    I often take: Lara Bars Clif Bars (the new ones that are Gluten-free Casein-free) Organic Food Bars with me when I'm on a trip. They are an aquired taste, and some people never like them.

  10. It's true that it is possible to test negative on a blood panel and still have gluten intolerance. There is some evidence that there is a variety of gluten intolerance which causes various symptoms but does not cause the same immune response that true celiac disease causes.   15. Even if you are celiac, and are hence unable to be a part of the military, there are other ways you can serve the military in a civilian position. I'm sure the HR arm of the military would be willing to help you investigate those possibilities. And, if that fails, there are always lots of companies who do work for the military. ;-)
  16. I think the correlation between the Gluten-free Casein-free diet and improvements in the symptoms of *some* autistic kids is an interesting subject. Despite the overlap in diet, my experience on the Gluten-free Casein-free board (which are primarily "inhabited" by parents of autistic kids) is that many of them have not run the full gamut of testing for celiac...
  17. IBS is a very common misdiagnosis of celiac, but what you describe seems more anxiety connected, which leaves me pretty uncertain. I would definitely encourage a blood test, and trying out the gluten-free diet (AFTER all testing is completed).

  19. That's a good point - I haven't had any problem converting muffin recipes to gluten-free from non-gluten-free recipes. I tend to use flours other than rice and potato, which might make a difference, but I haven't had any dismal failures. (My favorite combinations of flour include a bit of soy, sorgum, and another fine flour.)
  20. regardless of what your (likely not-well-educated on celiac) doctors say, the dietary challenge is a test in and of itself. if you know what makes you feel better, stick with it!

  24. Yes, the wheat-free San-J tamari, according to the company, is gluten-free. (But that's a good question to remember to ask. ;-) )
  25. San-J makes two tamaris - one is wheat free, one isn't.
