When I last did it with Pamela's cookies, I used it with a pie I baked. It didn't burn or anything. Same thing when I use crumbs from pumpkin bread for a pumpkin pie crust - add enough liquid for holding it together and it won't burn. -

They have a honey-nut (but there are no nuts in it at all) that's sweet. They also have an apple cinnamon, but I'm not a huge fan of that one. I do like the seaweed tamari one. :-) They have a lot of other quite tasty flavors. (The unsalted plain are a bit boring, but the rest aren't bad.) -

McCanns says that they don't grow other crops, but they can get contamination from the transportation and millling facilities. Besides that, as has been noted, the main protein that makes oats what they are, avenin, causes a reaction in a small number of celiacs. -

yogurt is not fermented, it's cultured. fermentation does not change the protein enough to render it harmless; yogurt is filled with casein. (I absolutely react, and any allergy doctor who's treating someone for a true casein allergy would absolutely make them avoid yogurt.) -

I love sweet potatoes, but I HATE all varieties of "candied yams". (Ugh! Definitely make it from scratch - so much better! 1 lb cranberries, 1/2 to 1 1/2 cup sugar (depending on your tastes), and liquid. I've used orange juice, water, and pomegranate juice. This year, apple juice and some diced, peeled apples. It simmers for about an hour (the berries all pop and it thickens), but it's so much better than canned! -

What do you need the additional testing for? You KNOW that these foods give you a problem - you've run that test on yourself many times. Regardless of what the doctors say, I would encourage you to listen to the things your body is telling you. -

If you could find uncontaminated oats (which is next to impossible - one manufacturer may be doing it in the near future, and even McCann's says they have contamination potential in the milling and transporting), then even still 10-20% of celiacs (not necessarily the most sensitve, just a subset) would still get intestinal damage from... -

This is one of the reasons that it's nice to get to know the butcher at the grocery store you frequent, or if they don't have an active butcher, find a grocery store that does. I've never had a problem with lumpy gravy, it's just that I may not know how much juice I got out of the turkey, or how thick I'm really wanting the gravy to be that night, so I add the cornstarch slowly, rather than use a pre-determined ratio. That's the reason for adding slowly - to see how thick it's getting and stop before you add too much cornstarch... -

On a casein free diet, no products derived from milk are allowed. Because the sugar content has been consumed by bacteria, yogurt has a HIGHER concentration of casein than liquid milk. You might consider soy yogurt. -

Yep, oil will work for most non-baking recipes, and for some of those as well. In a pot like that, it'll be just fine. And, as jnkymnky suggests, go craxy with the flavored oils! :-) In stews/soups/etc, it's a great addition. -

Good catch - the slurry is cold water and cornstarch - basically, it gives you a place to disperse the cornstarch (or sweet rice flour or whatever else you use) before the starch molecules start absorbing water and thickening. I usually have a drinking glass half full of water, and stir in about four or five tablespoons of cornstartch until that's smooth... -
use pubmed (www.pubmed.com) and you'll have access to abstracts and some full text articles from all the common peer-revied medical journals. it'll take plenty of searching, but there's plenty in there. google will also find you some good sites, though it'll take a bit of sifting. (I'm afraid I don't have the good sites I've already found bookmarked.)

It probably depends on the butcher - so ask the one you shop with. I would imagine that they're not going to put organ meat in there without labeling it, but I could be wrong on that. Do read the package labels, however, as I have found ground beef in the butchers section that was labeled something like "best ground beef" or some other modifier on the ground... -

the proportions of the casein molecule subtypes are vastly different in goats milk and cows milk. if you have a minor casein intolerance to cows milk, you may do just fine with goats milk, since the primary subtypes of casein are reversed in the two. -

Pure vinegars that don't have anything added to them are gluten free, even if derived from wheat, because of the distillation process. Heinz white vinegar is derived from corn anyway, and rice vinegar is derived from rice. Champagne vinegar, wine vinegar, and balsamic vinegar are all derived from grapes (but check labeling for added ingredients). -
