  1. Your doctor is making a dangerous assumption - that because something is safe somewhere, it's the same, and also safe, somewhere else. Wheat starch is not the same everywhere.     just echo'ing nevadadan's comments: the two genes tested for (for celiac disease by major labs) are the only two genes *currently identified* as contributing to celiac disease. those two genes do not cover ALL cases, so it can't absolutely rule it out.
  3. I like pancakes made with amaranth flour. (No special recipe, just sub-ing amaranth flour.)
  4. Corn starch is an excellent thickener for gravies, as is sweet rice flour. Just stir up the starch in cold water before adding it to the simmering turkey juice, and then combine and bring back to a simmer for 1 minute.
  5. Celiac disease is biochemically a different type of process than an allergy. While I won't debate the validity of NAET for typical (IgE) allergies, it will not change the expression of your genes.
  6. The dietary test (trying the diet) is a valid test in and of itself. It's your choice on the biopsy, but there's no point in just reducing the amount of gluten - it must be entirely eliminated.

  8. Interesting. I do not see that sort of price difference at the stores I usually shop at. I wonder how much it varies by location... There is definitely an element of the "captive audience", but we DO have a choice - these flours are not mandatory for us. We don't have to have baked goods, and we don't have to use rice flour if we choose to make them...
  9. It's not just the commodity of growing, it's the commodity of milling and the competition for the resources in the processing. You can, also, get a mill yourself (small, counter-top units are available) and buy whole rice (and other grains) and grind it yourself. I agree there is some of the specialty marketing stuff, though I don't find the rice flours...

    Unless it was something really wacky, the "secret sauce", isn't a sauce, and isn't a secret. It's a combination of salt, sugar, rice vinegar, and rice wine in some recipes. That's it.   12. Apparently, on the beer, it was a secondary fermentation problem with the beer. They're moving to a new plant, at the moment, and hope to be back in production by the end of the year. I don't get ticked off by that, probably mostly because it rarely happens, and because it's just me and my husband. He's usually pretty good about not doing that, anyway...

  18. I don't have kids, but have used protein powders for smoothies myself. I like both MLO's Rice Protein Powder and Peaceful Planet's Ancient Harvest protein powder. (I can't have dairy, and I prefer to avoid soy when possible.)
  19. The thing is, you say your 'symptoms' resolved in two months being on the diet. But did all the internal imbalances correct themselves fully in that time, or was the *total* recovery (regardless of outward symptoms) longer? Studies suggest that it really takes longer than that, and even if it is only two months, if you cheat every three months, your body...

  21. Getting tested is a good idea. Starting with the blood tests is the right way to go; the standard panel is anti-gliandin IgA, anti-gliandin IgG, total IgA, tTg (tissue transglutimerase), and EMA (endomyosial antibodies). Your doctor can look them up if need be. ;-) Do not go off gluten before the testing!
