  1. I like rice-based stuffing. (Not rice bread, rice. :-) )
  2. My condolences to you and your family. Losing a loved one is hard, all the more so when it's sudden and unexpected.
  3. I called on the pumpkin latte and the nog latte a few weeks ago. The former is gluten-free and can be made CF as well. The later is only gluten-free.
  4. I'd like to point out that, of the message boards I've been on, even though this one gets some heated debates sometimes, we seem to have a fairly even keel group. There's at least two message boards I've left, because I just got tired of a fairly aggressive woman calling me all sorts of names, repeatedly. And while I'll put up with a fair amount, it was...
  5. Is there something else that is a common factor? A pan, a cooking utensile, something in the kitchen, etc? I would follow up with an allergist - and if the one you see isn't helping, hire a new one. In the mean time, I hate to say it, but you may find it necessary to take antihistamines to help just get food in you. Yes, it's "masking" some symptoms,...
  6. While I am not in the "soy is bad for everyone" camp, I think it's wise not to overdo it. I enjoy Almond Breeze as a second, and rice milk from Trader Joe's as a third, but all of the milk alternatives I've found besides soy have very little protein, which can be a problem for me.
  7. Actually, there's a lactose-intolerance breath test that doesn't require much time at all.
  8. What part of Seattle? The city proper? (If so, then U district, downtown?) East side? South? North?
  9. I definitely agree with that one! (Though, now that I moved somewhere where there isn't enough light to do this for a number of months out of the year, I can't 'practice what I preach' year round. :-( ) Sunlight, without sunblock, for a short time every day is good for many reasons, and D is just one of them. It's more problematic in winter, in the northern...
  10. Yes, butter has casein in it. Butter is MOSTLY milkfat, but does have some of the protein still in it. In theory, perfectly made ghee will not have any casein in it, because it's had all the solids (proteins) removed.
  11. I find that, if it's a lactose problem (and almost anyone will experience lactose intolerance symptoms if they eat too much milk at a time, because it's a dosage thing), I get gas, amongst other things. Casein, however, gives me constipation - instant hemmhroids, pretty much. (Note, here I mean constipation in *hard stools* not necessarily infrequent.)
  12. tacos (hot ones - like with turkey, or cold ones - with canned tuna/avocados), burriots, rolled w/ lunch meat
  13. I eat healthy and have no known vitamin deficiencies, but I do take a multi, since it's not only *what* you eat, but how much. I'm a small person, I don't eat 2000 calories a day, and even eating healthy, without vitamins, I've tracked everything I eat and don't get the full amount of the vitamins I should. In addition, I supplement with calcium/magnesium...
  14. Curry Butternut Soup Ingredients ----------- 2 lbs cubed butternut squash (Trader Joe's sells precut bags of this) 1 box vegetable broth 1 cup milk/milk substitute (optional) 1 tsp salt 1 tsp curry powder pinch sage pinch cumin Directions ---------- 1. Simmer the butternut squash in the broth for 30 minutes. 2. Take off heat, combine all...
  15. Spicy Shrimp Noodle Soup Serves 6-8 Ingredients ----------- 1 lb frozen, cooked shrimp 2 medium carrots 2 heads baby bok choy 2 red bell pepper 1 8 oz package of rice stick noodles 3 boullion cubes 12 cups water 4 tbsp soy sauce 1 tbsp chili sauce 1 tsp chili oil Directions ---------- 0. Combine the water and boullion in a large pot and...
  16. For the pumpkin bread, you can really get away with a lot because the pumpkin itself has a fairly strong flavor, there's a fair amount of sugar, and there's plenty of spices. I like using some soy flour in mine (no more than 1/5 of the flour), and also like using nut flours and bean flours for those sorts of heartier breads. Make sure at least half of the...
  17. For me (and everyone will differ on this one), I use the following products either to prevent a cold or help treat it: * hot, steamy showers (I start these early, to help keep mucus loose, and flowing so I don't get a lung infection or sinus infection) * Mucinex (extended release guifenessin - same reason as above) * Advil or Aleve (for aches and pains...
  18. "A supplement" may or may not have everything he needs - the one the ortho told me to take when I broke my leg certainly didn't. (Most calcium supplements don't have enough magnesium (if any), which is something celiacs, more so than non-celiacs, need for bone formation.)
  19. If he hasn't been on the diet very long, he may be low in calcium/vit D/magnesium/zinc, and/or he may be having trouble absorbing those nutrients. Is he on a good supplement to help him get calcium and all the other associated nutrients needed for bone growth?
  20. I didn't have significant symptoms - certainly nothing that would originally have had me thinking celiac. A bit of bloating, and some gaseous pains. Nothing really that big - could have been lactose intolerance symptoms. Once I went gluten-free, however, the symptoms were easier to identify if I had been glutened. So, just because you don't currently...
  21. It's much the same issue, albeit for different biochemical reasons, as a wheat allergy versus a wheat intolerance (which may be different from celiac itself). An allergy is an immune response mediated by the IgE antibodies, an intolerance is mediated by the IgG (primarily) antibodies. That holds true for all allergies/intolerances. Celiac disease specifically...
  22. You make the assumptions that: 1) celiac diagnosis is clear cut, 2) accurate celiac diagnosis is readily available, and 3) celiacs all suffer debilitating symptoms. The research - even on biopsy proven celiacs disease, shows those assumptions to be false, noting that doctor information on celiac disease is severely lacking, accurate testing of at-risk groups...
  23. I have seen grocery store rotisserie chickens that both have gluten and don't have gluten. You must read EVERY label.
  24. Only food that I can't be sure is gluten-free. What can I be POSITIVE is gluten-free? Whole, fresh fruits and vegetables. Whole, unprocessed beans and nuts (that would mean raw on the nuts). Whole, fresh, unprocessed meat (that really really really means unprocessed).
