ARCHIVED Proper Storage Of Flour
tarnalberry replied to Kenster61's topic in Gluten-Free Recipes & Cooking Tips
lol! then do NOT buy organic lettuce! it tends to have bugs - live ones. I'd go into details, but it might scare you away from the computer... ;-) -
ARCHIVED Proper Storage Of Flour
tarnalberry replied to Kenster61's topic in Gluten-Free Recipes & Cooking Tips
Actually, you can't keep them out! Grain products are allowed, by law, to have a certain amount of bugs in it - though generally not of the live variety. ;-) So, under the proper conditions, the eggs in the grain as you buy it will hatch. Whether or not this will happen will vary batch to batch and with storage conditions. While the suggestion to keep... -
ARCHIVED Marriage Trouble And Celiac
tarnalberry replied to Merika's topic in Parents, Friends and Loved Ones of Celiacs
Thanks. It's under control at the moment, but it's not really the sort of thing you can cure, so it's a matter of maintenance. Interestingly enough, the gluten-free diet may actually be helping, in addition to all the other stuff I've done for it. Dealing with the psychological ramifications is the hardest part - any sort of significant problem that affects... -
ARCHIVED Skinny Guy Losing Weight On Gf Diet
tarnalberry replied to steve-o's topic in Related Issues & Disorders
I wasn't sure about the portions, but it's good you're keeping them large! I would encourage you not to rely too heavily on bread/pasta replacements to get plenty of carbs if you have the time to get them elsewhere as well. they're a good thing to include if you're working on your weight, but you want to be careful about insulin issues as well. adding... -
ARCHIVED Afraid I Won't Be A Mommy
tarnalberry replied to gabrielle's topic in Related Issues & Disorders
lol! I'm on the other side of things - 26 and hearing people start asking the "when are you going to have kids" question, and *I'm* telling them that I have plenty of time. ;-) Not that I'm saying *you* should (or shouldn't) wait... Everyone's got to make their own choices. I was originally thinking I should have kids earlier (my mother wasn't supposed... -
ARCHIVED Need Help With Acronym On Board
tarnalberry replied to mytummyhurts's topic in Board/Forum Technical Help
I use the "humble" version, so if I feel inclined to modify it to "IMnotsoHO", I can. :-P -
ARCHIVED Skinny Guy Losing Weight On Gf Diet
tarnalberry replied to steve-o's topic in Related Issues & Disorders
lol! it looks like you're on a diet, unless those are really big servings! you're definitely not getting enough calories, unless you're eating a whole canister of those planters nuts. ;-) can you sneak in at least one more snack (~200 calories) between each meal? an apple with peanut butter is around 250 (if you don't use oodles of peanut butter), and... -
ARCHIVED Soap And Shampoo....
tarnalberry replied to a topic in Gluten-Free Foods, Products, Shopping & Medications
usually, in shampoos and conditioners (and other cosmetics) it will be listed either as something with the word 'wheat' or 'oat', or something with the world 'triticum' (for wheat) or 'avenin' for oats. -

tarnalberry replied to steve-o's topic in Related Issues & Disorders
Yep, you need calories. Which means you need calorie dense foods. and it doesn't get any denser than fat. Eggs are a good choice, but can fill you quickly, and keep you filled, becaue they've got good quality fat and protein, so just be aware to have enough. Coconut milk, avocado, nuts and seeds are good way to get more calories in you in a sneaky way... -
ARCHIVED Summer Salad Ingredients
tarnalberry replied to pixiegirl's topic in Gluten-Free Foods, Products, Shopping & Medications
egg beaters are gluten-free, and the egg whites that are JUST egg whites (forget the name) are also gluten-free. -
ARCHIVED Marriage Trouble And Celiac
tarnalberry replied to Merika's topic in Parents, Friends and Loved Ones of Celiacs
good luck, merika. it can be hard work, but we do what we have to do. the medical condition that sent me to a therapist in the first place was one that affected our relationship (it make sex painful, so the effect on the relationship comes about in a different, but not necessarily less profound, manner), and we're still working past it. it can be tough... -
bean, I would suggest making your own. I make some with hemp seeds, walnuts, cranberries, and lemon juice that are decent on protein (because of the seeds). I've also made some in the past with rice protein powder in them to bump that up. Taking out the dairy along with the wheat makes it tough!

