All first degree relatives should be tested, regardless of symptoms, in my opinion. There is NO reason not to test her. A blood test itself isn't going to change anything - the results might make her healthier and happier, however. If you eat plenty of fruits and vegetables, you really don't need all that much in the way of whole grains - you can get plenty of healthy complex carbs from that produce. But there is a wide variety of gluten-free grains that you can have, though some may be harder to find that others. Some that I have around the house: quinoa, millet, buckwheat, rice... -

You can make your own beef jerky if you like. There are a couple gluten-free brands, Tillamook has a few varieties, and another whose name escapes me at the moment. -
I often take: Lara Bars Clif Bars (the new ones that are Gluten-free Casein-free) Organic Food Bars with me when I'm on a trip. They are an aquired taste, and some people never like them.

If you know you're not going to be able to get a biopsy from your doctor, try the diet. If you think you might, then find a way to get one. (And don't forget that the doctor is providing you - his customer - with a service. You have every right to make certain demands. -
If I don't make sure to balance my carbs with fat and protein at *every* meal, yeah, I can feel that way. And during ... ahem... "certain times of the month"... my hormones make me constantly hungry (lasts about five to seven days).

1. As you already noticed, lactose can be a problem until the damage to the villi is healed. You may certainly have one of the other common allergies (tree nuts, peanuts, milk, wheat (you could have an allergy AND an intolerance, but you'd be avoiding it anyway) eggs, fish, shellfish, and soy. While it seems that a number of us do have other food intolerances...

It's true that it is possible to test negative on a blood panel and still have gluten intolerance. There is some evidence that there is a variety of gluten intolerance which causes various symptoms but does not cause the same immune response that true celiac disease causes. (Hence, it may be that celiac disease is one specific subset of gluten intolerance... -

As for a dehydrator, I did a fair amount of research into it, and though it's expensive, I decided to go with an Excalibur. You can check out their dehydrators at their Open Original Shared Link. Even if you are celiac, and are hence unable to be a part of the military, there are other ways you can serve the military in a civilian position. I'm sure the HR arm of the military would be willing to help you investigate those possibilities. And, if that fails, there are always lots of companies who do work for the military. ;-) -
I think the correlation between the Gluten-free Casein-free diet and improvements in the symptoms of *some* autistic kids is an interesting subject. Despite the overlap in diet, my experience on the Gluten-free Casein-free board (which are primarily "inhabited" by parents of autistic kids) is that many of them have not run the full gamut of testing for celiac...

IBS is a very common misdiagnosis of celiac, but what you describe seems more anxiety connected, which leaves me pretty uncertain. I would definitely encourage a blood test, and trying out the gluten-free diet (AFTER all testing is completed). -

lol - you could have had teriyaki quinoa! ;-) hmm... :-? yeah, I tried the garlic... didn't work for me either. mmmm.... all that ginger! ;-) -
That's a good point - I haven't had any problem converting muffin recipes to gluten-free from non-gluten-free recipes. I tend to use flours other than rice and potato, which might make a difference, but I haven't had any dismal failures. (My favorite combinations of flour include a bit of soy, sorgum, and another fine flour.)
