While I am not in the "soy is bad for everyone" camp, I think it's wise not to overdo it. I enjoy Almond Breeze as a second, and rice milk from Trader Joe's as a third, but all of the milk alternatives I've found besides soy have very little protein, which can be a problem for me. -

I definitely agree with that one! (Though, now that I moved somewhere where there isn't enough light to do this for a number of months out of the year, I can't 'practice what I preach' year round. :-( ) Sunlight, without sunblock, for a short time every day is good for many reasons, and D is just one of them. Yes, butter has casein in it. Butter is MOSTLY milkfat, but does have some of the protein still in it. In theory, perfectly made ghee will not have any casein in it, because it's had all the solids (proteins) removed. -

I find that, if it's a lactose problem (and almost anyone will experience lactose intolerance symptoms if they eat too much milk at a time, because it's a dosage thing), I get gas, amongst other things. Casein, however, gives me constipation - instant hemmhroids, pretty much. (Note, here I mean constipation in *hard stools* not necessarily infrequent.) -

I eat healthy and have no known vitamin deficiencies, but I do take a multi, since it's not only *what* you eat, but how much. I'm a small person, I don't eat 2000 calories a day, and even eating healthy, without vitamins, I've tracked everything I eat and don't get the full amount of the vitamins I should. "A supplement" may or may not have everything he needs - the one the ortho told me to take when I broke my leg certainly didn't. (Most calcium supplements don't have enough magnesium (if any), which is something celiacs, more so than non-celiacs, need for bone formation.)

If he hasn't been on the diet very long, he may be low in calcium/vit D/magnesium/zinc, and/or he may be having trouble absorbing those nutrients. Is he on a good supplement to help him get calcium and all the other associated nutrients needed for bone growth?

It's much the same issue, albeit for different biochemical reasons, as a wheat allergy versus a wheat intolerance (which may be different from celiac itself). An allergy is an immune response mediated by the IgE antibodies, an intolerance is mediated by the IgG (primarily) antibodies. That holds true for all allergies/intolerances. Only food that I can't be sure is gluten-free. What can I be POSITIVE is gluten-free? Whole, fresh fruits and vegetables. Whole, unprocessed beans and nuts (that would mean raw on the nuts). Whole, fresh, unprocessed meat (that really really really means unprocessed).
