you found one of the few minestrone's that doesn't have pasta! You had said you wouldn't eat things without *knowing* they were gluten free, but you guessed? It's not going to work well to run your trial that way. If I'm cooking a whole chicken/turkey, I *always* use a probe thermometer - one of the ones you can leave in and is attached to a readout outside of the oven. I think it varies quite a lot by region; I knew more people who did it in California than here in Washington, though there's plenty here too. I know far more people here that hike and ski.

That definitely does happen with some viruses. Make sure he stays well hydrated, and (as tomorrow is Friday), I'd at least call the doc and leave word. If it's not resolved by Tuesday, he should absolutely call the doctor back about it. It's tricky with the long holiday season, but if he stays hydrated and fed, he'll likely be alright.