ARCHIVED Vegan (soy Free) Mac & Cheese
tarnalberry replied to Kasey'sMom's topic in Gluten-Free Recipes & Cooking Tips
I'm not sure exactly the comparison, but you might check out a raw foods cookbook. There are "cheese-like" substitutes made with nuts (no soy/dairy) that might work. I don't know that they'd cook well, and you might want to serve it over a "raw pasta" (thinnly sliced raw zucchini, or the like), but it might be an option. -
Yep, I have to say it, but I think that with soy and gluten restrictions, you may want to reconsider going completely vegan. I respect the choice, and am only suggesting you look at it anew, with this new data you have to work with. Even if you only include milk and eggs (lacto-ovo vegetarian), you will find it much easier to get the balance of protein...

ARCHIVED Marriage Trouble And Celiac
tarnalberry replied to Merika's topic in Parents, Friends and Loved Ones of Celiacs
There's lot of stuff for me to address here, so I'll do it piece by piece so I don't forget anything... Do you (you and your husband) realize how many assumptions and expectations go into making those statments? Here's *some* of them: the expectation of what *not* being sick would be like the expectation of what places (and how many) you would go... -
ARCHIVED Adventures In Gluten/dairy/egg-free Cooking
tarnalberry replied to Emme999's topic in Gluten-Free Recipes & Cooking Tips
lol... I eat flax crackers plenty, and I guess I've just eaten plenty of flax recently enough... ;-) It definitely has a bit of that effect for me, but not a huge one, so it's definitely something your body will get used to, but I just don't even think about it any more. (my lunch today was flax crackers, probably the equivalent of 1/3 cup flax seeds..... -
ARCHIVED Gravy & Stuffing
tarnalberry replied to anniej55's topic in Gluten-Free Recipes & Cooking Tips
I have never - even before going gluten-free - made gravy with flour. I've always used cornstarch. Just take the juice from the turkey, put it in a pot, and bring it to a simmer. In a separate bowl (I usually use a glass, really), I combine cornstarch with water, and then add the cornstarch to the juice, a bit at a time, letting it come back to a simmer... -
Just a reminder that just because something is a plant extract - even from food - doesn't mean it's safe. Parts of rhubarb can be poisonous, while some flowers are edible some are poisonous, aspirin and anti-malarial medications are essentially plant extracts, etc. This one may be safe, but it's not a safe analogy to say that because it comes from food...

ARCHIVED Adventures In Gluten/dairy/egg-free Cooking
tarnalberry replied to Emme999's topic in Gluten-Free Recipes & Cooking Tips
I'm pretty sure that, in the banana bread recipe I posted in that big list of recipes, you could substitute the eggs with some additional ground flax meal (a known egg replacement). I think something like an extra two tablespoons should suffice, but you may want to soak it in three or four tablespoons of water for a while before using it. (That would be... -
ARCHIVED Having A Hard Time Coping
tarnalberry replied to Diosa's topic in Coping with Celiac Disease
You can get used to a new way of eating (the way you're eating now was once new to you), but it can be tough - mentally in particular. But with so many food intolerances, there isn't a big choice. Looking for some of the old favorites is fine (it looks like corn tortillas, for instance, should still be fine for you), and minor substitutions for some things... -
Is the food that you are eating energy dense enough? Basically, are you filling up on rice cakes or nuts? :-) Have your doctors had any suggestions why you're not able to gain (like thyroid issues...)?

ARCHIVED Ingredient In Diet Sodas, Aspartame, Causes Cancer
tarnalberry replied to a topic in Introduce Yourself / Share Stuff
To me, IF aspartame doesn't bother you, I probably wouldn't worry about it. I'm not a fan of artificial sweeteners, but for some people, it's a worthwhile tradeoff. -
the ones I listed are CF as well. (I'm also Gluten-free Casein-free - i hate the CF part more than the gluten-free part)

ARCHIVED Ingredient In Diet Sodas, Aspartame, Causes Cancer
tarnalberry replied to a topic in Introduce Yourself / Share Stuff
I believe the studies that found an association (and not exactly a strong one at that) were using very high dosages. That's usually what happens with these sorts of rumors. *Anything* can cause problems in the wrong dosage. Look at the sunlight issue - too little means not enough vit D with means a host of health problems, possibly including increases...
